- Using paper towels, pat each piece of chicken dry. Set aside.
- In a small mixing bowl, combine dry ingredients. Whisk together until fully incorporated. Transfer half of dry ingredients to a shallow dish.
- In a separate bowl, mix together egg, mayonnaise, hot sauce, and mustard.
- Dip the pieces of chicken, one at a time, into egg wash then into dry ingredients, flipping over multiple times to fully cover chicken in the dry breading mixture.
- Transfer breaded chicken to the baking rack set atop a baking sheet. Continue breading the remaining chicken thighs.
- Bake until internal temperature reaches 165°F, about 35-40 minutes, depending on the thickness of the chicken thigh. Allow them to cool slightly before serving.

- Preheat the air fryer or convection oven to 400°F. Spray a rimmed baking sheet or the tray of your air fryer with spray avocado oil. Alternatively, you can use a paper towel to grease the baking sheet or tray with a little avocado oil. (If you are using an air fryer with a basket, spray both sides of the breaded fish nuggets before putting them into the basket.)
- Pat the cod fillets dry and season with the lemon pepper seasoning. Cut into 1 1/2 inch chunks.
- Set up 3 shallow bowls. Add the coconut flour to the first bowl, eggs and water to the second bowl, and the breading to the third bowl. Use a fork to whisk the eggs and water together.
- Coat a piece of cod in the coconut flour, then dredge it in the egg wash, then coat it in the breading mixture. Repeat this process with all of the cod pieces.
- Place the breaded cod on the prepared baking sheet. If you are using the cooking spray, lightly spray the tops of the nuggets.
- Bake at 400°F, on the middle rack for 10 to 12 minutes (if using a convection oven). Cook on broil for an additional 2 minutes or until they are crispy and golden brown. If you are using an air fryer with a basket, gently place the breaded nuggets into the basket and cook for 10 to 12 minutes. If you are using a toaster oven /air fryer combo, place the breaded cod on the prepared air fryer tray and cook for 10 to 12 minutes.
- Serve with tartar sauce and fresh lemon slices.

- Cut the chicken breasts in small strips. Season with minced garlic, hot chili sauce, salt and pepper to taste.
- Whip the eggs in a bowl, add more salt and pepper. Immerse the chicken pieces in this mixture.
- In a plastic container with an air-tight cap, use half of the protein powder, season with salt, pepper and celery salt, consider the fact that you have already added salt to the chicken and make sure it doesn't get very salty.
- Place the chicken into the plastic container, cover with the lid and shake vigorously until the chicken fillets are totally covered with protein powder. Remove the coated chicken pieces and place them on a cutting board ready for frying. Repeat this procedure until all chicken pieces are coated with the remaining protein powder.
- Put coconut oil in a frying pan over medium heat. When the oil is hot, gently add a few chicken pieces in to fry. Make sure to keep a space between each piece.
- Once it becomes golden, turn over to cook the other side. Remove and place on a dish with a paper towel to dry off the oil. Repeat the process until all chicken is cooked.

- Dip cutlets in Eggbeaters in medium-sized mixing bowl, then transfer to Parmesan cheese in Ziplock bag.

- In a medium bowl, combine the chicken pieces and melted butter. Mix to evenly coat and then season with salt and pepper to taste.

- Crush up your pork rinds in a Ziploc bag. I highly suggest doing this manually, as having some larger crumbs will add to the texture. I used BBQ flavored pork rinds, but you can use regular if that’s all you have on hand.
- Dip your chicken into the egg mixture, then dip it into the pork rind crumb mixture. We’re doing a double dip to ensure there will be a nice crust. Dip it in the egg mixture again, and again into the pork rinds.
- In a pan, put your olive oil and coconut oil. Turn to medium high heat and let it get hot.
- Once the oil is hot, place your chicken inside. DON’T TOUCH IT! Let it sit here a while, almost until you smell burning. We want to make sure the crust gets nice and crisp.
- Once you smell that burning, flip it over and do the same to the other side. Once you smell burning again, you can flip it over a second time.
- Turn your heat down to the lowest setting, and let your chicken cook for about 6-7 minutes per side (depending on thickness of the chicken breast).
- Let your chicken cook until it’s just about done. I like to keep my chicken nice and moist inside, JUST over the pink side in the center – but this is completely up to your own preferences.
