CREOLE CHICKEN WRAPS

2 tablespoons paprika
2 teaspoons garlic powder
1 teaspoon cayenne pepper
1 teaspoon dried thyme
1 teaspoon chili powder
1 teaspoon ground cumin
Sea salt and freshly ground black pepper
1 cup mayonnaise
1 pound skinless, boneless chicken breasts
Vegetable oil, for the grill
4 pieces flatbread (use store-bought or make Guy's flatbread, recipe follows)
1 cup shredded mozzarella cheese
4 plum tomatoes, sliced
1 Maui onion, thinly sliced
1 small red onion, sliced
8 romaine lettuce leaves
4 cups whole-wheat flour, plus more for dusting
2 teaspoons salt

Steps:

  • Make Guy's Flatbread (optional).
  • Make the rub: Mix all of the ingredients in a small bowl with 2 teaspoons salt and 1 teaspoon black pepper.
  • Prepare the wraps: Whisk the mayonnaise and 1 tablespoon of the rub in a bowl. Cover and refrigerate until ready to use.
  • Preheat a grill or grill pan to medium high. Toss the chicken with 3 tablespoons rub. Oil the grill; grill the chicken until marked, about 6 minutes. Turn and grill until cooked through, about 4 minutes. Transfer to a cutting board.
  • Wipe the grill clean and brush with more oil. Lay the bread on the grill, then brush with the spiced mayonnaise and top with mozzarella. Grill until the bottom is marked, 1 to 2 minutes. Transfer to a cutting board.
  • Cube the chicken and arrange down the center of each piece of bread. Top with the tomatoes, onions and lettuce. Roll up and wrap with parchment paper or foil to seal.
  • Mix the flour and salt in a medium bowl. Using a wooden spoon, slowly stir in 2 cups warm water until a dough forms. Lightly flour a clean board, then turn the dough out onto it and knead until smooth, about 10 minutes. Transfer to a clean bowl and cover with a damp kitchen towel; let rest 20 minutes.
  • Preheat a griddle over medium-high heat. Divide the dough into 8 balls. Using a rolling pin, roll out the balls on a floured board into rough 7-by-8-inch rectangles, about inch thick. Working in batches, cook the dough on the hot griddle until marked on the bottom, 1 to 2 minutes. Flip and grill until marked on the other side. Stack the flatbreads and cover with a kitchen towel up to 20 minutes before serving.

This is a very forgiving recipe - add or reduce seasonings to your taste. I've been making this for over 20 years and ever so often I'm asked - Have you fixed Chicken Creole lately? So much for subtle hints. I serve this over my own yellow rice (just add turmeric to your rice as it cooks) as that is how we prefer it. Some fresh baked French Bread w/garlic butter and large tossed salad. Very hearty meal that will leave guests begging for another Mardi Gras invite.

1/4 cup vegetable oil
1/4 cup all-purpose flour
1 green pepper, chopped
1 medium onion, chopped
2 cups cooked chicken (I stew a whole chicken and tear meat off bones for rustic look)
1 (28 ounce) can stewed tomatoes, undrained and squished
1 (2 ounce) can sliced mushrooms, undrained
2 tablespoons fresh parsley, chopped
2 teaspoons Worcestershire sauce
3 -4 garlic cloves, minced
1 teaspoon soy sauce
1 teaspoon sugar
1/2 teaspoon fresh ground pepper
1/4 teaspoon salt
5 dashes hot sauce
file powder

Steps:

  • Heat vegetable oil in heavy skillet over high heat; stir in 1/4 cup flour.
  • Cook, stirring constantly, about 5 minutes or until the mixture is the color of a copper penny.
  • Reduce heat, add green pepper and onion and cook 10 to 15 minutes or until tender, stirring occasionally.
  • Add chicken, tomatoes, mushrooms, parsley, Worcestershire sauce, garlic, soy sauce, sugar, pepper, salt and hot sauce; cover and simmer 20 minutes.
  • Stir occasionally.
  • Serve creole over hot cooked rice or pasta of choice.
  • Sprinkle with filè powder if desired.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 fresh lemon, halved
2 tablespoons onion powder
2 teaspoons dried thyme
1 teaspoon dried rosemary, ground to a powder with a mortar and pestle

1/4 teaspoon ground black pepper
2 tablespoons minced fresh flat-leaf parsley
1 tablespoon grapeseed oil

1 teaspoon fresh thyme leaves, minced

Steps:

  • Preheat oven to 350 degrees F.
  • Place chicken in a baking pan or baking dish and squeeze lemon juice over. In a small bowl combine onion powder, thyme, ground rosemary, salt, and ground black pepper. Sprinkle over the chicken pieces, cover with foil and bake until the juices run clear and the flesh is fork tender, about 45 minutes to 1 hour. Remove foil during the last 10 to 15 minutes of baking time. Remove from oven and let rest.
  • Make the creole sauce while the chicken is in the oven. Heat grapeseed oil over medium heat in a sauce pot. Saute shallots and garlic until shallots turn translucent, being careful not to burn the garlic. Stir in rosemary and thyme, add crushed tomatoes, season with salt and pepper, cover and let simmer for 15 minutes. Add grape tomatoes, red and yellow bell peppers, diced onion, cayenne, and Creole seasoning, and simmer for 15 minutes more. Remove from heat and whisk in butter.
  • Remove chicken from oven, transfer to a platter and let rest. Spoon sauce over and sprinkle with minced parsley leaves.

1 ½ pounds chicken wings
1 ½ pounds chicken legs
1 tablespoon Creole seasoning (such as Tony Chachere's®), or more to taste

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Preheat the oven to 400 degrees F (200 degrees C).
  • Liberally coat chicken pieces with Creole seasoning.
  • Place 6 to 7 pieces chicken at a time into the hot oil. Cook until skin turns light brown and pieces float, 9 to 12 minutes. Remove from the oven and drain on paper towels before transferring to a baking sheet. Repeat to fry remaining batches.

I found this recipe in a church cookbook from Louisianna (the submitter learned to make it in a cooking class called Creole Delicacies). The recipe didn't have any amounts listed for the ingredients so the amounts are what seemed reasonable to me and should be adjusted to taste.

4 (3/4 lb) Cornish hens or 1 (3 -4 lb) roasting chickens
3/8-1/2 cup cajun butter injectable marinade (1 oz or pound of poultry) or 3/8-1/2 cup creole garlic injectable marinade
2 1/2 tablespoons bayou magic sausage seasoning or 3 tablespoons tony chachere's creole seasoning
2 teaspoons paul prudhomme's poultry seasoning (Poultry Magic)
1/2 teaspoon paprika

Steps:

  • Preheat oven to 325°F.
  • Inject the breasts of the hens with the injection sauce (contamination prevention - always pour a portion for the current use into a separate container so that the injector needle never touches marinade that will go back into the refrigerator after it has touched raw poultry).
  • Coat the inside of each hen with Bayou Magic sausage mix (this ingredient can be a bit hard to come by outside of South LA, but worth the search for those who like things spicy; great on other wild game as well).
  • Sprinkle each hen with poultry magic, then sprinkle with paprika for color.
  • Bake until fully cooked: 50-60 minutes (about 20 minutes per pound).
