Versatile and delicious, this lemon vinaigrette is a favorite among homemade salad dressings. 2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1/4 teaspoon salt
1/8 teaspoon coarsely ground pepper
6 tablespoons extra virgin olive oil

Steps:

  • In a large bowl, whisk together first 4 ingredients. Slowly add olive oil while whisking constantly.

I got this out of a Tesco's magazine. I use less oil than is suggested her - up to you. Typically a salad dressing has three parts oil to one part vinegar or citrus, but I usually invert that in order to use less oil. This is good on salad but also on steamed baby potatoes as a side. Either way I like to sprinkle with toasted sesame seeds before serving.

5 tablespoons lemon juice
150 ml olive oil
1 garlic clove, crushed
1 small bunch basil, shredded
2 tablespoons capers

Steps:

  • Whisk the lemon juice and olive oil together with the garlic.
  • Taste and add more lemon if you think it needs it.
  • Stir in the basil and capers to finish.

1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon onion powder
Dash pepper
6 tablespoons olive oil
4-1/2 teaspoons minced fresh basil
1 cup cubed fresh pineapple
1 cup sliced fresh strawberries
1 cup sliced peeled kiwifruit
1 cup seedless watermelon balls
1 cup fresh blueberries
1 cup fresh raspberries

Steps:

  • Place the lemon juice, sugar, salt, mustard, onion powder and pepper in a blender; cover and pulse until blended. While processing, gradually add oil in a steady stream. Stir in basil. , In a large bowl, combine the fruit. Drizzle with dressing and toss to coat. Refrigerate until serving.
