Steps:
- 1. In a large skillet, cook onions and garlic on low heat in hot butter for about 20 minutes and stir several times.
- 2. Transfer onion mixture to a 5-quart crock pot. Add beef broth, Worcestershire sauce and 1 cup water. Cover and cook on low for 6 hours or on high for 3 hours.
- 3. Before serving soup, toast bread slices with cheese slice on top. (Broil for 3 minutes or until cheese is light brown and bubbly).
- 4. Ladle soup into bowls and top with toast. Makes: 8 servings

- Next, stir in your broth and sherry.

- In a large pot, melt the butter over medium heat. Add the onions all at once and a small splash of water. Season the onions with salt and pepper. Bring the onions to a simmer, stirring often. Reduce the heat if the onions begin to cook too fast. Cook until the onions are soft and translucent, about 15 minutes. (If you want a sweeter soup, continue to cook the onions until they caramelize to the richness of your preference.)
- Add the flour and cook for 3 minutes. Add the sherry and cook for a few minutes longer. Add the beef stock and bring to a very low simmer; simmer for about 35 minutes.
- Preheat the broiler to finish the soup.
- Add the thyme to the soup and simmer for 5 more minutes. Season with salt and pepper as needed. Remove the herbs.
- Ladle the soup into 4 soup crocks. Cover each crock with 2 slices of cheese and some croutons, then top with the shredded Gruyere. Transfer the crocks to a baking sheet and place under the broiler until the cheese bubbles and browns.

- Place half of your beef in the bottom of your 6-quart crock pot (I used Cera, my 6 Quart Crock Pot with Ceramic Coated Pot) and top with half of your mushrooms and half of your onion, repeat layer
- Pour your soup on top of everything
- Cover and cook on low for 6-8 hours
- Put your stuffing mix in a bowl, top with your melted butter and 1/2 cup of liquid from your crock pot and toss (if you do not have enough liquid in your crock pot for 1/2 cup, add water to the liquid to make it a full 1/2 cup)
- Pour your stuffing across the top of your beef and cover and cook on high for about 10 minutes
- Spread your shredded cheese over the top of your stuffing and cover again and cook on high until your cheese is melted

- Combine onions, broth, consomme, and soup mix in a slow cooker. Cook on HIGH setting for 4 hours, or LOW setting for 8 hours.
- Ladle soup into serving bowls. Top with a slice of French bread. Sprinkle 2 tablespoons cheese over each bread slice. Put soup bowls under broiler until cheese is melted. Alternatively, place the bread on a baking sheet and top with cheese; broil until cheese has melted, about 30 to 40 seconds, and set on top just before serving.

- 1. Heat crock pot to high temperature setting. Add butter, chopped onions and cover. Cook on high for 2 hours or until onions are translucent, stirring occasionally.
