These simple French fries are good anytime. Coated with ranch-style seasoning, and deep-fried, they are sure to please even the toughest customers. We like to serve them with ranch dressing and bacon bits.

- Heat oil in a deep-fryer to 365 degrees F (185 degrees C).
- Cut potatoes into wedges or fries, and soak in a bowl with milk. Stir together the ranch dressing mix and garlic salt; place on a plate or in a bag. Drain potatoes, and roll in the seasonings to coat.
- Place potatoes into the deep-fryer in batches so they are not too crowded. Fry for 5 minutes, or until golden brown. Drain on paper towels, and season with leftover seasoning mixture.

CARROT FRIES WITH KETCHUPY RANCH

- Preheat the oven to 425 degrees F.
- Trim the ends off the carrots and halve crosswise. Halve the carrots lengthwise, then cut lengthwise again in half or thirds, depending on the size, to create equal-size sticks.
- In a mixing bowl, toss together the carrots, olive oil, pepper, garlic powder, salt and thyme. Transfer to a baking sheet and spread into a single layer. Bake, flipping halfway through, until the carrots are cooked through and the edges begin to crisp, 18 to 20 minutes.
- Meanwhile, mix together the ketchup and ranch in a small bowl. Serve the carrot fries with the ketchupy ranch.
CRISPY ZUCCHINI FRIES WITH BUTTERMILK RANCH DIPPING SAUCE

- For the buttermilk ranch dipping sauce: In a bowl, combine the buttermilk, mayonnaise, chives, dill, celery salt, garlic powder and onion powder. Mix well. Cover and chill for 1 hour.
- For the zucchini fries: Add the flour to a shallow baking dish. In a second baking dish, lightly beat the eggs with 1/2 teaspoon salt and 1/4 teaspoon black pepper. In a third baking dish, combine the panko, Parmesan, garlic powder, 1 teaspoon salt and 1/4 teaspoon pepper; gently crush all the ingredients together with your hands--this will ensure an even coating on the zucchini.
- Lightly coat the zucchini sticks in the flour and then dip into egg mixture, coating evenly. Gently shake to remove excess egg and then generously coat the zucchini in the panko mixture. Transfer the breaded zucchini to a baking sheet.
- Fill a high-sided skillet with about 1 inch of oil--make sure the oil does not rise more than halfway up the side of the skillet. Heat over medium-high heat. Working in batches to avoid overcrowding, add the zucchini sticks to the pan. Cook until light golden brown, turning once, 2 to 3 minutes. Immediately remove the zucchini to a cooling rack set over a baking sheet. Keep warm in a 175-degree oven until ready to serve.
- Serve the zucchini fries with the dipping sauce on side.
CRISPY RANCH FRIES
I found this recipe in the 2012 Edition of Taste of Home's Quick Cooking Annual Recipes. I wish I could give credit to the author,but there wasn't a name listed.Also,there wasn't a specific type of french fry to use listed,but from the photo in the cookbook it was shoestring fries. So, that's what I used.If you want the sauce to be a bit more on the " Tangy " side add the sweet pickle relish to the mayo/ketchup dipping sauce.Not only do they taste good,but since they're baked in the oven they're also on the healthy side. - Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
- Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
- As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.

- In an extra large bowl dissolve the sugar completely in the water (the sugar must be completely dissolved).
- Add in the potato strips and refrigerate overnight.
- The following day drain well then pat the strips dry using paper towels.
- In a large heavy pot or deep-fryer heat oil to 375 degrees F.
- Carefully add potatoes in 2-3 batches and cook in hot oil for about 6 minutes or until golden brown (do not cook all the potatoes in one batch).
- Remove the fries using a large slotted spoon or long tongs and immediately season with seasoned salt or white salt while still hot.
- *NOTE* save the cooled oil in a jar at room temperature for the next time you make these.

- Cut potato into french fry shapes.
- Heat oil to 325°F.
- Drop spuds into oil.
- Cook them in the oil for about 5 minutes, until they are semi-cooked and kind of floppy looking.
- Remove from oil, drain and cool.
- When spuds have cooled, re-heat oil to 375°F.
- Toss milk and cornstarch into a plastic bag.
- Put bread crumbs into another bag.
- Take semi-fried spuds and put them into the milk bag.
- Remove from milk bag then place into the bead crumb bag, shaking to coat.
- Refry for about 2 or 3 minutes.
- Place on wire rack to drain.
