CREAMY TOMATO BASIL FETTUCCINE
Creamy tomato basil fettuccine is a rich saucy dish, perfect for pasta lovers!

Steps:
- Cook fettuccine according to package's instructions. Drain and set aside.
- In a large sauce pan melt butter over medium heat. Add garlic and stir 1-2 minutes until fragrant. Add flour and stir until mixture clumps together. Gradually whisk in heavy cream (or half & half).
- Add tomato sauce and basil and stir to combine. Increase heat and bring to a boil, then reduce to a simmer and add cheese. Allow to simmer about 10 minutes or until cheese is completely melted and mixture is smooth.
- Add salt to sauce and stir to combine. Taste and add a little more salt if desired. Serve sauce over cooked fettuccine noodles. Top with additional parmesan cheese and basil if desired. Enjoy!

CREAMY SHRIMP ALFREDO WITH TOMATO AND BASIL
Steps:
- Heat olive oil in deep 12-inch skillet over medium-high heat and cook onion, celery, red pepper and garlic 5 minutes or until vegetables are tender. Stir in broth and bring to a boil over high heat. Reduce heat to low and simmer 5 minutes. Stir in sauces. Simmer, stirring occasionally, 15 minutes. Stir in shrimp and cook, stirring occasionally, 3 minutes or until shrimp turn pink. Stir in hot pepper sauce. Serve shrimp mixture over hot fettuccine.

Steps:
- Heat oil in heavy large pot over medium-high heat.
- Add shallots and garlic and saute until beginning to soften, about 3 minutes.
- Add sausages and saute until no longer pink, breaking up with back of fork, about 5 minutes.
- Add cream; simmer 5 minutes.
- Add tomatoes with juices, sage and crushed red pepper.
- Simmer until sauce thickens, stirring occasionally, about 15 minutes.
- Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite.
- Drain pasta, reserving 1/2 cup cooking liquid.
- Return pasta to same pot; add sauce.
- Toss over medium heat until sauce is combined with pasta, adding reserved liquid in 1/4 cupfuls if mixture is dry.
- Season with salt and pepper.
- Transfer to bowl.
- Sprinkle with cheese.
- Serve.

- Cook fettuccine according to package directions. Meanwhile, in a large nonstick skillet, saute onion and red pepper flakes in butter until onion is tender. Add tomatoes and salt; cook and stir over medium-high heat until most of the liquid is evaporated. , Remove from the heat; let stand for 1 minute. Gradually whisk in milk. Drain fettuccine and place in a large bowl. Add the basil, Parmesan cheese and tomato mixture; toss to coat.

- Cut each tomato into slices (do not peel). With your fingers, remove seeds and discard. Dice the remaining tomato slice. Place the tomatoes in a sieve over a bowl, sprinkle with salt and let drain for at least 30 minutes. (This step can be done well ahead of time.)
- While the pasta water is heating up – in a large cast-iron skillet, heat the butter and sprinkle with flour. Add the cream and bring to a boil. Reduce heat slightly and let simmer until the cream is reduced by about 1/3rd or until it coats the back of spoon dipped into the mixture. Season with salt and pepper. Then add garlic and basil and set aside.
- Add the fettuccine to the boiling water and cook until just tender. Drain and add to the cream mixture in the skillet.
