3 ribs celery, sliced
2 carrots, sliced
1 onion, chopped
3 cloves garlic, smashed
5 pounds beef short ribs
salt and ground black pepper to taste
1 (10.5 ounce) can condensed beef consomme (such as Campbell's ®)
½ (10.5 ounce) can water

Steps:

  • Prepare a slow cooker crock with cooking spray.
  • Spread celery, carrots, onion, and garlic in the bottom of the crock. Season short ribs with salt and pepper; place atop the vegetables. Pour beef consomme and water into the crock.
  • Cook on High until the ribs are fork-tender, 5 to 7 hours.
  • Remove the ribs from the slow cooker to a platter. Strain the broth and discard the vegetables.
  • Strip meat from the bones of the ribs. Discard bones and transfer meat to a bowl. Shred meat with 2 forks and serve with strained broth.

1/4 cup flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons vegetable oil
2 medium onions, sliced
1/2 cup dry red wine
1/2 cup chili sauce
3 tablespoons brown sugar
3 tablespoons vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon chili powder
2 tablespoons flour
1 -2 tablespoon water

Steps:

  • Combine 2 tablespoons flour, the salt, and pepper in a bowl or food storage bag.
  • Dredge or toss ribs with the flour mixture.
  • Heat oil in large skillet over medium high heat; add ribs and brown on all sides.
  • Pour off excess fat.
  • In crock pot, combine ribs, onions, wine, chili sauce, brown sugar, vinegar, Worcestershire sauce, mustard, and chili powder.
  • Cover and cook on LOW for 7 to 9 hours.
  • Turn to HIGH.
  • Dissolve 1 tablespoons flour in 1 or 2 tablespoons water.
  • Stir into crock pot.
  • Cook on HIGH for about 10 to 15 minutes longer, or until slightly thickened.
  • Serve with noodles or rice.

1/3 cup packed dark brown sugar
1/4 cup apple cider vinegar
1 tablespoon chili powder

2 teaspoons granulated garlic

2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper
3 racks baby back ribs (about 3 pounds)
Oil, for grilling

Steps:

  • Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
  • Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. Whisk the sauce at the bottom of the slow cooker until smooth. Reserve 1/4 cup of the sauce to brush on to the ribs and save any remaining sauce to serve on the side (it will thicken as it cools).
  • Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the ribs, top-side down, until lightly charred in parts, 3 to 5 minutes. Flip, brush the top side of the ribs with the reserved barbecue sauce and grill until the underside of the ribs are lightly charred in parts, 3 to 5 minutes. Remove to a platter and serve immediately with the extra barbecue sauce on the side.

Kosher salt and freshly ground black pepper
2 medium carrots, peeled and sliced
2 ribs celery, sliced
1 large onion, quartered
6 cloves garlic, smashed
1 bay leaf
1 sprig fresh rosemary
2 1/2 cups chicken broth, homemade or low-sodium canned
1/3 cup red wine vinegar
1/3 cup dry English-style mustard
1/3 cup honey
1 tablespoon water
1 teaspoon kosher salt
5 ounces sourdough bread, crusts trimmed, and torn into large chunks
2 cloves garlic, minced
3 tablespoons minced fresh flat-leaf parsley

Steps:

  • For the ribs: Preheat the oven to 350 degrees F.
  • Lay the short ribs meaty side up in a large roasting pan and season with salt and pepper. Scatter the carrots, celery, onion, garlic, bay leaf, and rosemary around the ribs. Add the chicken broth and vinegar. Set the pan directly over 2 burners and bring to a simmer over high heat. Lay a sheet of parchment paper over the ribs and transfer to the oven. Cook until the meat is fork-tender, about 2 hours. Remove from the oven and cool in the liquid, about 30 minutes. (The dish can be prepared up to this point 1 day ahead, covered, and refrigerated.)
  • For the coating: Whisk the mustard with the honey, water, and 1/2 teaspoon of the salt. Pulse the bread to make coarse breadcrumbs in a food processor. Add the garlic, parsley, olive oil, remaining 1/2 teaspoon salt, and the pepper, to taste, and pulse briefly to combine. Transfer mixture to a shallow bowl.
  • Preheat the oven to 450 degrees F.
  • Remove the ribs from the braising liquid (reserve liquid for other uses) and pat dry. Brush the meaty side of each rib with some of the mustard mixture, then press it into the breadcrumb mixture to coat. Arrange the ribs on a baking sheet and roast until the breadcrumbs are brown and crisp, 20 to 25 minutes. Serve the ribs hot or at room temperature.

1 (12-ounce) bag baby carrots
1 cup celery, thickly sliced, about 2 stalks

1 cup red wine

Steps:

  • Heat olive oil in a large saute pan over high heat.
  • Season short ribs with, salt and pepper. Sear the short ribs on all side until brown and caramelized.
  • In the bottom of a 5-quart slow cooker place the onions, carrots, celery and garlic. Then add smoked paprika, smoked ground black pepper, and all-purpose seasoning salt. Pour in wine and beef stock. Place short ribs, meat side up, on top of vegetables. Cover and cook on LOW setting for 8 hours.
  • Strain and defat the cooking liquid. Serve as sauce on the side.

3 pounds bone-in beef chuck short ribs
2 medium onions, peeled and quartered
2 medium carrots, cut into large chunks
2 medium parsnips, cut into large chunks
2 medium turnips, peeled and cut into large chunks
4 sprigs fresh rosemary
4 sprigs fresh thyme
4 sprigs fresh parsley, stems and leaves separated
1 tbsp. Worcestershire sauce
1 tbsp. spicy brown mustard
1 (12-ounce) dark stout beer, such as Guinness
Kosher salt
Black pepper

Steps:

  • In a large skillet over medium-high heat, add the oil. Season the short ribs with salt and pepper. When the oil is hot, brown the short ribs, in batches, until they are browned on all sides, about 3-4 minutes per side.
  • While the short ribs are browning, place a layer of onion and carrot pieces into the bottom of a slow cooker and season them with salt and pepper. Place the browned meat on top. Add the remaining onions and carrots along with the parsnips and turnips. Tie together the rosemary and thyme with the parsley stems and add them to the pot along with the Worcestershire and mustard. Pour over the stout and add enough water to almost cover the contents. Cover and cook on low for 6-8 hours, or until the meat is very tender.
  • To serve, carefully remove the meat and vegetables from the slow cooker. Strain the juices. Serve the ribs with the juice and garnish with chopped parsley leaves.

This recipe is in the October 2008 issue of Bon Appetit and is absolutely delicious. It is very easy to make but looks and tastes like you spent hours on it.

4 1/2 lbs beef short ribs, 3 -inch-long
kosher salt, coarse
2 cups red wine, dry
1 (14 1/2 ounce) can diced tomatoes with juice
1 (6 ounce) package button mushrooms, sliced
1/2 cup onion, finely chopped
6 garlic cloves, peeled
6 italian parsley sprigs, fresh
2 bay leaves
crusty bread

Steps:

  • Sprinkle ribs with coarse salt and pepper.
  • Place in even layer in slow cooker. Add next 7 ingredients, cover, and cook on low heat until meat is tender, about 8 hours.
  • Using slotted spoon, transfer ribs to serving bowl. Discard parsley and bay leaves. Spoon fat off top of sauce and pour sauce over ribs. Serve with bread.

1/2 teaspoon cayenne pepper
1 teaspoon ground cumin
1/3 cup brown sugar
1 tablespoon paprika
1 1/2 teaspoons salt
4 lbs beef ribs
0.75 (16 ounce) bottle barbecue sauce

Steps:

  • Combine rub ingredients mixing well.
  • Rub on all sides of ribs.
  • Place ribs meaty side up in crock pot.
  • Cover; cook on low for 6 hours.
  • Drain the grease from the crock.
  • Place the ribs back in and cover with bbq sauce.
  • Cook for another hour.
