I came up with this cream cheese coffee cake recipe so I could make a delicious brunch treat using convenience pastry for the base. Serving it when it's cold means that all the cozy filling stays with each slice. -Sherry Little, Sherwood, Arkansas

1 tube (12 ounces) large refrigerated buttery crescent rolls
1 carton (7-1/2 ounces) spreadable brown sugar and cinnamon cream cheese
1/3 cup butterscotch-caramel ice cream topping
1/2 cup chopped pecans
1/3 cup packed brown sugar
1/4 cup all-purpose flour
2 tablespoons cold butter
1 large egg, beaten

Steps:

  • Preheat oven to 375°. Unroll crescent dough into long rectangle; place on a parchment-lined baking sheet. Press perforations to seal. Spread cream cheese down center third of rectangle. Drizzle with ice cream topping; sprinkle with pecans. Combine brown sugar and flour; cut in butter until crumbly. Sprinkle half the mixture over pecans., On each long side of dough, cut 8 strips at an angle, about 2 in. into the center. Fold 1 strip from each side over filling and pinch ends together; repeat. Brush with beaten egg. Sprinkle with remaining brown sugar mixture., Bake until deep golden brown, 18-22 minutes. Cool 5 minutes before removing from pan to a wire rack to cool completely. Refrigerate until cold.

I came up with this as I had extra tubes of crescent rolls, and a pkg of neufautel cheese. I mashed a couple of ideas together to make it.. the crescent roll shaping is not perfect, but when you put the filling in it's very forgiving.

2 (8 ounce) packages crescent rolls
1 (8 ounce) package cream cheese, softened
1/2 cup sugar
1 tablespoon flour
1 -2 teaspoon almond extract
1 egg
1 teaspoon sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a 10 inch cake pan,lay out the separated triangles from one crescent roll in a star pattern, with corners overlapping. Pat down in pan until the bottom is completely covered, and a little up the sides. It's nice if there are some points up the sides to lay over the topping.
  • Put pan in oven for 4-5 minutes.
  • From the second tube, take four crescents, roll them out and cut them in half the long way (so you have eight small triangles). Set aside.
  • Beat cream cheese, sugar, flour and egg together. Stir in almond extract. Remove pan from oven.
  • Pour the cream cheese mixture in the pan, gently smooth out.
  • Fold over any points from the sides of the pan.
  • Lay the additional pastry triangles around the cake like a spoke, with the thin points to the center.
  • Sprinkle with 1 teaspoon sugar.
  • Bake for 24 minutes, or until top is golden.
  • Remove from oven, let sit for approximately 15 minutes.

4 tablespoons salted butter
2 small onions, thinly sliced
1 teaspoon fresh thyme, chopped
Kosher salt and freshly ground pepper
1 tablespoon apple cider vinegar
2 8-ounce tubes refrigerated crescent roll dough, separated into 16 triangles
4 ounces Swiss cheese, shredded

Steps:

  • Preheat the oven to 375˚ F. Melt the butter in a 12-inch cast-iron skillet over medium heat. Add the onions, thyme, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onions are very soft and a deep golden brown, 10 to 15 minutes. Stir in the vinegar and cook, scraping up any browned bits, until evaporated, 1 to 2 minutes. Use a slotted spoon to remove the onions to a paper towel-lined plate and wipe the skillet clean.
  • On the wide end of each dough triangle, spoon a scant tablespoonful of caramelized onions and sprinkle with about 1 tablespoon Swiss cheese. Starting at the wide end, gently roll up the dough around the filling; place in the skillet. There will be some space between each roll, but the rolls will puff up and come together when baked.
  • Transfer the skillet to the oven and bake until the rolls are golden and puffy, 25 to 30 minutes. Let cool slightly before serving.

16 ounces cream cheese

1 cups sugar
0.25 cups pecans
1 cans pineapples
1 units topping
0.5 cups sugar
0.5 cups pecans
1 teaspoons cinnamon
1 units eggs

Steps:

  • Preheat oven to 350 degrees. Lightly grease the bottom of a 9x13-inch pan. Take one can of rolls and spread evenly into the bottom of pan. Sprinkle the rolls lightly with cinnamon. Set aside.
  • Mix the cream cheese, egg yolk and sugar until it is fluffy. Add chopped pecans. If you choose to add pineapples to the recipe, add them at this time. Fold them into the cream cheese mixture. Spread the cream cheese mixture on top of the rolls in pan. Take the second can of rolls and spread them on top of the cream cheese mixture. Set aside.
  • TOPPING: Mix the sugar, chopped nuts and cinnamon together. Take the egg white and beat lightly. Brush the top of the coffeecake with the egg whites. Be sure to cover the crust well. Take the sugar and cinnamon mixture and sprinkle on top of the cake.
  • Bake 40 to 45 minutes. Cool completely before serving.

1 package (8 ounces) cream cheese, softened
3/4 cup confectioners' sugar, divided
1 egg
1/2 teaspoon vanilla extract
2 tubes (8 ounces each) refrigerated crescent rolls
1 can (21 ounces) cherry pie filling
2 to 3 teaspoons milk

Steps:

  • In a small bowl, beat cream cheese and 1/4 cup confectioners' sugar until smooth. Beat in egg and vanilla just until combined; set aside., Unroll crescent dough and separate into triangles. Set four triangles aside. Place remaining triangles on a greased 14-in. pizza pan, forming a ring with wide ends facing outer edge of pan and pointed ends toward the center; leave a 3-in. hole in the center. Lightly press seams together. , Spread cream cheese mixture over dough to within 1/2 in. of edges. Top with pie filling to within 1/2 in. of cream cheese edges. Cut reserved triangles into thirds, starting at the wide end and ending at the point. Arrange over pie filling with points facing outer edge of pan, forming spokes. Press ends at center and outer edges to seal. , Bake at 375° for 15-20 minutes or until golden brown. Cool on a wire rack. Combine remaining confectioners' sugar and enough milk to achieve drizzling consistency; drizzle over coffee cake.

1 cup sour cream
1/2 cup sugar
1/2 cup butter, cubed
1 teaspoon salt
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
2 large eggs, lightly beaten
4 cups all-purpose flour
FILLING:
2 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
1 large egg, lightly beaten
2 teaspoons vanilla extract
1/8 teaspoon salt
GLAZE:
2-1/2 cups confectioners' sugar
1/4 cup whole milk
1 teaspoon vanilla extract
Toasted sliced almonds, optional

Steps:

  • In a small saucepan, combine sour cream, sugar, butter and salt. Cook over medium-low heat, stirring constantly, 5-10 minutes or until well blended. Cool to room temperature. , In a large bowl, dissolve yeast in warm water. Add sour cream mixture and eggs. Beat until smooth. Gradually stir in flour to form a soft dough (dough will be very soft). Cover and refrigerate overnight. , Punch dough down. Turn dough onto a floured surface; knead 5-6 times. Divide into fourths. Roll each piece into a 12x8-in. rectangle. In a large bowl, combine filling ingredients until well blended. 1 (8 ounce) package cream cheese, softened
1/3 cup powdered sugar
1 egg, seperated
1/2 teaspoon vanilla or 1/2 teaspoon almond extract
2 (8 ounce) packages refrigerated crescent dinner rolls
1 cup canned cherry pie filling
1/2 cup powdered sugar
1 -2 teaspoon milk

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine crean cheese, 1/3 cup powdered sugar, egg yolk, and vanilla; mix until smooth.
  • Unrool crescent rolls and reserve four triangles for decoration.
  • Separate remaining dough into 12 triangles and arrange on a 15" round baking sheet (Baking stone preferably) with points toward the center.
  • Roll dough into a 14" circle to seal the seams.
  • Cut the center out with a glass and discard.
  • Spread cream cheese mixture over dough to within 1/2 inch of the edges; top with pie filling.
  • Roll remaining dogh into a rectangle; 6" wide and 7" long.
  • Cut lengthwise into 12 strips.
  • Twist strips and place in a spoke-like fashion over filling.
  • Press ends to seal at center and outer edges.
  • Brush strips with lightly beaten egg white.
  • Bake 25-30 minutes or until golden brown; cool slightly.
  • For Glaze: Mix remaining powdered sugar and milk until smooth.
  • Drizzle over coffee cake.

1 (8 ounce) package cream cheese, softened
1/4 cup powdered sugar
1 egg yolk
1/2 teaspoon vanilla extract (or almond extract)
1 (21 ounce) can peach pie filling (or cherry, apple or blueberry pie filling)
1/2 cup powdered sugar
2 -3 teaspoons milk (or orange juice)

Steps:

  • Preheat oven to 350*F.
  • Unroll crescent dough. Separate into 16 triangles, reserving 4 triangles for decoration.
  • On a large round pizza pan(or baking stone), arrange 12 triangles in a circle with wide ends toward the outside edge of the pan and points toward the center. The points will not meet.
  • Using a rolling pin, roll dough to a 14" circle, pressing seams together to seal. There shoud be a 3" diameter opening in center. Form a slightly raised rim along inner and outer edges of dough.
  • In a bowl, combine cream cheese, powdered sugar, egg yolk and vanilla; whisk until smooth. Spread the cream cheese mixture evenly over dough to within 1/2" of edge. Spoon the pie filling evenly over cream cheese mixture.
  • Using a pizza cutter, cut each remaining dough triangle lengthwise into three strips. Arrange dough strips evenly in spoke-like fashion over filling. Press ends to seal at center and outer edges.
  • Bake 25-30 minutes or until golden brown. Remove from oven; cool 15 minutes.
  • For the glaze:.
  • Combine powdered sugar and milk; mix until smooth. Drizzle evenly over the coffee cake. Cut into wedges and serve warm. Enjoy!
