Begin met het maken van de biscuit. Mix de eieren, suiker en vanillesuiker schuimig en luchtig. Mix dit ongeveer 10 minuten in een staande mixer op middelhoge stand.
Zeef de bloem en maïzena en voeg toe aan het mengsel. Spatel dit voorzichtig door het mengsel heen, je wilt niet dat alle lucht die je erin geslagen hebt weer verdwijnt. Het beslag is klaar als al het bloem is opgenomen.
Bekleed een bakplaat met bakpapier en strijk hier het biscuitbeslag op uit tot een dikte van 1-2 cm. Bak de biscuit in een voorverwarmde oven van 180 °C (boven- en onderwarmte)oor 20 minuten. Het biscuit is gaar als je zachtjes op het oppervlak drukt en deze terug veert.
Laat de biscuit afkoelen onder een theedoek zodat deze niet uitdroogt. Maak ondertussen de banketbakkersroom.
