1 quart heavy cream
1 vanilla bean, split and scraped
1 cup vanilla sugar, divided
6 large egg yolks
2 quarts hot water

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the cream, vanilla bean and its pulp into a medium saucepan set over medium-high heat and bring to a boil. Remove from the heat, cover and allow to sit for 15 minutes. Remove the vanilla bean and reserve for another use.
  • In a medium bowl, whisk together 1/2 cup sugar and the egg yolks until well blended and it just starts to lighten in color. Add the cream a little at a time, stirring continually. Pour the liquid into 6 (7 to 8-ounce) ramekins. Place the ramekins into a large cake pan or roasting pan. Pour enough hot water into the pan to come halfway up the sides of the ramekins. Bake just until the creme brulee is set, but still trembling in the center, approximately 40 to 45 minutes.
  • Remove the ramekins from the roasting pan and refrigerate for at least 2 hours and up to 3 days. Remove the creme brulee from the refrigerator for at least 30 minutes prior to browning the sugar on top. Divide the remaining 1/2 cup vanilla sugar equally among the 6 dishes and spread evenly on top. Using a torch, melt the sugar and form a crispy top. Allow the creme brulee to sit for at least 5 minutes before serving.

1/2 c heavy whipping cream
2 slice fresh gingerroot
1 stick cinnamon (3 in.)
1 Tbsp grated orange peel
3 Tbsp maple syrup
1/8 tsp ground nutmeg
OATMEAL:
4 c water
2 c old fashioned oats
1/4 c chopped dried apriots
1/4 c dried cherries, chopped
1/2 tsp salt
3 Tbsp brown sugar
2 Tbsp butter, softened
1 c fresh or frozen unsweetened raspberries, thawed
1/4 c sugar

Steps:

  • 1. In a small saucepan, combine the cream, ginger, cinnamon stick and orange peel; bring to a boil. Reduce heat and simmer, covered, for 10 minutes. Remove from heat; strain and discard solids. Stir maple syrup and nutmeg into cream mixture.
  • 2. In a large saucepan, bring 4 cups water to a boil; stir in the oats, apricots, cherries and salt. Reduce heat to medium and cook for 5 minutes, stirring occasionally. Remove from heat; stir in brown sugar and 1/4 cup ginger cream. Let stand, covered, for 2 minutes.
  • 3. Grease four 10-oz. broiler-safe ramekins with butter; place on a baking sheet. Divide raspberries among ramekins. Spoon oatmeal over raspberries, sprinkle evenly with sugar. Broil 4-6 inches from the heat for 7-9 minutes or until sugar is caramelized. Serve with remaining ginger cream.

2 cups quick oats or 2 1/4 cups old fashioned oats, uncooked
1/3 cup granulated sugar
1/4 teaspoon salt
3 1/3 cups nonfat milk
2 eggs
2 teaspoons vanilla extract
1/3 cup brown sugar, firmly packed

Steps:

  • Heat oven to 350 degrees.
  • Lightly oil a 9 x 13 baking dish.
  • In a large bowl, combine dry mix.
  • In a medium mixing bowl, whisk wet mix well.
  • Add wet mix to dry mix, stirring well.
  • Pour mixture into prepared dish.
  • Bake 40- 45 minutes- centre will be jiggly.
  • Remove pan from oven, place pan on a cooling rack.
  • Hand sprinkle brown sugar over top of oatmeal.
  • Return pan to oven, bake until sugar melts, 2- 3 minutes.
  • Remove pan to cooling rack.
  • Set oven to broil.
  • Set pan under broiler 3 inches from heat till sugar bubbles and browns slightly, 1- 2 minutes (watch carefully for burning, turn pan if needed).
  • Remove pan from broiler and spoon mixture into serving bowls.

Steps:

  • Combine cream, ginger, cinnamon, and orange peel in a small saucepan. Bring to a boil over medium-high heat.
  • Reduce heat to low, cover, and allow to simmer for 10 minutes. Remove pan from heat.
  • Remove and discard ginger slices and cinnamon stick.
  • Stir in syrup and nutmeg.
  • Bring water to a boil in a large saucepan over medium heat. Add the oats, dried fruit, and salt. Continue to cook for 5 minutes, stirring frequently.
  • Remove pan from heat. Add in brown sugar, 1/4 cup ginger cream and the butter.
  • Cover pot and let stand two minutes.
  • In the meantime, preheat the broiler.
  • Grease four 10-ounce oven-proof ramekins. Spoon an equal amount of raspberries among the four dishes. Top with the oatmeal.
  • Sprinkle 1 tablespoon of sugar over the top of each ramekin.
  • Broil the ramekins 4-6 inches from the heat for 7-9 minutes, or until the tops are brown and the sugar is caramelized.
  • Drizzle each dish with remaining ginger cream.

PUMPKIN CREME BRULEE

1 1/2 cups heavy cream
1/2 cup whole milk
1/8 teaspoon cinnamon
2 pinches nutmeg
1 pinch ginger
1 pinch ground cloves
4 egg yolks
1/2 cup granulated sugar
1/4 cup canned pumpkin puree
1/3 cup coarse sugar or raw sugar

Steps:

  • Preheat the oven to 300 degrees F.
  • In a medium saucepan, heat the cream, milk, cinnamon, nutmeg, ginger, and cloves over medium heat, stirring occasionally, just until it comes to a boil. Immediately turn off the heat and set aside to infuse at least 15 minutes. In a large bowl, whisk the egg yolks with the granulated sugar. Whisking constantly, gradually pour in the hot cream mixture. Whisk in the pumpkin puree. Pour the mixture into 4 ovenproof ramekins and arrange in a hot water bath. Bake in the center of the oven until almost set but still a bit soft in the center, 30 to 40 minutes. The custard should "shimmy" a bit when you shake the pan; it will firm up more as it cools. Remove from the water bath and let cool 15 minutes. Tightly cover each ramekin with plastic wrap, making sure the plastic does not touch the surface of the custard. Refrigerate at least 2 hours, and up to 24 hours.
  • When ready to serve, preheat a broiler to very hot (or fire up your kitchen torch). Uncover the chilled custards. Pour as much coarse sugar as will fit onto the top of 1 of the custards. Pour off the remaining sugar onto the next custard. Repeat until all the custards are coated. Discard any remaining sugar. Place the ramekins on a baking sheet or in a roasting pan and broil until the sugar is melted and well browned, 1 to 2 minutes. Let cool 1 minute before serving.

6 egg yolks
6 tablespoons white sugar, divided
1/2 teaspoon vanilla extract
2 1/2 cups heavy cream
2 tablespoons brown sugar

Steps:

  • 1 Preheat oven to 300ºF. In a large bowl, whisk together egg yolks and sugar until the sugar has dissolved and the mixture is thick and pale yellow. Add cream and vanilla, and continue to whisk until well blended. Strain into a large bowl, skimming off any foam or bubbles. 2 Place ramekins in a water bath (large pan filled with 1 or 2 inches of hot water) and bake until set around the edges, but still loose in the center, about 50 to 60 minutes. Remove from oven and leave in the water bath until cooled. 3 Heat up oatmeal put in bowl. Take ramekin of cooked custard mix up till smooth place over top of oatmeal. Sprinkle 1 tablespoon of sugar over top and torch until it is brown. Optional - Garnish with berries and mint.

GINGER CREME BRULEE

8 egg yolks
4 eggs
6 ounces granulated or brown sugar
1 quart heavy cream
1/2 teaspoon salt
1 teaspoon vanilla extract
1 1/2 tablespoons fresh grated ginger and any juice
Mint leaves, for garnish

Steps:

  • Mix egg yolks, eggs and 6 ounces of sugar until combined. Heat the cream to scalding, add ginger and gradually pour into egg mixture, stirring constantly. Add vanilla and salt.
  • Using creme brulee molds or another baking ramekin evenly distribute mixture. Place in a shallow baking dish and fill dish half way up with water, creating a water bath.
  • Bake at 350 degrees F for approximately 30 minutes or until set. Sprinkle granulated sugar on top of molds after they have cooled. Place molds under broiler to caramelize sugar. Garnish with mint leaves.

1 extra-large egg
4 extra-large egg yolks
1/2 cup sugar, plus 1 tablespoon for each serving
3 cups heavy cream
1 teaspoon pure vanilla extract
1 tablespoon orange liqueur (recommended: Grand Marnier)

Steps:

  • Preheat the oven to 300 degrees F.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the egg, egg yolks, and 1/2 cup of the sugar together on low speed until just combined. Meanwhile, scald the cream in a small saucepan until it's very hot to the touch but not boiled. With the mixer on low speed, slowly add the cream to the eggs. Add the vanilla and orange liqueur and pour into 6 to 8-ounce ramekins until almost full.
  • Place the ramekins in a baking pan and carefully pour boiling water into the pan to come halfway up the sides of the ramekins. Bake for 35 to 40 minutes, until the custards are set when gently shaken. Remove the custards from the water bath, cool to room temperature, and refrigerate until firm.
  • To serve, spread 1 tablespoon of sugar evenly on the top of each ramekin and heat with a kitchen blowtorch until the sugar carmelizes evenly. Allow to sit at room temperature for a minute until the caramelized sugar hardens.

  • Preheat oven to 325 degrees. Lightly butter six small ramekins or brûlée dishes. Mix oatmeal, brown sugar and 1 teaspoon zest together. Divide among ramekins; smooth surface of mixture.

  • Bake 40 to 50 minutes, until custards jiggle slightly when dish is moved and center is slightly runny; be careful not to overcook. Remove from water bath and cool. Refrigerate at least 2 hours or overnight.
  • When ready to serve, evenly sprinkle each ramekin with about 1 tablespoon granulated sugar. Using a kitchen torch or under very hot broiler, carefully caramelize sugar until amber brown. Serve immediately or chill again, uncovered, up to 4 hours.

12 teaspoons sugar

Steps:

  • Make custard:
  • Preheat oven to 325°F. Place three 4-inch-diameter fluted flan dishes* in each of two 13 x 9 x 2-inch baking pans or place six 3/4-cup ramekins in 1 pan. Mix cream, sugar and ginger in heavy medium saucepan. Using small sharp knife, scrape seeds from vanilla bean. Add seeds and bean to saucepan. Stir over medium heat until sugar dissolves and mixture comes to simmer. Cover pan, reduce heat to very low and simmer gently 10 minutes to infuse flavors. Strain into large measuring cup.
  • Whisk yolks in medium bowl until well blended. Gradually whisk in hot cream mixture just to blend. Return custard to measuring cup; divide among dishes. Pour enough hot water into pans to come halfway up sides of dishes. Carefully transfer pans to oven.
  • Bake custards until almost set in center when pans are gently shaken, about 30 minutes for fluted flan dishes and 35 minutes for ramekins. Using metal spatula, transfer custards in dishes to work surface; cool 30 minutes. Chill at least 3 hours and up to 2 days.
  • Make Crème Brûlée:
  • Sprinkle 2 teaspoons sugar evenly over each custard. Working with 1 custard at a time, hold blowtorch** so that flame is 2 inches above surface. Direct flame so that sugar melts and browns, about 2 minutes.
  • Refrigerate until custards are firm again but topping is still brittle, at least 2 hours but no longer than 4 hours so that topping doesn't soften. Garnish crème brûlées with fruit.
  • *Four-inch-diameter fluted clear glass flan dishes are available at cookware stores and many hardware stores. They are about 2/3 inch deep and hold about 1/2 cup liquid.

Another addition for my Special Breakfast series! Oatmeal gets all dolled up. Feel free to choose diffrent fruits if you prefer other kinds. If you are lucky enough to have one of those blow torch thingies for the brulee, have at it. I must use the broiler in the oven, however. It keeps me humble, I guess.

1 cup heavy cream
4 slices fresh ginger (quarter size)
1 cinnamon stick
2 slices orange peel (3 inches each)
1/3 cup maple syrup
1/4 teaspoon nutmeg
4 cups water
1/2 teaspoon salt
2 cups old fashioned oats
1/4 cup dried cherries (pitted)
1/4 cup dried apricot, chopped
3 tablespoons brown sugar
2 tablespoons unsalted butter, softened
2 cups raspberries
4 tablespoons superfine sugar

Steps:

  • Bring cream, ginger, cinnamon and orange peel to simmer, cover, reduce heat and simmer for 10 minutes.
  • Remove from heat and stir in syrup and nutmeg and cover.
  • Bring water and salt to a boil.
  • Stir in oats and cook 10 minutes over medium low heat, stirring occasionally.
  • Add dried fruit, brown sugar and 1/4 cup of the Ginger-Maple Cream.
  • Cook 7 minutes longer.
  • Remove from heat and cover.
  • Let stand for 3 minutes.
  • Preheat broiler.
  • Strain Ginger-Maple Cream and discard solids.
  • Butter 4 1-cup ovensafe dishes.
  • Place 5-6 raspberries on the bottom of each dish.
  • Divide oatmeal evenly over raspberries, smoothing the tops.
  • Sprinkle each dish with 1 tbs of superfine sugar.
  • Place under broiler and cook 3-4 minutes or until sugar carmelizes.
  • Serve with remaining Ginger-Maple Cream.
