This is my favorite spaghetti sauce recipe. It comes from a freezer cookbook called Once a Month Cooking. This makes alot so plan on freezing about half of the recipe. You can use this sauce on spaghetti, manicotti, veal (or chicken) scallopini, or French bread pizza

1 lb Italian sausage
3/4 cup finely chopped onion
1 (6 ounce) can tomato paste
3 (15 ounce) cans tomato sauce
1 cup water
2 cloves garlic, chopped
2 bay leaves
1 tablespoon sugar
2 teaspoons dried basil
1 teaspoon dried oregano
2 tablespoons chopped fresh parsley
2 teaspoons salt

Steps:

  • Brown the sausage with the onion and drain.
  • Add the rest of the ingredients and simmer, partly covered, for 2 hours.
  • Simmering can be done in a crockpot, if desired.
  • This makes alot of sauce and can be frozen beautifully.

1/2 cup extra-virgin olive oil
6 cloves garlic
1 medium onion, diced
One 28-ounce can whole San Marzano tomatoes
One 28-ounce can crushed tomatoes
One 14-ounce can tomato sauce
2 tablespoons tomato paste
1 teaspoon granulated garlic
1 teaspoon onion powder
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 piece Parmesan rind, optional
1 sprig basil

Steps:

  • Combine the olive oil and garlic cloves in a large saucepan over medium-low heat and cook, stirring occasionally, until the garlic is soft and golden brown, about 6 minutes (do not let the garlic burn). Once the cloves are nicely browned remove them from the pot with a slotted spoon and set aside.
  • Add the onion to the garlic-infused oil and cook until translucent, about 5 minutes. Crush the can of San Marzano tomatoes into the pot with your hands, then fill the can with water and pour it into the sauce. Stir in the crushed tomatoes, tomato sauce, tomato paste, granulated garlic, onion powder and crushed red pepper flakes. Season with salt and pepper.
  • Finely chop the reserved browned garlic cloves and add to the sauce.
  • Stir in the Parmesan rind, if using, and the basil sprig. Bring the sauce to a simmer and cook, stirring occasionally, until it has deepened in color and reduced slightly, about 1 hour 30 minutes (if the sauce begins to scorch, lower the heat). Season to taste with salt and pepper. Discard the Parmesan rind and basil before serving.

Here is my family spaghetti sauce recipe passed down from my grandmother in Italy - it is the best one you will ever cook - don't trust me - try it!

2 TSBP olive oil
1/2 onion (finely chopped)
4 cloves of garlic (minced)
3 28 oz. cans of Crushed Tomatoes
1 Tbsp Salt
4 Tbsp Basil
1 tsp Black pepper
1 Tbsp Sugar (optional)
1/3 cup Grated Parmesan or Romano Cheese

Steps:

  • Heat the olive oil in a 5+ qt. pot over medium heat, and add the onion.
  • Saute for 10 minutes or so, stirring often and being careful not to burn it.
  • Add the chopped or pressed garlic.
  • Heat for another one to two minutes, making sure not to burn the garlic, then add all the tomatoes, salt, black pepper, basil, and sugar. Stirring often, bring to a low boil.
  • Reduce heat to low and simmer for 2-3 hours stirring often.
  • For the first half of the simmer time, do so with the pot uncovered, then cover.
  • Add the cheese, stir in and simmer for an additional 5 minutes or so.
  • This will make the equivalent of 4-5 jars of sauce, and the cost is probably about half (and it tastes way better).

1/3 cup extra virgin olive oil
3 garlic cloves, minced
1 cup kalamata olive, pitted and roughly chopped
1 teaspoon red pepper flakes
3 tablespoons capers, drained
2 (28 ounce) cans crushed tomatoes (I recommend San Marzano)
1/4 cup fresh basil leaf, hand torn
kosher salt & freshly ground black pepper

Steps:

  • Put a large saucepan over medium heat and add the olive oil.
  • Add the garlic and cook for 1 minute.
  • Add the olives, red pepper flakes and capers. Let cook for 2 minutes, stirring often.
  • Toss in the tomatoes with their juices and bring to a low simmer.
  • Stir in the basil and season with salt and pepper. Simmer for 20 minutes. (The longer you let it simmer the better it is!) Remove from heat and let it cool.

This sauce is the best stuff I have ever tasted- there is no comparison in taste between store bought and this! Everyone that I made it for, my hubby, son, sister, mom and dad loved it and I (shamefully) ate 2 bowls full of plain sauce before serving! Just try it. 3/4 lb bulk Italian sausage (I used 1 lb.)
4 medium onions
8 garlic cloves, Minced

Our bolognese is rich and meaty, yet surprisingly light on the tomato. Instead, its base is made from a classic combination of wine and milk. The combination of pork, beef and pancetta adds a complex depth of flavor that using one type of meat couldn't provide. A Parmesan rind is another key ingredient. If you have homemade chicken stock, now is the time to use it. We tried it with boxed broth but weren't thrilled with the results, so we prefer water instead.

3/4 pound ground pork
2 tablespoons olive oil
3 ounces pancetta, cut into 1/8-inch pieces
3 cloves garlic, finely grated
2 large stalks celery, cut into 1/8-inch pieces
1 large carrot, cut into 1/8-inch pieces
1 medium yellow onion, cut into 1/8-inch pieces
1 bay leaf
1/8 teaspoon ground nutmeg
Kosher salt and freshly ground black pepper
One 6-ounce can tomato paste
1 2/3 cups dry white wine
2 cups homemade chicken stock or water
2 cups milk
1 large Parmesan rind
1 pound fresh tagliatelle or pappardelle, or dry rigatoni
Grated Parmesan, for serving

Steps:

  • Combine the beef and pork in a large bowl. "Pull" the ground meat apart with two forks as if you were shredding pulled pork, breaking up the clumps and incorporating the meat without compacting it. Continue to pull the meat apart until thoroughly mixed and no clumps remain.
  • Heat the oil in a Dutch oven or large heavy pot over medium-high heat. Cook the pancetta, stirring occasionally, until the fat has rendered and is golden brown on all sides, 4 to 6 minutes. Transfer the pancetta with a slotted spoon to a large bowl, leaving the fat in the pot.
  • Spread half of the ground meat in an even layer in the pot and cook undisturbed until lightly golden brown, 1 to 2 minutes. Toss and continue to cook, breaking up any clumps with the back of a spoon and scraping up any browned bits from the pot, until the meat is lightly browned on both sides, 1 to 2 minutes more. Transfer the browned meat with a slotted spoon to the bowl with the pancetta, leaving the fat in the pot. Repeat with the remaining ground meat.
  • Reduce the heat to medium. Add the garlic, celery, carrots, onions, bay leaf, nutmeg, 2 teaspoons salt and 1/4 teaspoon pepper and cook, stirring occasionally, until the vegetables are tender but not browned, 8 to 10 minutes. Add the tomato paste and cook, stirring constantly, until very fragrant and brick red, about 2 minutes. Stir in the wine, bring to a boil and cook until it reduces and thickens and no smell of alcohol remains, 6 to 8 minutes. Stir in the stock, milk and browned meat.
  • Bring to a boil, then reduce the heat to low. Add the Parmesan rind and simmer, stirring occasionally, until most of the liquid has evaporated away and the mixture resembles sloppy joes, 2 to 2 1/2 hours. There shouldn't be any rapid bubbles while cooking. Instead, the sauce should release occasional small bubbles. If you have a small burner you should use it; the larger burners even at their lowest setting might cook the sauce too quickly. If the sauce reduces too quickly, add 1/2 cup of stock or water and continue cooking; repeat if necessary. The sauce needs the full 2 to 2 1/2 hour cook time to develop the flavors.
  • Discard the bay leaf and Parmesan rind. Use the back of a spoon to break up any remaining clumps of meat for an even-textured sauce. Season with salt and keep warm.
  • Bring a large pot of salted water to a boil over high heat. Cook the pasta. If using fresh pasta, cook about 3 minutes. If using dry, cook until very al dente, about 2 minutes less than the package directions.
  • Reserve 1 cup of the pasta cooking liquid, then drain the pasta and transfer to the sauce. Increase the heat to medium, bring the sauce to a simmer and cook, tossing the pasta constantly, until the pasta is al dente and the sauce is slightly thickened, adding pasta cooking liquid if necessary, about 2 minutes.
  • Transfer the pasta to a platter and top with grated Parmesan.

  • Cut large tomatoes and put chunks into foil lined baking dish, put grape tomatoes in baking dish followed by onion, garlic, Anaheim pepper pieces and garlic cloves. Sprinkle tomatoes and veggies with olive oil, then sprinkle salt and pepper (you can be liberal with the salt, this is the only time you're salting the sauce.)
  • Roast tomatoes and veggies in the oven for 30 minutes. When the tops of the onions and tomatoes start to brown, remove from oven and let sit for 5 minutes.
  • Gently spoon or dump contents from the roast pan (minus the aluminum foil of course) into a food processor or blender, pour in 1/4 cup skim milk and 1/4 cup reduced fat sour cream. Blend until smooth and creamy (about 3 minutes). If sauce is too thick, add 1/4 cup of water and blend again. Makes about 3 cups sauce. Store in air tight container in the refrigerator for up to a week or freeze in zip lock bags for up to 4 months.

  • Blend half of the whole tomatoes and pass through a sieve to remove the skin and seeds. Then crush the other half using a fork and pass through the sieve as well. You will obtain a fairly watery tomato sauce but it will thicken while cooking.
  • Peel the garlic and cook in the olive oil until it starts to soften. Add the tomato sauce and cook for about 5-10 minutes over a medium heat.
  • Add the uncooked spaghetti to the sauce. Be careful not to try to stir too roughly as the spaghetti may break. Once it softens you can then cook like risotto stirring frequently.
  • The starch from the pasta will thicken the sauce. If it gets too dry add a little water. Cook until the spaghetti is al dente. Add salt to taste and serve immediately with some fresh basil leaves and grated cheese if required.
