CHICKEN PICCATA WITH BUTTERY LEMON NOODLES

- For the buttery lemon noodles: Cook the pasta according to the package directions. Drain and set aside.
- For the chicken piccata: Sprinkle the chicken breasts with salt and pepper on both sides, then dredge in the flour.
- Heat the butter and oil in a large skillet over medium heat. Fry the chicken breasts until golden brown on both sides, about 3 minutes on each side; fry them a little longer if the breasts are thicker, monitoring the oil/butter mixture to make sure it doesn't burn. Remove the chicken to a plate.
- Add the garlic to the skillet and saute. Pour in the chicken broth and wine, and squeeze in the juice of the lemon. Whisk the sauce, scraping the bottom of the skillet. Allow the sauce to cook and bubble and thicken until reduced by about half. Sprinkle in a little salt and pepper as it's cooking.
- Reduce the heat to low and whisk in the cream. Add the capers, then cook for a couple of minutes until the sauce thickens. Taste and adjust the seasonings. Expect the sauce to have a real tang to it; counter it with a little more broth and cream if it's too strong!
- To finish the noodles, melt the butter in a separate skillet over medium-high heat. Throw in the cooked pasta, along with the parsley. Cook it in the butter for a couple of minutes so that a few of the noodles get a little bit of a pan-fried texture to them. Grate in some lemon zest and squeeze in some lemon juice. Season with salt and pepper.
- Place a handful of arugula on each plate, some noodles and a chicken breast. Garnish with Parmesan shavings and chopped parsley, then spoon over the sauce.
FUSILLI CARBONARA WITH FINES HERBES

- 1. Setting up. Fill a large (8-quart) pot with the water, add 1 1/2 tablespoons of the salt, and bring to a boil over high heat. Whisk together the egg yolks and cream in a large stainless-steel mixing bowl. Stir in the herbs, the remaining 1/4 teaspoon salt, and a generous grind of pepper.
- 2. Pasta. When the water is at a boil, stir in the fusilli and cook at a steady boil until tender but still firm, 8 to 12 minutes. While the pasta is cooking, warm the egg yolk mixture by briefly holding the bowl over the pot of boiling water and whisking rapidly. Heat the mixture just to lukewarm; don't let the eggs cook. When the pasta is done, drain and add it to the egg mixture. Sprinkle with cheese and toss well. The egg yolks will cook from the heat of the pasta and form a thick sauce.

- Slice chicken breasts in half lengthwise and lightly pound to 1/2-inch thick. Season evenly on both sides with salt and pepper. Dredge each piece in flour to coat the surface and shake off any excess flour.
- Heat 2 tablespoons oil and 1 1/2 tablespoons butter in a large skillet over medium-high heat until just beginning to smoke. Add 1/2 of the chicken and cook, undisturbed, until browned and easily released from the skillet, 2 1/2 to 3 minutes. Flip and cook for 2 more minutes. Remove from the skillet. Add remaining 1 tablespoon oil to the drippings and repeat the cooking process with remaining chicken. Reserve all chicken on a plate.
- Reduce heat to medium and melt remaining 1 1/2 tablespoons butter in the skillet. Add wine and capers and stir, scraping to release any browned bits from the skillet; bring to a simmer. Cook for 2 minutes to slightly reduce. Add chicken stock, lemon juice, and lemon zest; stir to combine. Bring to a simmer and cook for 2 minutes.
- Return chicken to the skillet and cook, turning occasionally in the sauce, until chicken is no longer pink in the center, the juices run clear, and the sauce has thickened slightly, 3 to 5 minutes.
- Remove from heat and sprinkle with parsley to serve.

This is the most requested dish by my teens' friends! Great even as leftovers, if there ever are any! Best served with a risotto or fettucine alfredo with a side of broccoli. Not for the diet conscious!

- Mix flour, salt, and black pepper in a bowl. Dredge the chicken breast pieces in the seasoned flour to coat; tap off excess flour.
- Melt butter in a skillet over medium heat until hot but not starting to brown. Pan-fry coated chicken breast pieces in the hot butter until golden brown, the juices run clear, and the chicken is no longer pink inside, about 10 minutes. Turn the chicken pieces often. Remove chicken from skillet and keep warm.
- Pour white wine into the skillet and scrape pan to dissolve any browned bits of food on the bottom. Mix in lemon juice, reduce heat to low, and simmer until sauce is slightly thickened, about 10 minutes. Stir often. Stir capers into sauce and place chicken back into skillet, turning to coat with sauce.
- To serve, transfer chicken to a serving platter, top with sauce, and garnish with lemon slices and fresh parsley.

- Brown the chicken pieces in the butter, turning each piece to color evenly. When pieces are browned, add salt and pepper to taste and 1/2 to 3/4 cup white wine. Cook gently until tender. Five minutes before removing the pan, add three tablespoons finely chopped herbs in any of the following combinations: fresh tarragon and parsley; fresh tarragon, parsley, and chives; parsley and rosemary; parsley and chevril; parsley, chives, and dill. Add a little additional wine if necessary and turn the chicken pieces to bathe them well with the herb mixture. Remove chicken to platter and pour pan juices over it.

- Place the chicken breast on a cutting board and slice the chicken breasts in half lengthwise to create 8 thinly sliced chicken breasts. Use a meat tenderizer to pound chicken even and flat on both sides. Season chicken breasts with garlic salt and pepper on both sides. Place breadcrumbs into a large shallow bowl and press chicken breasts into the breadcrumbs on both sides to coat chicken in breadcrumbs. In a large frying pan, heat 4 tablespoons olive oil and 3 tablespoons of butter over medium-high heat. Once hot, add chicken breasts to the pan and cook for 3 minutes.
- Flip chicken and continue to cook for 3 more minutes, until cooked through. Remove chicken from the pan and place on a serving platter. You may need to cook the chicken breasts in batches depending on the size of your pan and add a little extra olive oil as needed while frying.
- Scrape out any extra burnt pieces of breading leftover in the pan and leave only about 1 tablespoon of grease. Return pan to stove and reduce the heat to low. Add in remaining 5 tablespoons of butter and drained capers. Sauté over low heat for 3 minutes.
- Add lemon juice, stirring constantly for 1 minute, and immediately remove sauce from heat and pour over cooked chicken. Serve immediately.

- If you're using four small chicken breasts, place each chicken breast on a cutting board and place a large piece of plastic wrap on top. Use a meat mallet or rolling pin, to slightly flatten each chicken breast. If you're using two large chicken breasts, use a sharp knife to cut each breast in half, lengthwise, repeat process to slightly flatten chicken.
- Add flour and 1/4 teaspoon salt to a shallow dish, whisk to combine. Add egg and 2 tsp water to another shallow dish, whisk to combine. Add potato flakes, breadcrumbs, 1/2 teaspoon salt and garlic powder to another shallow dish. Whisk to combine.
- Season chicken breasts with salt and pepper on both sides. Dredge one chicken breast in flour, pat off any excess flour. Coat both sides of chicken in egg mixture, let any excess egg drip off. Finally, coat each chicken breast in potato flake mixture, making sure to press into the chicken. Set aside, and repeat with remaining three chicken breasts.
