QUICK PENNE ALLA VODKA

Quick Penne Alla Vodka image

I believe I found this recipe in our Sunday paper. It is very quick and tastes great; but I do not want to look at it's nutritional analysis. We prefer to use diced mushrooms instead of the pancetta, both because of texture and we usually have them on hand.

Provided by TigerJo

Categories     One Dish Meal

Time 32m

Yield 4 serving(s)

Number Of Ingredients 9

12 ounces penne rigate (we use whole wheat penne or ww fusilli)
3 tablespoons butter, to taste
1/4 cup pancetta, chopped or 1 1/2 cups fresh mushrooms, diced
1/3 cup vodka
1 (26 ounce) jar marinara sauce
1/2 cup heavy cream
kosher salt, to taste
fresh ground pepper, to taste
freshly grated parmesan cheese

Steps:

  • Start a pot of salted water boiling.
  • In a 12" skillet, melt butter over medium heat; when it foams, add pancetta (or mushrooms) and saute for about 6 minutes. Raise the heat to medium-high; add vodka. Cook for 3 minutes, stirring regularly. Meanwhile, put pasta into the pot of boiling water.
  • Add the marinara sauce and cream to the skillet. Simmer sauce gently, stirring occasionally; Add salt/pepper to taste. When pasta is just barely al dente, drain it and add it to the skillet.

PENNE WITH VODKA SAUCE

Penne with Vodka Sauce image

Provided by Giada De Laurentiis

Categories     main-dish

Time 1h25m

Yield 6 cups

Number Of Ingredients 16

1 quart Simple Tomato Sauce, recipe follows, or store-bought marinara sauce, blended until smooth
1 cup vodka
1/2 cup heavy cream, at room temperature
1/2 cup grated Parmesan
1 pound penne
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
Sea salt and freshly ground black pepper
Sea salt and freshly ground black pepper
4 tablespoons unsalted butter, optional

Steps:

  • Simmer the tomato sauce and vodka in a heavy large skillet over low heat until the mixture reduces by 1/4, stirring often, about 20 minutes. Stir the cream into the tomato and vodka sauce. Simmer over low heat until the sauce is heated through. Stir in the Parmesan cheese until melted and well blended.
  • Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain the pasta and transfer it to the pan with the sauce, and toss to coat.
  • In a large casserole pot, heat oil over medium-high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrot and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavor.
  • Pour half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce. If not using all the sauce, allow it to cool completely and then pour 1 to 2 cup portions into plastic freezer bags. Freeze for up to 6 months.

PENNE ALLA VODKA

Penne alla Vodka image

Although this dish, now listed on countless Italian restaurant menus, has a certain novelty, it takes just one bite to discover how successful the combination is. This version comes from Le Sirenuse, in Positano, Italy.

Provided by Food Network

Categories     main-dish

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 11

1/2 stick (4 tablespoons) unsalted butter
1 medium onion, finely chopped
2/3 cup vodka
3/4 cup canned tomato puree
1 cup heavy cream
1/4 pound cooked ham, finely chopped
2 drops hot sauce (recommended: Tabasco), or to taste
1/2 teaspoon salt
1/4 teaspoon finely ground black pepper
1 pound penne
3/4 cup finely grated Parmigiano-Reggiano

Steps:

  • Melt butter in a deep 12-inch heavy skillet over moderately low heat. Add onion and cook, stirring occasionally, until it begins to soften, about 5 minutes. Stir in vodka, bring to a simmer, and simmer for 4 minutes. Add tomato puree and cream and simmer, stirring occasionally, until onion is soft, about 5 minutes. Stir in ham, Tabasco, salt, and pepper. Keep sauce warm over very low heat. Cook pasta in 6- to 8-quart pot of boiling salted water (1 tablespoon salt per every 4 quarts water) until al dente. Reserve 1/2 cup cooking water and drain pasta. Add pasta to sauce and toss with sauce and cheese, adding some of reserved cooking water if pasta seems dry.

PASTA ALLA VODKA

Pasta alla Vodka image

Penne alla vodka was my mom's favorite pasta for special celebrations, but it's simple enough to make with any pasta shape for a weeknight dinner. This creamy, rich version comes together in under 30 minutes.

Provided by Gabriela Rodiles

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 11

Kosher salt and freshly ground black pepper
12 ounces pasta, such as penne
3 tablespoons olive oil or neutral oil
2 cloves garlic, minced
1 small shallot or 1/4 small onion, minced
1/4 teaspoon crushed red pepper
One 15-ounce can tomato sauce or 2 cups jarred marinara sauce
1/4 cup vodka
1/2 cup heavy cream
1/2 cup freshly grated Parmesan, plus more for serving
1/4 cup flat-leaf parsley leaves, chopped, optional

Steps:

  • Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente. Drain.
  • While the pasta is cooking, combine 2 tablespoons of the oil, the garlic, shallots or onions and crushed red pepper in a large skillet and cook over medium-high heat, stirring occasionally, until everything starts to sizzle and begins to soften, 1 to 2 minutes. Stirring constantly, carefully pour in the tomato sauce (it will sizzle) until well combined with the other ingredients. Remove from the heat and add the vodka, 1/2 teaspoon salt and a few grinds of black pepper. Return to the heat and bring to a simmer and cook, stirring occasionally, until the sauce has thickened and reduced slightly, about 5 minutes. Stir in the cream and continue to cook for 1 minute.
  • Add the pasta to the skillet and stir to coat well. Let the pasta cook briefly in the sauce until it thickens a little more and clings nicely to the pasta. Stir in the Parmesan, remaining 1 tablespoon oil, 1/4 teaspoon salt and a few grinds of black pepper. Transfer the pasta to a serving dish and sprinkle with the parsley if using. Serve, passing more Parmesan at the table.

HIGHLY RATED PENNE ALLA VODKA

Highly Rated Penne Alla Vodka image

This recipe was taken from America's Test Kitchen's Best-Ever Recipes with slight modifications. It has become a family favorite and is easy to make. I suggest using Smirnoff Vodka and whole tomatoes without any additional seasonings to avoid unnecessary sugar/salt. For those of you with allergies, I personally use lactose-free whipping cream and Tru Roots ancient grains penne to make it lactose-free and gluten-free. Baked chicken is a great addition to complete the meal!

Categories     Vegetable

Time 30m

Yield 4 , 4 serving(s)

Number Of Ingredients 13

1 (28 ounce) can whole tomatoes (drained and liquid reserved)

1/2 teaspoon salt

2 tablespoons fresh basil (minced)
2 -4 chicken breasts (optional)

Steps:

  • Puree half of the tomatoes in a food processor until smooth (about 20 seconds).
  • Chop the remaining tomatoes into 1/2 inch pieces, discarding the cores. Combined the pureed and diced tomatoes in a liquid measuring cup (about 1 2/3 cups). Add the reserved liquid to equal 2 cups.
  • Bring 4 quarts water to a boil in a large pot for the pasta. Add 1 tablespoon salt and the pasta to the boiling water. Cook, stirring often, until the pasta is almost al dente.

  • Return the saucepan to medium heat and simmer, stirring frequently, until the alcohol flavor has cooked off (8-10 minutes).

  • Reserve 1/4 cup of the pasta cooking water, drain the past, and return it to the pot.
  • Stir in the sauce and toss to combine. Cook over medium heat until the pasta absorbs some of the sauce (about 1-2 minutes). You can thin the sauce with the reserved pasta cooking water if needed.

PASTA ALLA VODKA

Pasta alla vodka image

Sit back and tuck into a big bowl of pasta alla vodka, a creamy tomato pasta with - as you can guess - vodka, which balances out the intense flavours

Provided by Esther Clark

Categories     Dinner

Time 30m

Number Of Ingredients 10

2 tbsp olive oil
1 banana shallot or ½ onion, finely chopped
3 garlic cloves, crushed
¼ tsp chilli flakes
100g tomato purée
5 tbsp vodka
100ml double cream
200g penne or rigatoni pasta
30g grated parmesan or vegetarian alternative, plus extra to serve
small handful of basil leaves, to serve

Steps:

  • Heat the oil in a large frying pan or casserole dish. Add the shallot and a large pinch of salt and gently fry over a low heat for 10 mins or until softened and translucent. Add the garlic and chilli flakes and cook for 30 seconds. Stir through the tomato purée, cook for 2 mins, then stir through the vodka and cook for 3 mins. Quickly stir through the cream to combine, then remove from the heat.
  • Cook the pasta in salted water following pack instructions. Drain and reserve 150ml cooking water. Add roughly 50ml of the water to the tomato sauce, then tip in the pasta and cheese, tossing everything together over a low heat until well coated and glossy (loosen with a splash more of the cooking water if it's a little dry). Season to taste, then serve with a sprinkling of the extra parmesan, a good grinding of black pepper and the basil leaves scattered over the top.
