ONE-PAN ROTINI WITH TOMATO CREAM SAUCE

Steps:
- In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 5-10 minutes; crumble beef; drain. Add garlic and seasonings; cook 1 minute longer. Add the stock and tomatoes; bring to a boil. Add pasta and peas; reduce heat. Simmer, covered, until pasta is tender, 10-12 minutes. , Gradually stir in cream and cheese; heat through (do not allow to boil).

MEAT AND TOMATO SAUCE

Steps:
- In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the pepper flakes and cook for 15 seconds. Add the onion and cook, stirring occasionally, until golden brown, about 15 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the tomato paste and cook, stirring constantly, for 1 minute. Add the tomatoes one at a time, crushing them by hand as you go. Season with 1 teaspoon salt and pepper to taste. Simmer the sauce over low heat, covered. Heat a large skillet over medium-high heat. Add the beef, pork, veal, savory, thyme, oregano, and fennel seeds. Season with 1 teaspoon salt and pepper. Break up the meat with a wooden spoon, and cook until it loses its raw color, about 7 minutes. Add the meat to the sauce, holding back any excess fat. Add the rind of the Parmesan, if using. Simmer the sauce, covered, over low heat, for 1 1/2 hours. (If the sauce gets too thick adjust the consistency with water.) Taste and season with salt and pepper to taste. Just before serving, remove the Parmesan rind and add the grated cheese. Cook's Note: 3 to 4 cups of this sauce will dress 1 pound of pasta, like spaghetti or rigatoni. It is also perfect for lasagna. This sauce freezes very well.

PENNE PASTA WITH CREAMY TOMATO AND MEAT SAUCE
Steps:
- In a large skillet or saute pan, heat oil over medium heat. Add the onion and cook, frequently stirring, until softened. Stir in shredded carrot, chopped celery, and 1/4 cup water; cook until vegetables are tender and liquid has evaporated, about 5 minutes longer.
- Add the ground beef to the vegetables and cook until it has browned and is no longer pink, or about 4 minutes. Add garlic and cook for 1 minute longer, stirring constantly.
- Add the wine and cook until the liquid has evaporated about 5 minutes.
- Stir in the flour and cook, stirring, for 2 minutes. Add the tomato paste, 1/2 cup of milk, salt, pepper, and oregano. Reduce heat and simmer, frequently stirring, until the milk has been absorbed.
- Continue cooking until the sauce has thickened, gradually adding the remaining 1 cup of milk. Cook over low heat for about 15 to 20 minutes longer.
- Meanwhile, cook penne pasta in a large pot of boiling salted water following the package directions until just tender; drain well.
- Transfer sauce to a large serving bowl. Add the penne pasta and Parmesan cheese; toss penne pasta gently. Sprinkle some extra Parmesan cheese over the bowl of pasta and serve more at the table.

STEPH'S CREAMY TOMATO PARMESAN SAUCE
This is not spicy! For a main dish I have added the Imitation crabmeat to this before and served over linguini. You can add any kind of seafood or even chicken and serve over pasta. Or for a side dish you can serve without meat and mix the sauce over the pasta. Try adding a variety of veggies! Possibilites are plenty!

- Pulse tomatoes with their juices in a food processor until coarsely chopped. Melt butter and oil in a saucepan over medium heat. Add garlic and cook until fragrant, about 1 minute. Add tomatoes and season with kosher salt and freshly ground pepper.

- In a large saucepan, over medium heat, cook beef, red pepper flakes, and onion until the meat is browned and onions soften.
- Add garlic and mushrooms, and cook, stirring frequently, until mushrooms soften (5 minutes).
- Drain off fat.
- Stir in undrained tomatoes, cheese, Italian seasoning, sugar, salt, and pepper.
- Bring to a boil.

- Melt butter/margarine over medium heat until melted.
- Sautee chopped onion and garlic over medium for 3-4 minutes until soft.
- Add ground turkey and cook for a few minutes to incorporate flavor.
- Add can of spaghetti sauce, sugar, and all dried seasonings (amounts to your taste, can also use italian seasoning blend).
- Add chive and onion cream cheese in chunks and stir until blended.
- Cook on low until hot. Serve over hot pasta or use in lasagna.

- In a pot, over medium high heat, add ground beef, salt, Italian seasoning, and garlic. Cook until no longer pink, crumbling the meat as you cook it. Drain.
- Add the diced tomatoes, heavy cream, salt, dried basil, and sugar. Stir together and bring to a boil. Once boiling, reduce heat to low and let simmer for about 10 minutes while the pasta cooks. * I dump the 2 cans of diced tomatoes into my blender or processor and pulse it a few times. My kids don't like chunks of tomatoes so this helps chop them up more. I actually prefer it this way too.
- Cook pasta according to package directions. Don't forget to add about 1 tablespoon salt to the boiling water before you add the past in. This helps flavor the bland pasta. Drain pasta. Do not rinse.
- Add drained pasta into the pot with the creamy ground beef mixture. Stir together. Turn off the heat and let it sit for a few minutes so the sauce can thicken.
