3/4 cup KRAFT Lite Zesty Italian Dressing
1/2 cup KRAFT Original Barbecue Sauce
1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
8 small boneless skinless chicken breasts (about 2 lb.)
6 cups hot steamed corn

Steps:

  • Preheat oven to 400°F. Toss coleslaw blend and dressing; cover. Refrigerate until ready to serve.
  • Place barbecue sauce and coating mix in separate pie plates or shallow dishes. Dip chicken in barbecue sauce, then in coating mixture, turning over to evenly coat both sides of each chicken piece. Place in single layer in aluminum foil-lined 15x10x1-inch baking pan. Discard any remaining coating mixture.
  • Bake 20 min. or until chicken is cooked through (170°F). Serve with the coleslaw and corn.

CHICKEN:
1/4 cup all-purpose flour

1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 large eggs, lightly beaten
2 cups coarsely crushed barbecue potato chips
1-1/2 pounds chicken tenderloins
Oil for frying

Steps:

  • In a small bowl, mix sour cream, chives, garlic and salt. In a shallow bowl, mix flour, brown sugar and seasonings. Place eggs and potato chips in separate shallow bowls. Dip chicken in flour mixture to coat both sides; shake off excess. Dip in eggs, then in potato chips, patting to help coating adhere., In a deep skillet, heat 1/4 in. oil to 375°. Fry chicken, a few strips at a time, until golden brown, 2-3 minutes on each side. Drain on paper towels. Serve with sauce.

2 cups of your favorite bbq sauce
2 tablespoons extra-virgin olive oil (or canola oil)

Steps:

  • Preheat oven to 400 degrees F.
  • Coat the chicken on all sides with olive oil and season with salt and pepper.
  • Place the chicken skin side down on a rimmed baking sheet. Bake for 25 minutes.
  • Remove chicken from oven and turn the temperature of the oven up to 425 degrees.
  • Coat the top of the chicken with barbecue sauce using a basting brush. Use a spatula to flip the chicken over, being careful not to tear the skin. Baste the other side of the chicken, and place back in the oven for 7 minutes.
  • Remove from oven, baste top with barbecue sauce, and place back in oven for 7 more minutes.
  • Remove from the oven again and baste again, for a total of three times, and place back in oven for 7 more minutes.
  • If the chicken hasn't crisped and browned to your liking, move the oven rack up and broil the chicken for 3-5 minutes, until it's more crispy.

  • Preheat oven to 350 degrees.
  • Thoroughly pat chicken dry with a paper towel.
  • In a small bowl, mix together spices (all ingredients but chicken and bbq sauce)
  • Coat chicken in dry rub, let sit 30 minutes to overnight.
  • Add chicken to oven on a cooling rack sitting atop a baking sheet.
  • Let chicken bake about 40 minutes before adding bbq sauce- until skin is crispy and fat has started to render. Flip chicken drumsticks every 10 minutes to ensure it crisps evenly on all sides.
  • With a silicone brush, lightly brush chicken with bbq sauce, flipping its side each time you add another coat of sauce, about every 10 minutes until sauce is used up (about 30 minutes.)
  • When chicken is ready, turn on broiler and broil for two minutes on each side to give a little extra crunch to chicken skin.

1 1/2 tsps season salt (I used Lawry's)
1 1/2 tsps baking powder

  • Pat both sides of the chicken thighs dry with paper towels.Note: If you prefer less skin, trim the excess skin on the bottom of each thigh using kitchen scissors leaving just the skin on the top.
  • Combine the BBQ seasoning, season salt, and baking powder. Rub on both sides of the chicken thighs.
  • Place the chicken skin side up on a wire rack over a lined baking sheet. Put in a 475 degree oven for 15 minutes. Reduce the oven temp to 425 and cook for an additional 30 minutes.
