GLORIFIED GINGERBREAD
This Classic Gingerbread is one of those simple recipes that requires a handful of pantry ingredients and delivers nostalgic, slices of pure comfort.

Steps:
- Preheat the oven to 350 degrees and lightly grease a 8 or 9-inch square baking dish.
- Using an electric mixer, beat the shortening and sugar on high speed until fluffy, about 2-3 minutes.
- Add flour, salt, ginger, cinnamon, clove and nutmeg and mix on low just until incorporated. Reserve 1/2 cup of this mixture in a small bowl.
- Add egg, molasses, buttermilk, and baking soda to the mixing bowl and beat on medium-low speed just until smooth - about 30 seconds.
- Pour the batter into the prepared pan and sprinkle the reserved flour and spice mixture evenly over the top.
- Bake for 35-45 minutes, until a toothpick inserted in the center comes out clean. Cool on a wire rack, slice into squares and serve.

- Preheat oven to 375 degrees F (190 degrees C).
- Mix sugar, shortening, flour, spices, and salt as for pie crust. Divide dough in half and set aside.
- Add remaining ingredients to half of the dough. Place in a greased 9 inch square pan. Sprinkle the other half of the dough over mixture. Bake for 30 minutes. Cool in pan and then cut into bars.

- Preheat the oven to 350 degrees Fahrenheit.
- In a medium size bowl, mix together the flour, sugar, ginger and cinnamon. Cut in the butter and mix into the dry ingredients to make fine crumbs. Take out 1/2 cup crumbs and set them aside so you can sprinkle them on top of the cake batter.
- To the remaining crumbs, add the egg, molasses, salt, baking soda and buttermilk. Mix until the ingredients are well blended and the batter is smooth.
- Pour the batter into a parchment paper lined 8x8 pan.
- Sprinkle the remaining crumbs on top of the batter.
- Bake at 350 degrees for 40 minutes, or until a knife inserted into the cake comes out clean.

COUSIN EDNA'S GLORIFIED GINGERBREAD
Steps:
- Preheat oven to 350. Grease and flour 9x9-inch square pan. In large mixing bowl, mix flour, sugar, shortening, ginger, and cinnamon until crumbs form. Set aside 1/2 cup of this mixture.
- Make a hole in remaining crumb mixture and add egg, molasses, milk, soda, and salt. Mix until well blended. Pour into prepared pan. Sprinkle reserved crumb mixture over top, smoothing with a spoon.
- Bake for 30 minutes or until a toothpick inserted in center comes out clean. Serve warm with fresh whipped cream or ice cream.

CRYSTALLIZED GINGER GINGERBREAD
As a part of my annual Christmas celebration, I always make gingerbread. I've experimented with several versions, and I like this the best. It is a traditional gingerbread that is prepared in a loaf pan--not the dry cookie kind. The key to this recipe is the addition of ginger in both crystallized and ground form...the result is dark, moist, and has LOTS of ginger flavor. Perfect with a cup of coffee or hot cider! It also freezes well for later use.

- Preheat oven to 350°F Line a 9 x 4 inch loaf pan with parchment paper.
- In a bowl, combine the dry ingredients (flour, baking soda, crystallized ginger, ground ginger, cinnamon, allspice and nutmeg).
- In another bowl, beat butter and granulated sugar until fluffy, then stir in molasses. Add eggs one at a time, beating continuously.
- Stir the flour mixture into the butter mixture in 3 additions, alternating with the yogurt/buttermilk and beginning and ending with the flour; mix until smooth.
- Pour the batter into the pan and spread until even and sprinkle with raw sugar.
- Bake 50 minutes or just until the gingerbread is golden and springy to the touch, and a toothpick comes out clean.
- Let the loaf stand for a few minutes, then turn the loaf out and carefully peel off the parchment paper. Serve warm, or later!
