Make your own crispy kale chips at home, thanks to Melissa d'Arabian from Ten Dollar Dinners on Food Network.

1 head kale, washed and thoroughly dried
2 tablespoons olive oil
Sea salt, for sprinkling

Steps:

  • Preheat the oven to 275 degrees F.
  • Remove the ribs from the kale and cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, turning the leaves halfway through, about 20 minutes. Serve as finger food.

8 cups kale (stems removed, chopped, washed and spin till almost dry)
2 tablespoons walnut oil or 2 tablespoons olive oil
3 -4 garlic cloves, very thinly sliced
1/4 teaspoon sea salt, adding more if not using cheese
1 tablespoon grated parmesan cheese (optional)
1/2 teaspoon sesame seeds (optional)
1/2 teaspoon poppy seed (optional)
1/4 teaspoon celery seed (optional)
1/2 teaspoon chives, chopped (optional)
1/8 teaspoon onion powder (optional)
1/2 teaspoon thyme (or herbs of choice)

Steps:

  • Preheat oven to 375 and place rack on lower level in oven.
  • Mix the optional dry ingredients together. Mix and match to your likings or use all of them.
  • Toss the kale, garlic with oil to coat then sprinkle dry ingredients over to coat evenly.
  • Spread onto a baking sheet, and bake for approximately 15 minutes or until crispy and brown around the edges. Stirring 1/2 way through. If not crispy cook 5 more minutes till edges are lightly browned.

1 tablespoon low sodium soy sauce
8 ounces kale leaves

Steps:

  • Preheat the oven to 300 degrees F. Line two baking sheets with parchment paper.
  • Whisk the sesame oil and soy sauce together in a large bowl until the mixture looks creamy. Add the kale and toss to coat.
  • Lay about half of the kale out on both baking sheets in a single layer, leaving a little room between leaves. You will need to bake them in batches. Bake in the middle of the oven 6 for 7 minutes, then rotate the sheets and bake until the kale is crispy, another 6 to 7 minutes. Gently transfer it to a platter to cool. Repeat for the remaining kale. Serve once cooled.

An addictive alternative to regular potato chips made with nutritional yeast. Who would have thought that leafy green chips loaded with nutrients could be so addictive? Another recipe from my crazy experiments in the kitchen!

12 cups lightly packed torn kale, about 1 bunch curly kale
1/2 cup nutritional yeast
2 tablespoons extra virgin olive oil
1/3-1/2 teaspoon salt

Steps:

  • In a very big bowl, drizzle olive oil on the kale, then sprinkle on the nutritional yeast and salt. Stir up the kale and coat the leaves with the dressing with your hands.
  • Lay out (not overlapping) on baking sheets and bake at 200F until they get crispy. Rotate racks and flip the chips once they start to get a bit crispy. Make sure to keep an eye on them to make sure they don`t burn, and if you notice certain chips ready much sooner than others, take them out in advance. Baking the chips will take about 40-60 minutes - It will be quicker at a higher temperature, but then you run the chance of burning them, and more nutrients are lost during the cooking.
  • EXTRA TIPS: The best way to bake these is by using a food dehydrator, where you just lay them on the sheets and wait until they are nice and crispy, and they are raw, meaning that none of the nutrients are lost. This method will take several hours for them to be ready, but the taste will be superior. *****Nutritional yeast is deactivated yeast, it`s not alive, and it has a slightly cheesy flavor which many vegans like to use as a cheese substitute. It can be found at most health food stores and some big-chain grocery stores.

Steps:

  • Preheat oven to 250 degrees.
  • Wash kale.
  • Pat dry, or dry however you like.
  • Put on cookie sheet so pieces don't overlap.
  • Spray with olive oil.
  • Salt is optional.
  • Cook 20 minutes.
  • Remove and yum!

Light and crunchy "chips" that are practically guilt free. Found this recipe on radicalhealth.com. I reduced the amount of salt called for in the original recipe thanks to some of the reviews.

1 tablespoon apple cider vinegar
1 -2 teaspoon salt (this makes them pretty salty- you may want to reduce the amount, then sprinkle the chips with salt a)
3 tablespoons olive oil
2 bunches kale, rinsed with stems removed

Steps:

  • Cut kale into 2 to 3 inch pieces.
  • Mix vinegar, oil, and salt in a large bowl then add kale and mix by hand.
  • Try to get all the leaves covered.
  • Place on baking sheets (I like to use parchment paper for easy clean up) and bake at 350 F until they are crispy.
  • After about 20 minutes, if it looks like they are not sizzling a bit or getting a little crispy, turn up the heat to 400°F.
  • Time for baking varies depending on the size of your chips and desired crispness.
  • The outer edges cook quicker than the pieces from near the stem.
