PORK TENDERLOIN TACOS

Pork Tenderloin Tacos image

Pork Tenderloin Tacos: We flavor lean pork tenderloin in an easy soy sauce and lime marinade, crisp it up in a cast-iron skillet and then nestle it into charred corn tortillas with an easy corn salsa and zippy lime crema. Healthy, easy and so satisfying.

Provided by Nicole

Categories     Main Course

Time 45m

Number Of Ingredients 16

1 lb pork tenderloin, trimmed
1/4 cup soy sauce
3 1/2 tbsp lime juice, divided
1 tbsp honey
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp ground cumin
1 1/2 cups fresh corn (defrosted frozen corn works as well)
1/4 cup cilantro, chopped
1 jalapeno seeds and stems removed and finely diced
2 small garlic cloves, minced and divided
1/4 cup finely diced red pepper
1 tsp kosher salt, divided
1/2 cup plain low-fat Greek yogurt
1-2 tsp adobo sauce ( from canned chipotles in adobo sauce)
1 1/2 tbsp olive oil, divided

Steps:

  • Don't prep any of the ingredients until you marinate the pork.
  • Using a sharp knife, cut pork tenderloin into ¼-inch slices. Cut slices into 1/8-1/4-inch strips.
  • Add soy sauce, 2 tablespoons lime juice, honey, chili powder, garlic powder, and cumin to a large bowl. Whisk to combine. Add sliced pork. Use tongs to toss the pork in the marinade.
  • Prep and chop the ingredients.
  • Add corn, red pepper, jalapeno, one garlic clove, cilantro, 1 tablespoon lime juice, and ¼ teaspoon salt to a medium bowl. Toss to combine. Season to taste with salt and pepper.
  • After assembling salsa, give the pork a stir.
  • Add Greek yogurt, chipotle in adobo, remaining 2 teaspoons lime juice, remaining garlic clove, and remaining ¼ teaspoon salt to a small bowl. Stir to combine. Season to taste with salt and pepper.
  • If the pork hasn't marinated for at least 15 minutes, let it marinate until you reach 15 minutes. You can also marinate the pork tenderloin up to three days in advance in the refrigerator.
  • Drain the marinade from the pork and discard. Pat the pork dry with paper towels. This will help to sear the pork versus steam it.
  • Heat a large cast iron skillet to medium-high heat. Once the skillet is very hot, add ¾ tablespoon of the oil, about 2 teaspoons to the skillet. Swirl to coat. Add half of the pork tenderloin. Make sure the pork is evenly spread out on the pan. Don't move it so it can sear properly. Cook for 2-3 minutes, flip and sear on the other side for another 1-2 minutes. Pork tenderloin cooks very quickly. Remove from the pan and repeat with remaining half of the pork.
  • While the pork cooks, place corn tortillas in a kitchen towel. Heat for 35 seconds until warm and pliable. You can also char them over a gas stove flame.
  • To assemble. Transfer pork to tortilla. Dollop with yogurt. Cover with corn salsa. Squeeze extra lime juice on top if desired.

BREADED PORK TENDERLOIN SANDWICH

Breaded Pork Tenderloin Sandwich image

This pork tenderloin sandwich (with a crispy golden cutlet that is so wide, no bun can contain it) is the deep-fried darling of Indiana. It's is so beloved in the Hoosier state that it inspired a documentary about the search for the perfect version of it. We hope it will inspire you to try an uncommon way of cooking pork tenderloin, whether you're a fan or a skeptic.

Provided by Food Network Kitchen

Categories     main-dish

Time 4h30m

Yield 4 sandwiches

Number Of Ingredients 13

1 pork tenderloin, trimmed (about 1 1/4 pounds)
1 cup buttermilk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon sweet paprika
1/4 teaspoon sugar
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
2 large eggs, beaten
2 cups plain breadcrumbs
Vegetable oil, for frying
4 toasted hamburger buns
Lettuce, tomato slices, onion slices, pickle rounds, mayonnaise and mustard, for serving

Steps:

  • Cut the pork tenderloin crosswise into 4 even pieces. Cut each piece crosswise again, but do not go all the way through; you should be able to open it like a book. Pound each piece with a mallet until 1/4-inch thick and 6 to 8 inches across.
  • Whisk together the buttermilk, garlic powder, onion powder, paprika, sugar, 1 teaspoon salt and 1/2 teaspoon pepper in a shallow dish. Add the pork cutlets. Make sure all the pieces are coated well with the buttermilk marinade. Cover and refrigerate for at least 4 hours and up to overnight.
  • Set up a breading station with 3 shallow dishes: the flour in the first dish, eggs in the second and breadcrumbs in the third. Sprinkle all 3 dishes with salt and pepper.
  • Fill a large, high-sided skillet with about 1/2-inch oil, attach a deep fat fry thermometer and heat to 350 degrees F.
  • Dredge each pork cutlet in the flour first, then in the egg and finally in the breadcrumbs. Gently place into the hot oil without overcrowding the skillet. You will need to fry the cutlets in batches. When the cutlets are golden brown on one side, about 2 minutes, carefully turn and cook for another 2 minutes. Drain well on a paper-towel-lined plate.
  • Build the sandwiches by putting the cutlets between the burger buns and garnishing with lettuce, tomato, onion, pickle, mayonnaise and mustard. The cutlet should hang generously over the bun.

Dredge each piece of pork in the flour, shaking off any excess. Dip the pork in the egg, letting any excess drip back into the dish, then roll it in the panko to coat. Set the pork on a baking sheet. Repeat to coat the apple rings.
  • In a large skillet, heat 1 cup of the peanut oil until a pinch of panko dropped in bubbles rapidly. Add 2 pieces of pork and fry, turning once, until golden brown all over, about 7 minutes. Transfer to paper towels to drain. Repeat with the remaining 2 pieces of pork. Transfer the pork to a rack set over a baking sheet and keep warm in the oven.
  • Add the remaining 1/3 cup of oil to the skillet. When the oil is hot, add the apple slices and fry them until golden brown, about 2 minutes per side. Drain on paper towels. Place the crispy pork and apple rings on a platter, garnish with the lemon wedges and serve.

  • Slice the pork tenderloin on an angle (kind of like you would slice French bread) , 1-inch thick. Lay a slice of pork in between two sheets of plastic wrap with the cut side up. Gently pound out until the meat is about ¼ inch thick. Remove to a plate. Repeat with the remaining slices.
  • Get three shallow containers and set out on a work surface. In one container, mix together the flour, Cajun seasoning and salt. In the next container, mix together the eggs and hot sauce. In the final container add the panko breadcrumbs. Take each pork slice through the breading station starting with flour, then egg, then breadcrumbs.
  • Heat a ½ inch of vegetable oil in a skillet over medium to medium high heat, until shimmering. Test the oil by placing a pinch of breadcrumbs in the oil. When the breadcrumb sizzles, you are ready. Place 2 cutlets at a time into the pan. Make sure not to add too many cutlets, you don’t want to crowd the pan. Cook each cutlet for 2-3 minutes on each side or until it is golden brown. Remove to paper towels to drain.
  • Mix together the mayo and the mustard, then spread each bun with the dijonnaise. Top with a cutlet, lettuce and pickles.

10 EASY PORK TENDERLOIN RECIPES - KITCHN

  • Roasted Pork Tenderloin. Consider this your go-to for roasting pork tenderloin in the oven. The key to getting that irresistible crust on the outside is sliding the skillet in the oven as it heats up and flipping the tenderloin halfway through cooking.
  • Sheet Pan BBQ Pork Tenderloin with Green Beans and Cauliflower. Pork tenderloin is an ideal candidate for a sheet pan dinner. Just don’t forget the sauce.
  • Instant Pot Pork Tenderloin. Your Instant Pot might be the absolute easiest way to cook port tenderloin. The Instant Pot lets you sear, cook, and sauce not one but two tenderloins at once, and you don’t have to worry about overcooking it.
  • Instant Pot Pork Banh Mi Sandwiches. A meaty pork tenderloin is our favorite way to make Vietnamese-style banh mi sandwiches at home. A mix of lime juice, fish sauce, and garlic infuse the pork with some serious savory flavor.
  • Honey-Glazed Pork Tenderloin. Meet my all-time favorite pork tenderloin recipe. It’s seared in a super hot skillet, finished in the oven, then bathed in a sweet and tangy, mustard-flecked glaze.
  • Grilled Pork Tenderloin. Pork tenderloin is right up there will chicken breast, burgers, and foil packets when it comes to an easy weeknight dinner on the grill.
  • Pork Stir-Fry with Asparagus and Sugar Snap Peas. Stir-fries are a great way to stretch a tenderloin to feed a couple more hungry mouths. Plan to place the meat in the freezer for about 20 minutes before prepping it – it’ll be a lot easier to slice into thin strips.
  • Pork Tenderloin and Onion Jam Sandwiches. The next few recipes take a little more advance planning, but are still super-simple (and super-delicious). These sandwiches are the number one reason to cook a pork tenderloin during your weekend meal prep session, then slice it up and build sandwiches during the week.
  • Ina Garten’s Cider-Roasted Pork Tenderloins with Roasted Plum Chutney. Like all of Ina’s recipes, this roasted pork tenderloin is simple yet impressive.
  • Grilled Teriyaki Pork Tenderloin. If you have the time, I highly recommend marinating the pork in a simple pantry sauce overnight for maximum flavor (though you can get away with two hours).
