TOMATO BRIE PASTA WITH FRESH BASIL



Tomato Brie Pasta with Fresh Basil image

Number Of Ingredients 7

7 ounces brie cheese, cut into pieces (freeze for 5-10 minutes to make cutting easier)
2 cups fresh diced tomato
1/2 cup sliced fresh basil
2 cloves garlic, minced
1 tbsp olive oil
salt and pepper, to taste
1 lb dried pasta of your choice

Steps:

  • In a medium bowl, stir together the brie, tomatoes, basil, garlic and olive oil. Cover and let stand at room temperature for at least 30 minutes, stirring occasionally.
  • Cook the pasta, per package instructions, to al dente. Drain well.
  • Toss the hot pasta with the brie and tomato mixture. Season, to taste, with salt and pepper.
  • Serve immediately.

1 cup fresh tomato, cut in 3/8 inch dice
1 tablespoon onion, minced
1 tablespoon olive oil, divided
1/2 teaspoon sugar
1 tablespoon fresh basil, chopped
salt, to taste
1 pinch pepper
4 ounces spaghetti

Steps:

  • Cook spaghetti according to package directions. Only drain spaghetti, do not rinse.
  • Meanwhile, cook onions in 1/2 tbs olive oil in a small pot over medium high heat until soft, about 1 minute.
  • Reduce heat to low. Add tomatoes, sugar, pepper and salt to taste. Stir to mix.
  • Tomatoes should get warm, but not cooked, about 5 minutes.
  • When ready to serve add remaining 1/2 tbs oil, basil and spaghetti to tomatoes. Remove from heat, mix well, cover and let rest for 2 minutes. Serve.

This four-ingredient no-cook sauce will impress your guests and can be made in the time it takes to cook your pasta. The bright tang from in-season tomatoes along with the creamy, melted Brie marries perfectly for a fantastic summer spaghetti.

Kosher salt
1 pound thin spaghetti
2 pounds beefsteak tomatoes (about 3 medium)
1/4 cup extra-virgin olive oil
1/4 cup fresh basil leaves, chopped, plus more for serving
8 ounces Brie, cut into 1/2-inch pieces

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions.
  • Meanwhile, grate the tomatoes on the largest holes of a box grater into a large bowl, discarding any big pieces of excess tomato skin. Whisk in the oil, basil and 2 teaspoons salt. Stir in the Brie.
  • Drain the pasta, reserving 1/4 cup of the pasta water. Add the pasta to the tomato mixture and toss to combine. Add the pasta water, a little at a time, to moisten the pasta and help the Brie partially melt, if needed.
  • Top with more basil before serving.

4 large tomatoes, cut into 1 inch pieces (I prefer the large beefsteak tomatoes but any really large tomato will do. If you can only find small/medium tomatoes, you will need more than 4)
4-6 cloves fresh garlic, mashed through a garlic press or finely minced
1 cup packed fresh basil, julienne cut (thin strips)
1 pound brie (although I sometimes use the President Brie wheel and that is 19 oz.)
1 cup extra virgin olive oil
2 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1 1/2 pounds uncooked spaghetti
Freshly grated Parmesan or Pecorino Romano for sprinkling (optional)

Steps:

  • In large Dutch oven or stock pot, combine tomatoes, garlic, and basil.
  • Remove rind from Brie using a knife or a peeler. Once rind is removed, tear brie apart using your hands into small 1 inch pieces. Add brie to pot.
  • Add olive oil, salt, and pepper. Stir to combine.
  • Cover pot with lid and let marinate right on kitchen counter for about 5-6 hours. You don't want to put it in the fridge because the cheese will get too cold (assuming your home temperature is a fairly normal temp and not too hot. If it's above 80 in your home, I would put it in the fridge and then take out of fridge about 1 hour before using).
  • If possible, stir once about 1/2 way through marinating time.
  • When it's time to eat, boil salted water and cook pasta according to package directions. When cooked, drain pasta water and add pasta to Brie mixture. Stir thoroughly until cheese is melted.
  • Serve with sprinkled Parmesan or Pecorino Romano, if desired.

6 ounces rigatoni pasta (or other large pasta)
6 ounces brie cheese, rind removed, cut into about 1/2-inch chunks
7 -8 ounces halved grape tomatoes
1/4 cup quartered pitted kalamata olive
1 teaspoon minced garlic
1/8-1/4 teaspoon red pepper flakes
1/2 cup packed fresh basil leaf, chopped
salt, to taste

Steps:

  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1/2 cup cooking liquid.
  • Meanwhile, in a large skillet *off heat*, place cheese cubes, tomatoes, olives, garlic, and crushed red pepper. Still off heat, stir to separate cheese pieces. Mix in chopped basil.
  • Add hot pasta and 1/4 cup reserved pasta liquid to skillet with cheese mixture.
  • Place over medium heat and toss until cheese is partially melted and sauce coats pasta, adding more reserved pasta liquid by tablespoonfuls if dry, about 4-5 minutes.
  • Season to taste with salt (if needed) and serve.

10 ounces spaghetti
1 lb zucchini
3 tablespoons olive oil
2 garlic cloves, sliced thinly
1 lemon, juice and zest of, grated finely
6 red ripe tomatoes, chopped roughly
5 ounces brie cheese
salt & freshly ground black pepper

Steps:

  • Cook the spaghetti in boiling salted water for 10-12 minutes until tender or according to packet instructions.
  • Meanwhile, cut the zucchini in half lengthways, then cut into slices. Heat the oil in a large frying pan, then fry the zucchini and garlic for 3-4 minutes until softened.
  • Add the lemon zest, tomatoes and about 3 tbsp of the pasta water (enough to make the sauce).
  • Cook for 2-3 minutes more until the tomatoes begin to soften.
  • Remove from the heat and stir in the brie so it just starts to melt, then season to taste with salt, pepper and lemon juice.
  • Drain the spaghetti well and add to the tomato sauce mixture.
  • Toss well together, divide between bowls and serve.
