PORK STUFFED PEPPERS RECIPE (PIMIENTOS RELLENOS DE CERDO)



Pork Stuffed Peppers Recipe (Pimientos Rellenos de Cerdo) image

Bring the taste of Spain into your kitchen with this pork stuffed peppers recipe! They're an easy and delicious meal and a great way to get more vegetables on the table.

6 large bell peppers (tops cut off and set aside)
1 tbsp olive oil
1 medium onion (finely diced)
2 cloves garlic (minced)
2 tsp smoked Spanish paprika
2 tsp ground cumin
1 lb ground pork
1 cup white rice
1 can of diced tomatoes (14oz/400g)
1 tbsp tomato paste (or sofrito)

Steps:

  • Pre-heat your oven to 400°F (200°C).
  • Fill a small saucepan with 1.5 cups of water and the cup of rice. Cover with a lid and place over a high heat and bring to boil. Reduce to a simmer and leave over a low heat until the water has evaporated and the rice is cooked.
  • Meanwhile, prick the peppers all over with a fork, and microwave on high for 5 minutes until soft but not falling apart.
  • Place a large skillet over medium heat and add the olive oil. When the oil is hot, add the onion and saute until soft and translucent (about 4 minutes). Add the garlic, paprika, and cumin and saute for another minute.
  • Next, add the ground pork to the pan and saute, stirring often, for another 5 minutes or until nicely colored all over. You can add a splash of water to the pan if it looks too dry.
  • Pour the can of tomatoes into the pan and add the tomato paste/sofrito. Stir to combine and simmer for another 5 minutes until it has reduced slightly. Remove from heat and stir in the rice. Season with salt and pepper.
  • Stand the peppers upright in a large baking tray, and split the rice-pork mixture evenly among them. Don't overfill, leave a little room at the top. Place the pepper tops back on and bake in the oven for 15-20 minutes until the filling has reduced and is no longer runny. Serve by themselves as an appetizer or tapas, or with a salad or potatoes for a light main.

Making the most out a little minced pork, this dish makes for a tasty and different lunch. Originally I came up with a slightly different version without meat which was inspired by holidays to Cyprus, this is a twist on that.

50 ml olive oil (for frying)
200 g long grain rice
6 large bell peppers (cut in half length ways)
300 g onions, diced (3 small)
150 g celery, diced (2 sticks)
300 g pork, mine
2 teaspoons dried oregano
1 teaspoon smoked paprika
1/4 teaspoon cinnamon
1 -2 tablespoon tomato puree
3 garlic cloves (chopped or crushed)
500 ml vegetable stock
salt
pepper
50 g grated cheese (optional)

Steps:

  • cook the rice as you normally do (follow the packet instructions) leave to one side.
  • soften the onions in a large pan.
  • add the diced celery.
  • add the pork and stir in well allowing to colour.
  • then put in the garlic, tomato purée, dried oregano, smoked paprika, salt and pepper and stir inches.
  • cook the mixture together for a minute then add the vegetable stock, stir in well and allow to reduce by about half.
  • At this point cut your peppers in half and scoop out any seeds or white ridges (leave the green stalk as it holds it together).
  • When the pan mixture has reduced mix in the rice and then stuff the peppers with the mix.
  • Give a little drizzle of olive oil and an optional sprinkle of grated cheese.
  • Bake in a medium hot oven for about 30-60 minutes (so the peppers colour and soften but don't over do it).
  • Serve.

2 tablespoons vegetable oil
1 cup finely chopped yellow onions
1/2 cup finely chopped green bell peppers
1/2 pound ground beef
1/2 pound ground pork
1 tablespoon minced garlic
1/4 cup finely chopped fresh parsley leaves
3/4 teaspoon salt
1/2 teaspoon ground black pepper
Pinch red pepper flakes
2 cups cooked long or medium-grain white rice
8 ounces tomato sauce
Water

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large pot of boiling water, parboil the peppers until just tender, 2 to 3 minutes. Remove with a slotted spoon and dry on paper towels.
  • In a large saute pan or skillet, heat the oil over medium-high heat. Add the onions and chopped bell peppers and cook, stirring, until soft, about 3 minutes. Add the beef, pork, garlic, parsley, salt, black pepper, and pepper flakes. Cook until the meat is browned, stirring with a heavy wooden spoon to break up the lumps, about 6 minutes. Add the rice and tomato sauce and stir well. Remove from the heat and adjust the seasoning, to taste.
  • Pour enough water into a baking dish to just cover the bottom, about 1/8-inch deep. Stuff the bell peppers with the rice mixture and place in the baking dish. Bake until the peppers are very tender and the filling is heated through, 25 to 30 minutes.
  • Remove from the oven and let rest for 10 minutes before serving.

  • Lightly brown ground pork in large frying pan; pour off drippings.

4 medium green bell peppers
8 ounces ground pork sausage
1 1/2 cups chopped onions
1/2 cup chopped celery
2 teaspoons minced garlic
1 1/2 cups cooked long-grain rice
1/2 teaspoon salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
1/2 teaspoon Essence, plus more for seasoning, recipe follows
1/4 cup chopped green onions, green part only
1 tablespoon chopped parsley leaves
2 tablespoons fine dry bread crumbs
2 tablespoons grated Parmesan
4 teaspoons unsalted butter
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut off the top quarter of each bell pepper and reserve. Scoop the seeds and veins out from the inside of each pepper and discard. Set bell pepper shells aside. Remove and discard the stems from each bell pepper top. Dice enough of the bell pepper tops to make 1/2 cup. Set aside.
  • In a large skillet, over medium-high heat, crumble and brown the sausage until cooked through, about 4 minutes. Add the onions, 1/2 cup diced bell pepper, and the celery. Saute for 4 minutes, or until the vegetables are soft. Add the garlic and cook, stirring, for 1 minute. Add the rice and mix well. Season with salt, pepper and Essence. Cook for about 1 minute. Remove from the heat and stir in the green onions and parsley. Season the insides of the bell pepper shells with salt and pepper, to taste. Spoon the rice mixture into the bell peppers.
  • In a small bowl, combine the bread crumbs and cheese. Season with a pinch of Essence and mix well. Sprinkle the crust over each pepper. Top each crust with 1 teaspoon of butter and place the peppers into an 8-inch baking dish or pan. Add just enough water to cover the bottom, about 1/3 cup. Bake for 25 to 30 minutes, or until the tops are crusty and brown and warmed through. Serve hot.

  • Preheat oven to 325°. In a large skillet, heat oil over medium-high heat. Add red peppers, onion and celery; saute until tender, 3-4 minutes. Add thyme, garlic salt, paprika and cayenne; saute 1 minute longer. Remove from heat; set aside., Make a lengthwise slit down the center of each tenderloin to within 1/2 in. of bottom. Open tenderloins so they lie flat. With a meat mallet, flatten pork to 1/2-in. thickness. Fill with vegetable stuffing mixture. 1 cup rice
1 1/2 cups water
8 medium green bell peppers
2 lbs lean ground chuck (BEEF)
1 lb ground lean pork
2 medium onions, diced
2 tablespoons vegetable oil
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1 egg, lightly beaten
4 (8 ounce) cans tomato sauce
1 (10 1/2 ounce) can condensed tomato soup
1 1/2 cups catsup
3/4 pint sour cream
2 tablespoons all-purpose flour

Steps:

  • Prepare rice by rinsing under cold water for a few seconds.
  • Put rice in small pot with water and bring to boil uncovered, at medium heat.
  • When rice begins to boil, lower heat to medium low and place lid on pot tilted to allow steam to escape.
  • Cover tightly when craters appear in rice, lower heat and simmer approx 15 minutes.
  • Let sit for 5 minutes, fluff with fork and let cool.
  • Prepare green peppers by slicing off tops approximately 1/4" down and remove seeds and membrane.
  • Wash peppers and allow to drain upside down on paper towel.
  • Prepare filling by placing ground meat in large bowl.
  • Saute diced onions in vegetable oil in small saute pan until onion is transparent.
  • Add to meat bowl.
  • Add salt and pepper.
  • Add 1/2 can tomato sauce (reserving remaining 1/2 can) Add rice to bowl and combine ingredients with hands until blended together.
  • Add lightly beaten egg and continue to blend mixture.
  • Loosly pack each pepper with meat mixture forming small dome on top.
  • If you have extra filling, form into individual meat balls.
  • In large stock pot, pour remaining 1/2 can tomato sauce and 1/2 can water, swishing around until blended.
  • Place stuffed peppers into stockpot, along with extra meatballs (if you made any).
  • Add 1 can tomato soup, 1/2 can water to pot.
  • Add catsup to pot.
  • Add remaining 3 cans tomato sauce, and add about 1/2 can of water to each can to clean up remaining sauce in can.
  • Add this to pot also.
  • Bring stockpot to boil, lower heat, cover with lid slightly tilted.
  • Cook over low heat for about 1 hour.
  • Blend flour into sour cream in bowl.
  • Slowly blend in about 1/2 cup (or more) hot gravy from pot.
  • Add sour cream mixture SLOWLY into pot, stirring constantly until gravy slightly thickens and becomes a deep orangy color, rather than the bright red color of tomatoes.
  • Serve peppers in bowls, split open, and generously covered with gravy.
  • Have crusty bread available for soaking up the rich gravy.

Steps:

  • Cut the peppers in half lengthwise, leaving the stems and halving them also.
  • Remove the seeds and ribs.
  • Saute the beef and pork, the onion, garlic, 1 teaspoon of the bouillon granules, and the salt together, crumbling well, until the onion is transparent.
  • Drain off the fat.
  • Add the rice, cheese, sour cream, tomatoes, green onions and soy sauce.
  • Mix well.
  • Stuff this mixture into peppers.
  • Mix the hot water and the remaining 1 tsp bouillon granules.
  • Pour this into a shallow casserole large enough to hold all the peppers.
  • Place the stuffed peppers in the dish.
  • (The water in the dish allows the peppers to steam while retaining some of their crispness).
  • Cover the casserole with foil and bake at 350 degrees for 25-35 minutes.
  • Remove the foil and spoon a little juice over the peppers; bake for an additional 10-15 minutes.
