DATE PUDDING
THIS PUDDING has been our family's favorite dessert for Thanksgiving and Christmas for 65 years...and it's still on the menu. At Christmas, I top each serving with a touch of green-tinted whipped cream and a red maraschino cherry. - In a bowl, combine the dates, walnuts and sugar. In another bowl, beat egg, milk and vanilla. Add to date mixture; mix well. Combine flour, baking powder and salt; add to the date mixture. , Spread into a greased 1-qt. baking dish; dot with butter. Bake at 325° for 30 minutes or until a knife inserted in the center comes out clean. Serve with whipped cream.

OLD FASHIONED TAPIOCA PUDDING
I bought of tub of Tapioca pudding at Trader Joes and found out that my husband really really loves tapioca pudding. (really, I hardly got any) Since I don't have a TJ's near me, I went searching for a really good tapioca recipe, one that didn't use quick cooking tapioca. This one is delicious! We serve ours cold topped with a little fresh whipped cream. I found the tapioca pearls in the bulk section of my health foods store. Note that the tapioca pearls must soak overnight before you can prepare the pudding.

- Soak the pearls in water overnight, covered well with water. Drain the water off.
- Heat the milk, cream, vanilla bean (split and scraped), and tapioca to a slow simmer in a heavy pot and cook for 1 hour, stirring often.
- Add the sugar and salt. Bring to a simmer being careful not to let the tapioca stick to the bottom of the pan.
- Put the yolks into a bowl and stir in some of the tapioca mixture to temper the eggs.
- Then add yolks to the pan while stirring. Pour into a bowl and cool.
- You can it it warm (as I hear it is often served in the colder months) We like ours after it has chilled several hours in the fridge at any time of year.

OLD FASHIONED DATE PUDDING - STICKY DATE PUDDING WITH CARAMEL SAUCE
Old Fashioned Date Pudding features a date cake with a rich, sticky caramel sauce that separates to the bottom while cooking. Serve warm with the sticky sauce poured over top and a dollop of whipped cream. One whiff or bite will take you back to Grandma's kitchen.

- Spray a 9 x 5 inch pan (bread pan) with nonstick cooking spray. Preheat oven to 300 degrees F.
- For the sauce, boil together water, brown sugar and butter for 3 minutes in a small saucepan; add vanilla and take off heat to slightly cool while putting together pudding.
- In a mixing bowl, combine sugar, flour, baking powder, and salt; add milk, chopped dates and vanilla. Mix together until a thick, sticky batter forms.
- Spread pudding cake mixture into prepared bread pan; pour sauce over batter.
- Bake for approximately 1 hour. If the center still looks wet after an hour, continue to cook 5 to 10 minutes until the center is set. The cake will be sticky, and the sauce layer will move to the bottom.
- Serve warm or cold, topped with the sauce from the bottom of the pan. Dollop with whipped cream if desired.

OLD-FASHIONED PERSIMMON PUDDING
This is an old-fashioned persimmon pudding recipe from which people who say they don't like persimmon pudding DO like this one. It is more moist and more like the consistency of pumpkin pie filling. It's wonderful topped with whipped cream or milk poured over it.

- Preheat oven to 300 degrees F (150 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, white sugar, and brown sugar until thoroughly combined. In a large bowl, beat the eggs and milk together until smooth, and add the flour mixture, alternating with the persimmon pulp in several additions, mixing well after each addition. CORA'S DATE PUDDING - A VERY OLD RECIPE
This recipe dates back to the early 1900's. It came fdrom my grandmother's aunt. The family often served this for Christmas. Its a very rich, old fashioned pudding served with whipped cream. The sauce bakes on the bottom.

- 1. Preheat oven to 350 degrees. In a small saucepan mix sugar, water, and butter. Cook until it comes to a boil. Pour into a 9 by 13 inch pan. - Preheat oven to 350 degrees F.
- In a bowl, whisk sugar, flour and baking soda.
- In a small bowl, crack both eggs. Add one at a time to the dry ingredients; whisk to incorporate.
- Add one cup of the milk, and mix with the whisk.
- Add the persimmon pulp, and mix well; add remaining milk and whisk until smooth and batter- like.
- Pour into a deep, oven proof vessel (like a Dutch oven).

- Mix together 1 cup dates, 1 cup hot water and baking soda. Let stand several minutes.
- Add remaining ingredients (white sugar, butter, egg, flour, baking powder and pecans). Mix well.
- Pour into 9x9 inch greased pan.

- Mix brown sugar, 2/3 cup water and 2/3 cup dates in saucepan.
