1/3 cup all purpose flour
1/2 tsp garlic powder
2 tbsp grated Parmesan cheese
salt
2 eggs
salt
fresh cracked black pepper
1/2 cup Panko bread crumbs
1/2 cup grated Parmesan cheese
1 tbsp parsley
1/2 tsp garlic powder
salt

Steps:

  • Preheat the oven to 425° and line a rimmed baking sheet with parchment paper or aluminum foil.
  • Set three wide and shallow bowls in front of you. Mix flour with salt, garlic powder, and grated Parmesan cheese in first bowl. Whisk eggs with salt and pepper in another bowl. Mix Panko bread crumbs, grated Parmesan cheese, parsley, garlic powder, and salt in a third bowl.
  • Coat each piece of fish in flour first, then in egg, and last in the Panko mixture. Pat the coating onto the fish firmly and lay in on the prepared baking sheet.
  • Bake for 18-22 minutes, depending on the thickness of the fish.

Today's Baked Mahi Mahi Recipe is a succulent gourmet dinner you can pull off in 30 minutes. Fresh and succulent Mahi Mahi fish baked and served with a bright cherry dill caper salsa for an extra burst of flavor!

2 fillets Mahi Mahi (defrosted)
1/4 teaspoon of sea salt
1/4 teaspoon pepper
pinch chilli flakes
1 tablespoon oil
4 tablespoons butter
1 clove garlic (thinly sliced)
3 slices lemon
2 sprigs fresh thyme and dill
3/4 cup cherries (pitted and roughly chopped)
1 tablespoon capers (drained)
1/3 cup mixed herbs chopped : mostly dill (some parsley and chives)
2 tablespoons lemon juice
1 tablespoon honey
2/3 cup olive oil
pinch of salt and pepper
1 cup cooked wild rice
1 cup steamed broccoli

Steps:

  • Preheat the oven to 400 degrees F.
  • Pat the fish fillets dry on both sides using a paper towel.
  • Season the Mahi Mahi fish on both sides with salt, pepper and a pinch of chilli flakes.
  • Line your baking dish with a thin layer of oil, half the butter, garlic slices, lemon slices and fresh herbs.
  • Place the seasoned fish fillets over the herbs on the baking dish and add a tablespoon of butter over each.
  • Bake the fish for approximately 16-18 minutes until the fillets turn opaque completely and slightly golden in color.
  • While the fish is baking, prepare the salsa. In a large bowl, mix all ingredients together and season light. Feel free to add some extra chilli flakes here or jalapeños for a kick-it would be so good!
  • Once the fish is ready and out of the oven, spoon over the melted butter at the bottom of the baking dish and drizzle some sweet cherry salsa along the middle of the fish.
  • Serve the baked Mahi Mahi over some cooked wild rice and steamed broccoli for one delicious meal! Enjoy!!

1/3 cup canola mayonnaise
1 teaspoon finely chopped shallot (from 1 small [1/2 oz.] shallot)
4 (6-oz.) skinless mahi-mahi fillets
1/4 cup panko (Japanese-style breadcrumbs)
2 teaspoons chopped fresh tarragon
1 teaspoon lime zest (from 1 lime)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 425°F. Coat a baking sheet with cooking spray. Stir together mayonnaise and shallot in a small bowl. Spread mixture evenly over mahi-mahi fillets to cover. Arrange fillets in an even layer on prepared baking sheet.
  • Stir together panko, tarragon, lime zest, salt, and pepper in a small bowl. Sprinkle mixture evenly over prepared fillets. Bake in preheated oven until panko is lightly browned and a thermometer inserted in thickest portion of fillets registers 140°F, 14 to 16 minutes.

I was inspired by other delicious fish dishes that contained mayonnaise to create this quick simple preparation of fresh fish. My 2-year-old and my 4-year-old both ask for more!

½ cup mayonnaise
2 tablespoons soy sauce, or more to taste
1 large clove garlic, minced
6 (5 ounce) mahi mahi fillets
¼ cup crushed saltine crackers, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Stir mayonnaise, soy sauce, and garlic together in a bowl.

3 tablespoons olive oil
3 medium russet potatoes
3 garlic cloves, minced
4 mahi mahi fillets (I get the bag of frozen Mahimahi at CostCo)
3 tablespoons unsalted butter, cut into 1/4-inch pieces
4 sprigs fresh thyme
1 lemon, sliced thin

Steps:

  • Oven to 425°. Spread 1 Tbsp olive oil over the surface of rimmed cookie sheet.
  • Run the potatoes through a mandoline or slice by hand to get 1/4" thick slices. Toss potato slices with 2 Tbsp olive oil and minced garlic. Salt and pepper to taste. Arrange the potatoes into 4 piles on the cookie sheet. Bake until brown in spots and just tender, 30-35 minutes.
  • Pat the mahimahi dry with paper towels and season with salt & pepper. Place 1 mahimahi fillet on top of each potato pile. Top with butter pieces, thyme sprigs and lemon slices on top. Return to oven and continue to bake until fish flakes when poked with knife, about 15 minutes.
  • Place one potato & fish pile onto each plate and serve!

This is a quick and delicious way to prepare the bountiful mahi mahi from our beloved Maui. Enjoy this taste of the islands!

3 tablespoons olive oil
3 tablespoons butter
2 large eggs
1 cup shredded Parmesan cheese
3 tablespoons all-purpose flour
4 (6 ounce) mahi mahi fillets
salt and ground black pepper to taste
½ cup finely chopped toasted macadamia nuts
1 cup mango salsa

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat olive oil and butter in an oven-proof pan over low heat until butter is melted. Remove from the heat.
  • Beat eggs in a small, shallow dish. Mix Parmesan and flour in a second shallow dish.
  • Season mahi mahi fillets with salt and pepper. Dip into beaten egg. Lift up so excess egg drips back in the bowl. Press into Parmesan mixture to coat both sides. Lay each fillet into the melted butter mixture, then turn each piece over to coat. Sprinkle macadamia nuts evenly over each fillet.
  • Bake, uncovered, in the preheated oven until fish is opaque and flakes easily with a fork, 7 to 11 minutes, depending on the thickness of the fillets.
  • Place each fillet on a serving plate and top with 1/4 cup mango salsa.
