Steps:
- In a small skillet, heat butter over medium-high heat. Add onion; cook and stir 3-4 minutes or until tender. Transfer to a 3- or 4-qt. slow cooker. Add broccoli, broth, milk and pepper., Cook, covered, on low 3-4 hours or until broccoli is tender. Stir in process cheese until melted. Add shredded cheeses; stir until melted. Just before serving, stir soup to combine. Top servings with additional cheddar cheese.

- Put chicken broth, potatoes, salt and pepper in crock pot.
- Cook on high for 4 hours or until potatoes are soft.
- Mash the potatoes to desired consistency.
- Add milk and cheese and blend.
- Cook on high until cheese melts.

I wanted some nice warm soup but I have so many food allergies & sensitivities that none of the recipes I found would work for me. So I came up with this one for my crock pot, I love cooking soups & stews in the crock pot.

Steps:
- 1. Bring a large pot of water to boil, add a few pinches of salt & the chopped potatoes. Boil potatoes until tender, drain, reserving 2 cups of liquid.
- 2. Mix together soup, milk, & seasonings, pour in crock pot. Add butter & reserved cooking liquid.
- 3. Add remaining ingredients, stir to combine.
- 4. Cook on high 3-4 hours, or on low for 6-8 hours. If cooking on high, stir half way through cooking.

This is a nice, creamy, comforting soup- and it's very easy to throw it all together in the crock pot. Add a sandwich or some dinner rolls, and you'll have a great dinner for cold nights! I made a few changes to a recipe taken from the "Fix It and Forget It Cookbook" to come up with this.

- Wash and prepare vegetables as directed.
- Place vegetables in crock pot and add enough water to cover the vegetables. Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours, or until vegetables are tender.
- An hour before serving, melt 1/2 cup butter in a large sauce pan over medium heat. Add flour and mix well.
- Uncover vegetables and using a measuring cup, measure out 2 - 3 cups of the water from the Crock pot. Add these 2 - 3 cups of water to the flour and butter mixture on the stove top.
- If you only added 2 cups of water from the cooked vegetables, add 1 more additional cup of water.(To get the broth to your ideal consistency, you may need to add additional water or not add as much).
- Add chicken bouillon cubes to butter/flour/water mixture and dissolve well.
- Finally, add 8 ounces of Cheese Whiz to the mixture and mix till melted.
- Pour entire mixture carefully into the crock pot and cover and cook on high for at least 45 minutes.
- Serve with crusty French Bread.

- To a 6-quart crock pot add hash browns, broccoli, carrots, shallot and chicken broth then stir to combine, cover, and cook on low for 4-5 hours or until broccoli is very tender.
- To a blender add Arla Herbs & Spices cream cheese, milk, and roughly 1/3 of the cooked vegetables. Blend until very creamy then stir back into the crock pot, cover, and cook on low for 10 minutes. NOTE: may need to blend in batches if your blender is small.
- Sprinkle cheddar cheese into soup about 1/2 cup at a time, stirring until cheese is completely melted before adding another batch. Add salt and pepper to taste then serve.
