- In a medium saucepan over medium high heat, combine the cream, wine, flour, salt and parsley. Stir all together bring to a boil.
- Reduce heat to low and simmer until thickened.

CREAMY TAHINI SAUCE, THREE WAYS

Steps:
- Make the Creamy Tahini Sauce:
- Sprinkle garlic with salt on a cutting board, then use the side of a knife to smash into a paste. Transfer to a large bowl. Add tahini and 1 cup warm water. Whisk until smooth. Add parsley, lemon juice, oil, and cayenne and whisk to combine.
- For the Creamy Tahini Dip with Avocado:
- Combine avocado, yogurt, lemon juice, salt, cumin, and 1/2 cup Creamy Tahini Sauce in a large bowl, then mash with a fork until smooth. For a smoother texture, purée in a blender.
- For the Creamy Tahini Dressing with Cucumber and Dill:
- Purée cucumber, buttermilk, sour cream, lemon juice, salt, and 1/2 cup Creamy Tahini Sauce in a blender until smooth. Add dill and pulse a few more times to combine.
- Do Ahead
- Creamy Tahini Sauce can be stored in an airtight container and chilled for up to 7 days.
EASY CREAM SAUCE
Steps:
- Gather the ingredients.
- Heat the milk in a saucepan over medium heat until bubbles begin to appear around the edge. Keep warm.
- Melt the butter in a separate saucepan over medium-low heat.
- Add the flour and stir until the mixture is well blended to make a roux . Continue cooking, stirring, for 2 minutes. Make sure it does not turn brown.
- Gradually stir the hot milk into the flour and butter mixture. Cook over medium heat, stirring constantly, until the sauce begins to boil and thickens. Simmer, frequently stirring, over very low heat for 5 minutes.
- Stir in the cream and wine, if using. Season with salt and pepper and add a little nutmeg if desired. Serve immediately and enjoy.

VEGETABLE CREAM SAUCE
Steps:
- Stir in soup and milk in a heavy medium saucepan over medium heat to blend. Bring to a simmer, and then gradually whisk in cheese; stir until melted. Stir in chives and garlic. Season, to taste, with salt and pepper. Serve over broccoli, asparagus, cauliflower, potatoes, or vegetables of your choice.
CREME VICHYSSOISE GLACEE
Steps:
- Wash and trim the leeks and slice the white parts very finely. Melt the butter in a saucepan large enough to contain all the ingredients and stew the leeks until soft. Add the potatoes and stir to mix. Pour in the stock and season with salt and pepper. Bring to a boil, then simmer 40 minutes.
- Allow to cool a little, then whizz the whole lot in a blender until smooth. Leave to get cold, and stir in the cream. Check the seasoning, adding some pepper. Chill thoroughly for 6 hours to overnight. Serve in nice little bowls with snipped chives sprinkled on top.
EASY CREAM SAUCE
This sauce is so quick and delicious! It can accompany any meat, fish or veggie medley! It's so rich, noone would know it was so cheap.

- In a large pan, melt all of the butter.
- Add the cream cheese and the chicken broth.
- While stirring the sauce, bring sauce to a boil for a minute.
- Don't burn the sauce!
- Simmer for 2-5 more minutes.
- Serve atop any meal; it's delicious!

- Cook linguine according to package directions. Meanwhile, in a small bowl, combine cornstarch and milk until smooth; set aside., In a large nonstick skillet, saute onion and garlic in oil until tender. Stir in the shrimp, scallops and wine or broth. Cook, uncovered, until shrimp turn pink, 3-5 minutes., Stir milk mixture and add to skillet. Bring to a boil over medium heat; cook and stir until thickened, 1-2 minutes. Stir in 1/4 cup Parmesan cheese, parsley, basil, salt and pepper. Drain linguine; top with seafood mixture. Sprinkle with remaining 1/4 cup Parmesan cheese.

WHITE CREAM SAUCE FOR PASTA
This recipe was taught to me by a friend. A very simplistic recipe which gives you many options on what to serve it with. I've had this with ziti, and prefer it with the smooth kind rather than the ridged kind. But any Macaroni product will do.

Steps:
- Melt butter over low heat in wide sauce pan, or deep skillet.
- Stir in flour and mix with a wooden spoon until blended.
- Slowly add milk to pan, careful not to burn it.
- When milk is fully intergrated into rue, increase heat and reduce for 10 minutes, stir often to prevent burn.
- If sauce too thick, add more milk.
- If too thin, add more flour.
- Add salt and pepper to taste.
- Pour over warmed buttered pasta, and cover with cheese.
- Serve immediatlly.
