CRISPY ARTICHOKE HEARTS

Nonstick cooking spray, for the baking sheet, optional
14 round salted butter crackers
4 fresh basil leaves
2 tablespoons finely grated Parmesan cheese
1 tablespoon fresh flat-leaf parsley leaves
1/4 teaspoon garlic salt
One 24-ounce jar marinated quartered artichoke hearts, drained
Marinara sauce, for serving

Steps:

  • Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick cooking spray or line with parchment paper.
  • In a food processor, combine the crackers, basil, cheese, parsley and garlic salt and process to fine crumbs (the texture of breadcrumbs). Roll the artichoke hearts in the cracker crumb mixture and place on the prepared baking sheet.
  • Bake until the cracker crumbs are golden brown, about 30 minutes. Arrange the artichokes on a serving platter with toothpicks. Serve with marinara sauce for dipping, if desired.

AIR FRYER CRISPY ARTICHOKES

The key to these crispy artichokes is to make sure they are split in half and fully patted dry. This prevents the inside of the artichokes from getting mushy and steamy. They are dipped in a lemony, garlic aioli that complements the lemon zest and oregano flavor in the crisp exterior of the artichokes.

2 14.5-ounce cans artichoke hearts in water, drained
1/2 cup all-purpose flour
2 large eggs
1 cup panko
1 teaspoon grated lemon zest
1 teaspoon dried oregano
1/2 teaspoon kosher salt
Olive oil cooking spray, for frying
1/4 cup mayonnaise
1 small clove garlic, grated
2 teaspoons fresh lemon juice
2 teaspoons extra-virgin olive oil
1/4 teaspoon kosher salt

Steps:

  • Make the artichokes: Preheat an air fryer to 360˚ F. Pat the artichoke hearts dry. Halve lengthwise. Put the flour in a shallow bowl; lightly beat the eggs in a second bowl. Whisk the panko, lemon zest, oregano and kosher salt in a third bowl. Coat the artichokes in the flour, then the egg, then the panko mixture.
  • Lightly coat the artichokes with cooking spray and arrange sprayed-side down in the air fryer basket in an even layer. Cook 7 minutes. Spray the tops with more olive oil, flip and cook until golden brown, 7 more minutes.
  • Make the dipping sauce: Whisk the mayonnaise, garlic, lemon juice, olive oil and salt in a small bowl. Serve with the artichokes.

ARTICHOKE, SPINACH, AND PROSCIUTTO FLATBREADS WITH SPICY HONEY



Artichoke, Spinach, and Prosciutto Flatbreads with Spicy Honey image

Spicy honey lends a little kick to these crispy flatbreads. With frozen artichokes, spinach, and pizza dough on hand, you can make them any night of the week.

3 tablespoons olive oil
4 garlic cloves, thinly sliced
2 tablespoons finely chopped flat-leaf parsley
1 (10-ounce) package frozen spinach, thawed
1 (9-ounce) package frozen artichoke hearts, thawed
Kosher salt, freshly ground black pepper
2 tablespoons finely grated lemon zest
Cornmeal (for pans)
1 pound frozen pizza dough, thawed
All-purpose flour (for surface)
1/2 pound Parmesan cheese, grated on the large holes of a box grater (about 2 cups), divided
3 tablespoons honey
1 1/2 teaspoons red pepper flakes
2 ounces thinly sliced prosciutto

Steps:

  • Position racks in middle and upper third of oven and preheat to 475ºF.
  • Heat oil in large heavy skillet over medium. Add garlic and parsley and cook, stirring, 30 seconds. Add spinach and artichokes, toss to coat, and cook, covered, until artichokes are tender, 10-12 minutes. Uncover and simmer, stirring occasionally, until juices thicken, about 2 minutes. Season with 1/2 tsp. salt and a pinch of black pepper. Remove from heat and stir in lemon zest.
  • Sprinkle 2 rimless baking sheets with cornmeal. Roll out half of the dough on floured surface to a 12x7" oval. Transfer to baking sheet. Repeat with remaining dough.
  • Sprinkle each round with 1/2 cup Parmesan, then top evenly with artichoke and spinach mixture. Top with remaining 1 cup Parmesan and season with a pinch of salt and black pepper. Bake, rotating sheets halfway through, until crust is golden brown, 20-22 minutes.
  • Meanwhile, combine honey and red pepper flakes in a small bowl.
  • Remove flatbreads from oven. Top with prosciutto and drizzle with spicy honey. Cut flatbreads into wedges and serve.

ARTICHOKES AND PRESERVED LEMONS WITH HONEY AND SPICES



Artichokes and Preserved Lemons With Honey and Spices image

2 lemons
2* pounds small artichokes (2 1/2 to 3 ounces each) or 1 pound frozen artichoke hearts
3 tablespoons extra-virgin olive oil
3 cloves garlic, crushed
1/4 teaspoon powdered ginger
1/8 teaspoon turmeric
1 1/2 tablespoons honey
Peel from 1 to 1 1/2 preserved lemons, cut into 1/4 -inch strips (available at Middle Eastern and specialty food stores)
1/2 teaspoon salt

Steps:

  • If using fresh artichokes, squeeze 1 lemon into a large bowl of water, and drop the rinds into the water. Using a serrated knife, cut off the top third of an artichoke. Pull back and snap off the leafy blades, one by one and in layers, until only the pale yellow leaves remain. Using a paring knife, trim the artichoke bottom and stem to the pale green flesh. Cut the artichokes in half lengthwise. (If using frozen, they may already be halved or quartered and have the chokes removed.) With a teaspoon, scoop out the choke, deep in the flower between the leaves and the base of the stem. Be careful not to scoop out the firm heart. Drop trimmed artichokes into lemon water until ready for use. Repeat with each artichoke.
  • Heat the oil in a large nonreactive saucepan (at least 12 inches wide) over medium heat. Drop in the garlic and cook for a few seconds only, stirring.
  • Take the pan off the heat and add the ginger, turmeric, the juice from the remaining lemon, honey and the preserved lemon. Transfer the artichokes from the water bath to the pan. Add 1 cup plus 2tablespoons water and 1/2 teaspoon salt to the pan. Cover, return to the heat and simmer for about 15 minutes or until the artichokes are tender, turning them from time to time, and adding a little water as necessary. Remove the lid and simmer until the mixture is very moist but most of the liquid has evaporated, 5 to 10 more minutes.

PLAIN ROASTED ARTICHOKE HEARTS

Can't believe it, but there's no other recipe like this on Recipezaar (unless I somehow missed it). These babies are so, so good. I roasted canned artichoke hearts in connection with another recipe I invented, and was so pleased with the way they came out even without the topping, so I'm posting a plain(er) version. If you want the topped version, go to recipe no. 144997. I found that roasting them enhanced the taste and texture - made them more tender on the inside:D One of these "throw it in the oven and ignore while you are fixing other parts of dinner" recipes!

3 (15 ounce) cans artichoke hearts
4 garlic cloves, quartered
2 teaspoons extra virgin olive oil
salt and pepper, to taste

Steps:

  • Preheat oven to 375°F.
  • Drain artichokes in colander and rinse a bit to remove brine.
  • Mix gently with garlic and olive oil in a bowl.
  • Pour artichoke mixture in a metal roasting pan and roast for about one hour, tossing a few times if desired.
  • Sprinkle with salt and pepper, and add lemon juice and butter (if using).

STEAMED ARTICHOKES WITH MAYONNAISE-MUSTARD SAUCE



Steamed Artichokes With Mayonnaise-Mustard Sauce image

Flavored steaming water adds succulence to these. The dipping sauce is a little different from plain mayonnaise or melted butter (although those are very good, too). Fresh artichokes should have tightly closed heads and not be withered-looking. To make a nice presentation, cut an inch off the top of the artichokes with a sharp knife, and snip the thorny tips from the leaves with kitchen shears. Cut the stems off flush with the bottom of the artichokes, then cut off the dark, dried-out ends of the stems. Steam the green sections of the stems right along with the artichokes. Sometimes the stems taste good and sometimes they don't, but you won't know unless you cook them. Try a bite of the stems when they are tender. If they taste good but are fibrous, peel them with a sharp knife. If they are good, you have bonus bites of tasty artichoke. If they taste bitter, just add them to the compost pile. A teaspoon is the perfect tool to scrape off the fuzzy center after eating the tender parts of the leaves. Please remove the fuzzy choke with care. As my father used to say, "That's the part that choked Arty." Then you can eat the artichoke bottom. That is your reward for all the work you did to pull off, dip and nibble the leaves one at a time. I have cooked them this way for a long time and am not sure where the idea came from, but it was probably Julia Child. The sauce is from my DBF. His brother made it when they were boys at home. It's good on broccoli, too.

4 artichokes, washed and trimmed as above
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 teaspoon kosher salt
10 peppercorns
water, for steaming
real mayonnaise
yellow mustard

Steps:

  • Place one to two inches of water into a large pot with a tight-fitting lid and add the olive oil, red wine vinegar, salt, and whole peppercorns to the water.
  • Insert the steaming basket and place artichokes and trimmed stems inside the basket. If you don't have a steamer, it also works to place the artichokes directly into the water, bottoms down.
  • With lid off, heat until water boils, then put lid on and turn heat down to low to maintain a simmer.
  • Steam or simmer for 25-30 minutes or until a sharp knife can easily pierce bottoms of the artichokes near the stems. To be sure, test them all. Larger artichokes will take longer to cook. Remove hot artichokes from the pot with tongs.
  • To make the sauce: Mix about one part of yellow mustard into six parts of good mayonnaise. The sauce should be light yellow and not taste like either mayonnaise or mustard, but like a new sauce all its own. Add more of either ingredient as needed to get the "new" sauce.

I saw this recipe on the Neely's and have adapted it to fit our tastes. Note: I've tried cutting the honey mustard sauce in half because I thought it would be too much, and it was just barely enough. I would recommend making the full amount because it will keep in the fridge for a week. Enjoy!!

2 lbs boneless skinless chicken breasts
3 eggs, beaten
1 cup flour
2 cups panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon lemon pepper seasoning
1 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon black pepper
peanut oil, for frying
1/2 cup Dijon mustard
1/3 cup honey (Original recipes calls for 1/2 cup...but that's too sweet for us!)
2 tablespoons mayonnaise
1 tablespoon lemon juice
salt and pepper, to taste

Steps:

  • Cut chicken into long strips. Set aside.
  • Place beaten eggs in a shallow bowl. Place flour in another shallow bowl (I like to season flour with 1/2 teaspoon salt, pepper, and cayenne for extra flavor).
  • Place panko breadcrumbs in another shallow bowl and season with garlic powder, lemon pepper, cayenne, salt and pepper. Mix well.
  • Dip the chicken strips in the flour, then the beaten egg, then dredge into seasoned panko.
  • Fry chicken in batches in deep fryer preheated to 350 degrees for about 6-8 minutes. The chicken should be cooked through and golden brown.
  • Remove to drain on paper towels. Sprinkle with additional salt and pepper once out of the fryer. Serve with honey mustard sauce.
  • To make the honey mustard sauce: Mix together the mustard, honey, mayo, lemon juice and season with salt and pepper to taste. Will keep in fridge up to a week.
