Croatian Ajvar (Pepper and Eggplant Sauce) image

I got this recipe from an old Podravka Cook book. It is a Croatian dish that goes well with meat dishes especially cepavicici! Enjoy!

2 medium eggplants
3 large red peppers
1 garlic clove, minced
1/2 cup extra virgin olive oil
salt and pepper

Steps:

  • Heat oven to 475 degrees. Roast washed eggplants and peppers until their skins blister and turn black, about 30 minutes. Turn to ensure entire vegetable is roasted.
  • Once roasted set vegetables in a heatproof bowl to steam. This well help to remove skin. Remove skin and seeds/stems.
  • In a large bowl, mash vegetables. Season to taste with salt and pepper. Add garlic and drizzle in oil, stirring constantly.
  • Store covered and refrigerated for up to 1 week.

I had made this for a party at mt best friend's home (who is a vegetarian) from the cookbook Catwalk Cuisine. It was a hit! Called Pasta Puttanesca by the author

500 g aubergines
salt, to sprinkle on aubergine
olive oil, for shallow frying
4 tablespoons extra virgin olive oil
4 garlic cloves, finely chopped
2 small dried red chilies, crumbled or 2 teaspoons chili flakes
1 cup black olives, stoned and chopped
2 tablespoons capers
1 kg large frsh tomatoes, skinned and chopped
2 tablespoons tomato puree
1 sprig fresh oregano or 2 tablespoons fresh basil leaves
salt & freshly ground black pepper
500 g spaghetti
fresh basil leaf
grated parmesan cheese

Steps:

  • Cut aubergine into cubes and sprinkle with salt.
  • Drain and pat dry after 15-20 mins Heat oil for frying aubergine in a frying pan and shallow fry till golden brown Drain and set aside Heat virgin olive oil in a pan, add garlic, chilli flakes or chillies and cook for a minute or till garlic just begins to turn colour.
  • Mix in olives, capers, tomatoes, puree and dried seasoning or fresh herbs Season with salt and pepper to taste Cover pan and cook sauce on low heat for 30-35 minutes.
  • or till tomatoes are cooked through and sauce has thickened Add fried aubergine cubes and remove from heat.
  • Cook spaghetti according to packet instructions.
  • Drain and add spaghetti to sauce Add basil leaves and toss pasta in sauce till well coated Serve immediately with grated Parmesan on the side.

This is a recipe I got from Womans World diet club. It can be made with any kind of pasta, we just happen to prefer angel hair. This is a real tasty, healthy dish. Hope you enjoy.

8 ounces uncooked angel hair pasta
1 lb eggplant, peeled and cubed (about 3 cups)
1 (14 1/2 ounce) can Italian-style stewed tomatoes
1 (8 ounce) can tomato sauce
1/2 cup red wine
1/2 teaspoon crushed red pepper flakes
2 tablespoons chopped fresh parsley

Steps:

  • Heat eggplant, tomatoes, tomato sauce, wine and red pepper to boiling in skillet; reduce haat to low; simmer uncovered about 15 minutes or until eggplant is tender.
  • Stir in parsley.
  • Cook and drain pasta.
  • Serve eggplant sauce over pasta.

2 large eggplants
6 large red sweet peppers or 6 large green sweet peppers
salt
pepper
1 garlic clove, minced
1 lemon, juiced
1/2 cup oil, preferably olive oil
parsley, minced

Steps:

  • Bake eggplants and sweet peppers at 350 F until tender when pierced with a fork.
  • Peel skin from hot vegetables and chop or mince the vegetables.
  • Season to taste with salt and pepper and stir in the garlic and lemon juice.
  • Gradually stir in as much of the oil as the vegetables will absorb.
  • Mix well.
  • Pile into a glass dish and sprinkle with parsley.
