CRISPY ROASTED PARMESAN POTATOES
Recipe video above. Tender potatoes with the most incredible CRISPY parmesan crust! Make these for your Sunday Roast or pass them around at a party! Serves 4 -5 as a side. Also, don't miss the Parmesan Crusted CAULIFLOWER!

Steps:
- Preheat oven to 200C/400F.
- Mix Parmesan Mixture in a bowl.
- Drizzle oil in 22 x 33cm / 9 x 13" glass baking dish (Note 2). Tilt pan to spread all over the base.
- Use a spoon to scatter the Parmesan Mixture over the base. Spread as evenly as you can. Once sprinkled, do not touch - don't try to spread it.
- Place potatoes cut side down, pressing firmly.
- Optional: drizzle top of potatoes with a touch of oil or spray with oil, then sprinkle with salt.
- Bake potatoes for 35 - 40 minutes or until they are soft and the parmesan crust is deep golden (you can check through the glass!)
- REST for 5 minutes. Then use an egg flip to cut between every 4 or so potatoes (i.e. cutting through the parmesan crust which bonds between each potato - see video), then scoop up 4 or so potatoes and flip them upside down so the cheese side is up on a serving platter.
- Serve with Dipping Sauce, if using, and sprinkle over extra green onions if desired. Serve as a side dish or as nibbles!

I really don't remember where this recipe came from. It makes a great side to any meat and has great flavor. I have made this with Russetts as well as the red potato. Results for both were still tasty! Yield is approximate.

- Place half of the potatoes in a greased 2 qt or 11 x 7 inch baking dish.
- Top with onion and remaining potatoes; drizzle with butter.
- Sprinkle with Parmesan cheese, salt, pepper and garlic powder.
- Bake, uncovered, at 450 degrees for 25-30 minutes or until the potatoes are golden brown and tender.

EASY PARMESAN POTATO ROUNDS
This is a fantastic easy to make potato side dish. If you are serving more than 3 or 4 people, I suggest to double the recipe. This is like scalloped potatoes only without the heavy cream sauce. You can even sprinkle the cheese in between the layering if desired. You will be making this all the time, it is so good! I like the crispy potatoes on the top lol! Please adjust all ingredients to taste.

- Preheat oven to 400 degrees Fahrenheit.
- Butter a small baking dish.
- Place a layer of sliced potatoes in the bottom of the dish, then season with salt, pepper and a little garlic powder.
- Sprinkle with some sliced onions.
- Drizzle with a little melted butter.
- Repeat layering in the same matter ending up with a layer of potatoes.
- Drizzle the top layer of potatoes with melted butter, and then sprinkle with parmesan cheese.
- Bake uncovered for about 30 to 35 minutes, or until potatoes are tender and golden brown.

- Pour butter into a 15-1/2-in. x 10-1/2-in. x 1-in. baking pan. In a plastic bag, combine flour, cheese, salt and pepper. The trick to this being successful is the more Parmesan cheese you use and the thinner you slice your potatoes the crispier they will be! I like to make this using my huge crop of garden fresh green onions. I have even sprinkled grated cheddar cheese on top at the end of baking and put it under the broiler for a couple minutes YUM!

- Set oven to 400°F (set rack to bottom position).
- Melt the butter in the microwave.
- Generously spray a 15 x 10-inch baking sheet with cooking spray, then drizzle a small amount of butter over the cooking spray (I use the non-stick heavy-duty foil for this).
- Layer the thinly sliced potatoes in the bottom of the baking sheet overlapping slightly.
- Sprinkle with lots salt, black pepper and garlic powder.
- Drizzle the melted butter over the potatoes, then evenly sprinkle with green onion.
- Sprinkle generously with grated Parmesan cheese.
- Bake uncovered for about 20-25 minutes, or until the potatoes are just fork tender (watch closely the thinner your slices are the faster they will cook!).
- Lift off using a spatula.

KITTENCAL'S CRISPY POTATO AND GREEN ONION PANCAKES (LATKES)
This recipe goes back 30 years or more, my family *loves* these! you can make these ahead of time and then freeze, just cool and place on a large baking sheet to freeze, when frozen stack in a freezer container or pop them into a freezer bag, to reheat and re-crisp, defrost the pancakes then place in a 400 degree oven for about 8 minutes turn over then continue baking until crisp, I strongly suggest to double the recipe these will be half gone before they even make it to the table! I like to add in some cayenne pepper and a bit of garlic powder but that is optional --- yield is only estimated you should get between 20-23 pancakes for this recipe, to make things easier use your processor to grate the potatoes, plan ahead the grated potatoes need to soak for a minimum of 8-24 hours or even up to 2 days to remove some of the starch, the longer soaking time the crispier they will be --- serve with sour cream :)

- Grate the potatoes using a the coarse side if the grater or use a food processor.
- Place into a large bowl and cover with cold water.
- Allow the grated potatoes to soak for at least a minimum of 8 hours or even up to 2 days.
- Using your hands firmly squeeze handfuls of the grated potatoes to remove as much liquid as possible, then place in a large mixing bowl.
- Add in egg, flour, seasoned salt and pepper; mix well with a wooden spoon, then add in the green onions and parsley (if using).
- Heat oil in a heavy skillet over medium heat.
- Place a heaping tablespoonful of the potato mixture into the hot skillet and using a fork, flatten slightly (the edges will be uneven!).
- Sprinkle with more salt if desired.
- Place only a few pancakes in the pan, careful not to over crowd.
- Cook until golden and crisp on both sides adding in more oil if needed).
- Repeat with remaining potato mixture.

- Butter a medium-size casserole dish.
- Cook the potatoes until just firm-tender, cool and slice into about 1/4-inch rounds; set aside.
