This is a very simple, easy recipe, and it makes a lot. I make these for Christmas. Enjoy them !!!!!!!!!!!!!!

2 cups all-purpose flour
1 cup chopped walnuts
3 tablespoons ice water
½ teaspoon salt
¾ cup butter
1 teaspoon vanilla extract
3 tablespoons white sugar
2 cups confectioners' sugar

Steps:

  • If using butter it must be cold. Mix butter with flour until it resembles fine crumbs. Add white sugar, nuts, and salt. Mix well, adding ice water till you make stiff dough.
  • Add vanilla extract and knead lightly. Roll out on floured board 1/4 inch thick.
  • Cut into crescent shapes using a whiskey glass coated with flour.
  • Bake at 350 degrees F (180 degrees C) until bottoms are lightly browned. While hot, roll in confectioner's sugar, (I usually use a brown bag or baggie bag to roll the cookies in with the powdered sugar).

This is a recipe I make almost every Christmas. I got it from a coworker about 20 years ago. It's a big hit with those who like almonds.

½ cup salted butter, at room temperature
⅓ cup confectioners' sugar, plus extra for dusting
1 teaspoon vanilla extract
1 teaspoon almond extract
⅛ teaspoon salt
¾ cup all-purpose flour, sifted
2 tablespoons all-purpose flour, sifted
½ cup almonds, finely chopped

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat butter and confectioners' sugar in a bowl using an electric mixer until smooth and creamy. Add vanilla extract, almond extract, and salt; mix briefly to incorporate. Gradually stir 3/4 cup plus 2 tablespoons flour into the creamed butter, add almonds, and mix until dough is just combined.
  • Shape dough into tiny crescents; place on an ungreased baking sheet about 2 inches apart.
  • Bake cookies in preheated oven until edges are golden, about 15 minutes. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Roll cookies in sifted confectioners' sugar when cooled.

1 c. pecans (about 3 oz.)
1 c. confectioners' sugar
1 c. (2 sticks) unsalted butter, cut into small pieces
1 tsp. pure vanilla extract
2 c. all-purpose flour
1/4 tsp. kosher salt
1/8 tsp. ground cinnamon

Steps:

  • In a food processor, pulse the pecans and 3⁄4 cup sugar until the pecans are finely ground. Add the butter and process until smooth. Mix in the vanilla. Add the flour and salt and process until combined. Shape into 2 logs, wrap in plastic, and refrigerate until chilled, at least 11⁄2 hours.
  • Heat oven to 350°F. Line 2 cookie sheets with parchment paper. Cut off a 1⁄4-inch-thick slice of dough (about 11⁄2 teaspoon total) and roll into a 31⁄2-inch log with tapered ends, then bend into a crescent shape and place on the prepared baking sheet.
  • Bake, rotating the sheets halfway through, until the cookies are set and are just barely turning lightly golden brown around the edges, 15 to 18 minutes.
  • In a bowl, combine the cinnamon and remaining 1⁄4 cup confectioners' sugar. Liberally dust the cookies with the cinnamon sugar before serving.

½ cup milk
½ cup butter, softened
⅓ cup white sugar
½ teaspoon salt
1 (.25 ounce) package active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
1 egg
3 ½ cups all-purpose flour
1 egg, beaten

Steps:

  • Warm the milk in a small saucepan until bubbles form at the edges; remove from heat. Mix in the butter, sugar, and salt. Let cool until lukewarm. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine milk and yeast mixtures. Stir in 1 egg. Beat in flour 1 cup at a time until dough pulls together. Turn out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough, and turn it out onto a lightly floured surface. Divide the dough into two equal pieces, and form into rounds. Cover, and let rest 10 minutes.
  • Using a floured rolling pin, roll each dough half into a 12 inch circle. Cut each circle into 6 wedges. Roll each wedge up towards the point. Bend ends inward to form crescents, and place point side down on lightly greased baking sheets. Cover, and let rise until doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  • Brush rolls with beaten egg, and bake for 12 to 15 minutes in the preheated oven, or until golden brown.

These sugary, nutty little nuggets have been a Christmas staple in my house since the late 70s. These tempting cookies were nearly impossible to sneak a pre-holiday nibble of, because even one bite would yield a trail of powdered sugar all over the kitchen, your shirt and your mouth!

4 cups all-purpose flour, scooped
1/4 teaspoon fine salt
2 cups (4 sticks) unsalted butter, at room temperature
2/3 cup granulated sugar
4 teaspoons pure vanilla extract
1 cup pecans, finely chopped
1 1/4 cups powdered sugar

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 325 degrees F. Line 2 baking sheets with parchment.
  • Whisk the flour and salt together in a large bowl and set aside.
  • Combine the butter and granulated sugar in a separate large bowl and beat with an electric mixer on medium-high speed until light and fluffy, 3 to 4 minutes. Beat in 4 teaspoons of water and the vanilla. Slowly mix in the flour mixture and finally, the pecans.
  • Break off tablespoonful pieces of dough, roll each to form a crescent shape and arrange evenly spaced on the prepared baking sheets. (You'll have leftover dough for a second batch.)
  • Bake until slightly golden on the bottoms and edges, 10 to 12 minutes. Watch very carefully--better to undercook than overcook. Let the cookies cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely, about 10 minutes. Repeat with the remaining dough.
  • Put the powdered sugar in a shallow plate. Once cooled, roll each cookie in an ample amount of the sugar.

  • Preheat oven to 325°F. Combine 1 cup all purpose flour, toasted pecans and salt in processor. Using on/off turns, finely chop pecans. Using electric mixer, beat butter, 3/4 cup powdered sugar and vanilla extract in large bowl until well blended. Add pecan mixture and remaining 1 cup flour and mix thoroughly. Divide dough in half. Wrap each half in plastic and refrigerate overnight.
  • Working with 1 tablespoon dough at a time, shape dough into 3-inch-long logs. Pinch ends of logs to taper and turn in slightly, forming crescents. Place cookies on ungreased baking sheets, spacing 1 inch apart (cookies will not spread).

1 (8-ounce) package cream cheese ( softened )
1/4 cup sugar
1 teaspoon vanilla
2 cups all-purpose flour

For the Walnut Filling:
1/2 cup milk
1/2 cup sugar
2 cups ground walnuts
1 tablespoon butter
For the Apricot (or Prune) Filling:
8 ounces dried apricots (or pitted prunes )
1/2 cup water
3/4 cup sugar

Steps:

  • In a large bowl, mix butter, cream cheese, sugar, and vanilla until light and fluffy. Combine flour and baking powder, and add to butter mixture, blending well. Divide dough into 3 pieces, cover with plastic wrap and refrigerate 2 hours or overnight.
  • Heat oven to 350 F. Line baking sheets with parchment paper. Dust work surface with equal parts granulated sugar and confectioners' sugar.
  • Take one ball of dough out of refrigerator and roll it to 1/8-inch thickness. Using a non-serrated pizza or pastry wheel, cut into 3-inch squares.
  • Place a rounded teaspoon of filling at one corner and roll it away from you (no need to tuck in the ends). Place seam side down on the baking sheet and shape into a crescent. Repeat with remaining dough.
  • Bake 20 minutes or until edges are lightly brown. Cool completely and store covered. Dust with confectioners' sugar when ready to serve.
  • Walnut Filling: In a medium saucepan, combine all ingredients. Cook over low heat just until the butter has melted. Cool before using or store covered in the refrigerator and rewarm slightly when ready to use.
  • Apricot or Prune Filling: In a medium saucepan, combine all ingredients. Bring to a boil, lower heat and, stirring occasionally, simmer 8 minutes or until fruit is soft and liquid has been absorbed. Puree and cool. This can be made ahead and stored covered in the refrigerator for up to three months.

This recipe came from one of my earliest pastry assistants, Sandra, when we baked together at the Strathallan Hotel in Rochester, New York. We used to put them on cookie/petits four platters because they froze well. You can also dip them in chocolate, omitting the confectioners' sugar at the end.

Steps:

  • Very finely chop hazelnuts in a blender (make sure it is a very fine chop but not pulverized) set aside.
  • Cream butter and sugar together until light and fluffy.
  • Add the vanilla, mixing to combine.
  • Gradually add the flour and hazelnuts to the wet ingredients, making sure all is thoroughly combined.
  • Cover and chill in the refrigerator 2 hours or overnight.
  • Preheat oven to 350°F.
  • With hands, take about a tbsp of dough and roll into a rope shape.
  • Twist on cookie sheet into a half moon to form a crescent shape.
  • Bake for 10 minutes (do not brown).
  • Let sit on cookie sheet for 5 minutes (cookies will be fragile).
  • CAREFULLY roll in powdered sugar while still warm, then place on cooling rack to cool completely.
  • Once completely cooled, roll in powdered sugar a second time.
  • Store in tightly covered container.

1 cup confectioners' sugar, divided
1 teaspoon vanilla extract
1/2 teaspoon grated lemon zest
2-1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup finely chopped walnuts
2 tablespoons sugar
1 vanilla bean

Steps:

  • In a large bowl, cream butter and 1/2 cup confectioners' sugar until light and fluffy. Beat in vanilla and lemon zest. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in walnuts., Shape tablespoonfuls of dough into crescent shapes. Place 2 in. apart on ungreased baking sheets. Bake at 375° for 10-12 minutes or until edges are lightly browned., Place sugar in a food processor. Split vanilla bean and scrape seeds into food processor. Discard vanilla bean. Pulse mixture until combined. Transfer to a small bowl; stir in remaining confectioners' sugar. Coat warm cookies with sugar mixture. Cool completely on wire racks. Store in an airtight container.

Yield Makes 3 dozen 3-inch cookies

Number Of Ingredients 7

1/2 cup (1 stick) unsalted butter, room temperature
2 tablespoons lard, room temperature
1/2 cup sugar
2 large egg yolks
Zest and juice of 1 lemon
2 cups all-purpose flour, plus more for dusting
6 tablespoons raspberry jam

Steps:

  • Put butter, lard, and sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy. Mix in egg yolks, lemon zest, and lemon juice. Reduce speed to low. Gradually mix in flour. Flatten dough into a disk; wrap in plastic wrap. Refrigerate until firm, at least 1 hour or overnight.
  • Preheat oven to 325 degrees with racks in upper and lower thirds. Let disk of dough stand at room temperature just until soft enough to roll, about 10 minutes. Roll out dough on a lightly floured surface to 1/4 inch thick. Cut out cookies with a 3-inch crescent-shaped cookie cutter. Transfer cut cookies to parchment-lined baking sheets and chill until firm, about 20 minutes. Reroll scraps; cut shapes.
  • Bake, switching positions of sheets and rotating halfway through, until edges turn golden, 12 to 15 minutes. Cool completely on wire racks.
  • Spread flat side of half the cookies with 1 teaspoon raspberry jam each; sandwich with remaining cookies.

3/4 cup granulated sugar
1 pinch salt ((if you use unsalted butter add 1/4 teaspoon salt))
3/4 cup finely chopped fresh almonds, walnuts or pecans
2 -2 1/2 cups all purpose flour ** ((if you are in Italy substitute all purpose with Manitoba Flour))

Steps:

  • Pre-heat oven to 350° In a large bowl beat butter until fluffy, add sugar and beat again until fluffy. Scrape down the sides of the bowl and add nuts, flour ** (add 2 cups to start and 1 tablespoon at a time (up to 8 tablespoons if needed See Note Above!) ) and salt. Beat on low until combined.
  • Bring dough together with your fingers. Break off small pieces and form into a crescent shape. Place on un-greased cookie sheets and bake for approximately 15 minutes . While cookies are still warm roll in icing/powdered sugar or let cool and dust with icing sugar. Enjoy!

Confectioners' sugar

Steps:

  • Preheat oven to 300 degrees F.
  • Spread seeds on a baking sheet. Toast at 300 degrees for 15 minutes until toasted evenly or golden brown.
  • Beat the butter, sugar, and brown sugar in mixing bowl until creamy. Blend in the vanilla, maple syrup and salt. Stir in the flour and benne seeds and mix well. Roll into cylinder, wrap in plastic film and chill for 1 hour or more.
  • Preheat oven to 325 degrees F.
  • Slice into 1/8-inch thick rounds (approximately tablespoon size), roll and shape into crescents and bake cookies on nonstick or parchment-lined baking sheet until light brown, approximately 12 minutes. Cool slightly and roll warm cookies in confectioners' sugar.
