- Preheat oven to 425 degrees F. Line a large rimmed baking sheet with foil or parchment paper. Combine oil, garlic, pepper and salt in a large bowl; add asparagus and massage to evenly coat. Spread the asparagus in an even layer on the prepared baking sheet.
- Toss Parmesan, panko and walnuts together in a small bowl; sprinkle over the asparagus. Roast until the panko is golden and the asparagus is tender, 12 to 15 minutes. Serve immediately.

Steps:
- Heat oil and garlic in a small saucepan over low heat until garlic becomes golden- several minutes (do not burn garlic); allow oil to cool.
- Bend asparagus gently at a natural point and when it snaps, discard end pieces.
- Place asparagus on a lipped roasting pan and toss with infused olive oil and garlic, coating all pieces.
- Line up asparagus and push together, season with salt and pepper, then sprinkle with grated Parmesan.
- Roast in a preheated oven at 400°F for 12 minutes or until cooked to your liking.
- Serve at once.

PARMESAN ROASTED ASPARAGUS
Steps:
- Preheat the oven to 400 degrees F.
- If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges.
CRISPY PARMESAN BOWLS
Steps:
- In a large nonstick skillet, spread 1/4 cup cheese thinly and evenly over the bottom to form a 7-inch circle. Put the pan over medium heat and cook until the cheese is bubbling and lightly browned, about 3 minutes. Remove the pan from the heat. Put a small bowl upside down on a cutting board. When the bubbling stops, about 1 minute, carefully remove the disk with a thin metal spatula and drape it over the bowl. Press gently with the spatula so it forms a bowl. Be careful, as it is very fragile. Let cool.
- Remove the Parmesan bowl, put it onto a plate, and fill with Caesar salad. Serve.

- Butter eight 3/4-cup custard cups or soufflé dishes. Coat with breadcrumbs. Cut off asparagus tips. Cook tips in large saucepan of boiling salted water until crisp-tender, about 3 minutes. Drain; reserve tips and 1 cup cooking liquid. Coarsely chop asparagus stalks.
- Melt butter in large nonstick skillet over medium heat. Add onion; sauté until tender, about 6 minutes. Add stalks; sauté until crisp-tender, about 5 minutes. Add reserved asparagus cooking liquid. Cover; simmer until stalks are tender, about 12 minutes.
- Uncover; cook until liquid is absorbed, stirring often, about 5 minutes. Transfer to food processor; puree. Add Parmesan, ricotta and flour. Using on/off turns, process just until blended. Season with salt and pepper.

Before asparagus got moved to its own botanical family, Asparagaceae, in the early 2000s, it was part of the lily family along with onions, chives, shallots and garlic. To highlight the best of both ingredients, gently fry garlic into chips for a crispy topping, then use the lightly infused oil to sauté the asparagus. Both thin and chubby spears work, as would nearly any other vegetable you like with garlic: broccoli, kale, snap peas, fennel and more.

- Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat. Cook, shaking the skillet often, until the garlic is very light golden, 3 to 5 minutes. - Spray a 9 x 13 inch baking pan with nonstick cooking spray.
- Cut the rough ends off the asparagus and place in prepared pan.
- Generously spray nonstick cooking spray on top of asparagus.
- Sprinkle Parmesan cheese in an even layer on top of asparagus.
- Season with salt and pepper, to taste.
- Place croutons in a resealable bag and crush using a rolling pin until fine crumbs form or place in a food processor.
