1 sweet onion, sliced and separated into rings
1 (5 pound) whole chicken
1 (20 ounce) jar salsa

Steps:

  • Spread onion rings into the bottom of a slow cooker crock. Place chicken onto onion layer with breast-side facing down. Pour salsa over the chicken.
  • Cook on High until no longer pink at the bone and the juices run clear, about 5 hours. An instant-read thermometer inserted into the thickest part of the thigh near the bone should read 165 degrees F (74 degrees C).
  • Remove the chicken from slow cooker, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before cutting.

5 -6 pieces frozen boneless skinless chicken breasts (vary amount depending on crock pot size)
1 (8 ounce) bar cream cheese
1 (15 ounce) can black beans, drained
1 (8 ounce) can corn, drained
1 (15 ounce) jar salsa, If you want spicy make sure to get a hot salsa as the cream cheese mellows out the flavor quite a bi
rice, no set amount. you can make however much you want

Steps:

  • In crock pot combine the following.
  • Chicken breast, can of black beans, jar of salsa, can of corn.
  • Cook on high for approximately 4 to 4.5 hours or until chicken is almost cooked through. (if using thawed chicken cook time will drop significantly and will probably need to be checked around 2 hours).
  • Once chicken is almost cooked through removed chicken pieces and shred.
  • Put shredded chicken back into crock pot and mix well. After mixing if you notice excess liquid on top skim off excess with spoon. (you dont want it runny its better a bit firm).
  • Add cream cheese - cut up bar as your put it in, It helps to melt it.
  • Stir occasionally to help mix cream cheese evenly and cook for about 30-40 more minutes.
  • Cook Rice while the Chicken is finishing.
  • When chicken is finished spoon over rice and enjoy!

1 jar (16 ounces) salsa
1-3/4 cups frozen corn, thawed
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) no-salt-added black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 teaspoon sugar

1 teaspoon hot pepper sauce

  • For salsa, in a large bowl, combine the first eight ingredients; refrigerate until serving. This Slow Cooker Black Bean and Corn Salsa Chicken is simple, tasty, and makes a perfect freezer meal. It is fresh, delicious, and full of flavor. You will love this recipe.

15 ounces black beans (1 can, drained and rinsed)
14 ounces corn (1 can. drained)
½ cup salsa
1 ounce taco seasoning packet
⅓ cup water
1 pound boneless, skinless chicken breasts

Steps:

  • If making this into a freezer meal, label a gallon-sized resealable freezer bag with the title of the recipe and how to long to cook in the slow cooker. (If you aren't making it into a freezer meal, jump ahead to step #5).
  • Dump the black beans, corn, salsa, taco seasoning, and water in the resealable bag and mix until all the ingredients are combined. Add the chicken breasts and zip the bag closed. Place in the freezer until ready to use (it will last in the freezer for up to 90 days).
  • When ready to cook, remove bag from freezer and place in fridge overnight so that it can thaw. Spray slow cooker with non-stick cooking spray and dump bag ingredients into the slow cooker. Cook on high for 4-5 hours or on low for 6-7 hours (until chicken is completely done).
  • Shred meat and serve however you want (in tacos, burritos, nachos, salads, etc). Garnish with cheese, sour cream, avocado, lettuce, tomato, and hot sauce.
  • If you aren't making this into a freezer meal, dump black beans, corn, taco seasoning, and water in crock pot and mix together until seasoning is dissolved. Place chicken breasts on top and spread salsa on chicken. Cook on high for 3-4 hours or low for 5-6 hours. Shred chicken and serve however you want (in tacos, burritos, nachos, salads, etc). Garnish with cheese, sour cream, avocado, lettuce, tomato, and hot sauce.
