ONE-PAN ROTINI WITH TOMATO CREAM SAUCE



One-Pan Rotini with Tomato Cream Sauce image

I like to make one-pan recipes and this one was proclaimed a winner by my family. Bonus: It's also easy to clean up. Serve with crusty bread to dip into the sauce. -Angela Lively, Conroe, Texas

1 pound lean ground beef (90% lean)
1 medium onion, chopped
2 garlic cloves, minced
1 teaspoon Italian seasoning
1/2 teaspoon pepper
1/4 teaspoon salt
2 cups beef stock
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained
2 cups uncooked spiral pasta
1 cup frozen peas
1 cup heavy whipping cream
1/2 cup grated Parmesan cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 5-10 minutes; crumble beef; drain. Add garlic and seasonings; cook 1 minute longer. Add the stock and tomatoes; bring to a boil. Add pasta and peas; reduce heat. Simmer, covered, until pasta is tender, 10-12 minutes. , Gradually stir in cream and cheese; heat through (do not allow to boil).

Number Of Ingredients 18

1/4 cup extra-virgin olive oil
1/4 teaspoon red pepper flakes
1 large onion, diced
6 cloves garlic, minced
1/4 cup Italian tomato paste
Four 28-ounce cans whole peeled tomatoes, with liquid
2 teaspoons Kosher salt plus to taste
Freshly ground black pepper
1/2 pound ground beef
1/2 pound ground veal
1/2 pound ground pork
1 tablespoon dried savory or rosemary, crumbled into small pieces
1 tablespoon dried thyme
1 tablespoon dried oregano
1 tablespoon fennel seeds, cracked
2 bay leaves
Rind of Parmesan, about 2- to 4-inches long (optional)
1/2 to 1 cup grated Parmesan

Steps:

  • In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the pepper flakes and cook for 15 seconds. Add the onion and cook, stirring occasionally, until golden brown, about 15 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the tomato paste and cook, stirring constantly, for 1 minute. Add the tomatoes one at a time, crushing them by hand as you go. Season with 1 teaspoon salt and pepper to taste. Simmer the sauce over low heat, covered. Heat a large skillet over medium-high heat. Add the beef, pork, veal, savory, thyme, oregano, and fennel seeds. Season with 1 teaspoon salt and pepper. Break up the meat with a wooden spoon, and cook until it loses its raw color, about 7 minutes. Add the meat to the sauce, holding back any excess fat. Add the rind of the Parmesan, if using. Simmer the sauce, covered, over low heat, for 1 1/2 hours. (If the sauce gets too thick adjust the consistency with water.) Taste and season with salt and pepper to taste. Just before serving, remove the Parmesan rind and add the grated cheese. Cook's Note: 3 to 4 cups of this sauce will dress 1 pound of pasta, like spaghetti or rigatoni. It is also perfect for lasagna. This sauce freezes very well.

This creamy pasta dish is made with a ground beef and tomato based sauce with milk. Use penne pasta or ziti in this easy, delicious dish.

1 tablespoon extra virgin olive oil
1/2 cup chopped onion
1 small carrot (peeled and finely shredded)
1 rib celery (finely chopped)
1/4 cup water
8 ounces lean ground beef (or more for a meatier sauce)
1 small clove garlic (crushed and minced)
1/4 cup dry white wine
1 tablespoon all-purpose flour
1/3 cup tomato paste
1 1/2 cups milk, divided
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried leaf oregano, crumbled
1/2 teaspoon dried leaf basil
12 ounces penne pasta (or ziti)
3 tablespoons grated Parmesan cheese (plus more for serving)

Steps:

  • In a large skillet or saute pan, heat oil over medium heat. Add the onion and cook, frequently stirring, until softened. Stir in shredded carrot, chopped celery, and 1/4 cup water; cook until vegetables are tender and liquid has evaporated, about 5 minutes longer.
  • Add the ground beef to the vegetables and cook ​ until it has browned and is no longer pink, or about 4 minutes. Add garlic and cook for 1 minute longer, stirring constantly.
  • Add the wine and cook until the liquid has evaporated about 5 minutes.
  • Stir in the flour and cook, stirring, for 2 minutes. Add the tomato paste, 1/2 cup of milk, salt, pepper, and oregano. Reduce heat and simmer, frequently stirring, until the milk has been absorbed.
  • Continue cooking until the sauce has thickened, gradually adding the remaining 1 cup of milk. Cook over low heat for about 15 to 20 minutes longer.
  • Meanwhile, cook penne pasta in a large pot of boiling salted water following the package directions until just tender; drain well.
  • Transfer sauce to a large serving bowl. Add the penne pasta and Parmesan cheese; toss penne pasta gently. Sprinkle some extra Parmesan cheese over the bowl of pasta and serve more at the table.

This is not spicy! For a main dish I have added the Imitation crabmeat to this before and served over linguini. You can add any kind of seafood or even chicken and serve over pasta. Or for a side dish you can serve without meat and mix the sauce over the pasta. Try adding a variety of veggies! Possibilites are plenty!

3 tablespoons olive oil
1/2 cup diced onion
3 teaspoons garlic, minced

salt and pepper
1/4 cup white wine
1 can tomato sauce (1 cup)
2 cups half-and-half
1/2 cup parmesan cheese
1/2-1 cup frozen green pea (cooked and drained)

Steps:

  • Saute onions and garlic and seasonings (savory, rosemary, salt, pepper, bay leaf, Blackened Redfish Seas) in butter and olive oil.
  • Add wine and cook 1 minute.
  • Add tomato sauce and half and half; simmer for 5-7 mintes, stirring frequently.
  • Add peas and Parmesan, simmer until cheese is melted, 3-5 minutes.
  • Serve tossed with your favorite pasta.

1 (28-ounce) can whole peeled tomatoes
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
1 tablespoon minced garlic
Kosher salt and freshly ground pepper
1/4 cup heavy cream

Steps:

  • Pulse tomatoes with their juices in a food processor until coarsely chopped. Melt butter and oil in a saucepan over medium heat. Add garlic and cook until fragrant, about 1 minute. Add tomatoes and season with kosher salt and freshly ground pepper.
  • Bring mixture to a boil, then reduce heat to medium-low, partially cover, and simmer until thickened, stirring occasionally, about 25 minutes. Stir in 1/4 cup heavy cream; simmer, partially covered, 5 minutes more.

5 ounces mozzarella cheese, shredded

  • Add garlic and mushrooms, and cook, stirring frequently, until mushrooms soften (5 minutes).
  • Drain off fat.
  • Stir in undrained tomatoes, cheese, Italian seasoning, sugar, salt, and pepper.
  • Bring to a boil.
  • Reduce heat to low, and simmer, uncovered, stirring occasionally, until most of the liquid has evaporated (about 40 minutes).
  • Cook pasta according to package directions (15 minutes).
  • Drain and keep warm.
  • Gradually stir the whipping cream into the sauce.
  • Arrange the pasta on plates or on a serving platter.
  • Spoon sauce over pasta.
  • If desired, garnish with rosemary.

1 lb ground turkey, cooked and drained

1 tablespoon basil
1 tablespoon dried parsley

  • Cook pasta according to package directions. Don't forget to add about 1 tablespoon salt to the boiling water before you add the past in. This helps flavor the bland pasta. Drain pasta. Do not rinse.
  • Add drained pasta into the pot with the creamy ground beef mixture. Stir together. Turn off the heat and let it sit for a few minutes so the sauce can thicken.
