1 can (14.5 oz.) fat-free reduced-sodium beef broth
1 can (8 oz.) mushroom pieces and stems, undrained
4 cups egg noodles, uncooked
1 container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Cook meat and onions in hot oil in large skillet on medium-high heat 10 min. or until meat is evenly browned, stirring frequently.
  • Add broth, mushrooms and noodles; stir. Bring to boil; cover. Simmer on medium-low heat 10 to 12 min. or until noodles are tender.
  • Stir in sour cream; cook 2 min. or until heated through, stirring occasionally.

500 g | 1lbs egg Fettuccine ((dry weight))
4 tablespoons butter, (divided)
1 onion, (chopped)
4 cloves garlic, (crushed or minced)
1 pound (500 grams) sliced mushrooms
24 ounces (700 grams) lean beef fillet steaks, seasoned with salt and pepper and cubed into 1 1/2-inch pieces
2 teaspoons dijon mustard
1 teaspoon paprika, ((smoky or mild))
1/3 cup dry white wine, ((or more if you like it stronger))
2 cups beef broth (or stock), ((or 2 cups water mixed with 1 tablespoon vegetable stock powder))
2 tablespoons flour
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1 cup light sour cream at room temperature, ((or reduced fat cooking cream))
Freshly chopped parsley to garnish

Steps:

  • Boil the pasta in a large pot of boiling salted water according to packet instructions until al dente. Remove; strain and set aside.
  • While pasta is boiling, melt 2 tablespoons of butter in a large non-stick frying pan over medium heat. Sear the steak in single layer batches until browned; transfer to a separate plate and set aside until all batches are done.
  • Melt the remaining butter in the pan; add the onions and sauté until transparent, then add the garlic and fry until just fragrant (about 30 seconds). Add the mushrooms and cook until the mushrooms are tender and cooked through (about 4 minutes). Mix in the mustard and paprika.
  • Add the wine and cook for about 3 minutes while stirring occasionally to mix all of the flavours through, deglazing the pan while scraping any browned bits off the bottom of the pan with your spoon. Allow wine to reduce down to about half the amount (about 3 minutes).
  • While wine is reducing down, grab a small jug and whisk together the beef broth (or stock), flour and Worcestershire sauce until smooth. Pour the beef broth mixture into the pan, mix well and bring to a simmer for about 5 minutes, stirring occasionally until the sauce begins to thicken.
  • Return the beef and any juices from the plate to the pan and season with any extra salt and pepper (if desired). Reduce heat down to low and mix in sour cream. Heat until hot (do not boil).
  • Add the pasta or noodles into the pan and garnish with parsley.

2 (2 pound) beef chuck roast, cut into 1/2-inch thick strips
½ cup red wine
1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon extra-virgin olive oil
2 tablespoons butter
1 large onion, diced

1 cup sliced mushrooms
¼ cup butter
¼ cup all-purpose flour
1 ⅓ cups beef stock
1 tablespoon Worcestershire sauce

Steps:

  • Place the beef into a large bowl. Stir in the red wine, salt, and black pepper. Marinate for 10 minutes, then remove the beef and pat dry with a paper towel. Reserve the remaining marinade.
  • Heat the olive oil in a large skillet over medium heat. Stir in the beef; cook and stir until browned, then transfer to a plate, 5 to 7 minutes. Drain any remaining grease from the skillet. 1 1/2 lbs pork tenderloin, sliced into 1/4 inch strips
1 lb white button mushrooms, sliced
1 medium white onion, sliced thin
1 medium red onion, sliced thin
1 tablespoon whole grain mustard
1 cup dry white wine
1/2 cup heavy cream
1/2 cup creme fraiche
2 tablespoons butter
2 tablespoons oil
salt and black pepper, to taste
3 tablespoons lemon juice (optional)
1 tablespoon lime juice (optional)
1 tablespoon honey (optional)
2 teaspoons dry mustard (optional)

Steps:

  • Optional Marinade:.
  • In a shallow non metal dish, mix together lemon juice, lime juice, honey, and dry mustard. Add pork strips and mix to coat. Cover and refrigerate 1-8 hours. Remove pork and discard remaining marinade.
  • Melt the butter and oil in heavy frying pan,(I use my dutch oven).
  • Add onions and cook to soften for 3 - 4 minutes.
  • Remove the onions with a slotted spoon to a small bowl.
  • Increase pan heat to medium high, when hot add pork, stirring continuously until browned,(If the pork seems too crowded in your frying pan,you can fry the pork in 2 batches and just add it back to the pan when done browning).
  • Add mushrooms, onions, mustard, and wine. Bring to a vigorous simmer.
  • Add the creme fraiche and season with a little salt and freshly ground black pepper.
  • Bring to vigorous simmer and cook until reduced to a creamy consistancy.
  • Remove from heat and stir in heavy cream.
  • Serve over a bed of rice or noodles.

1 pound egg noodles (cooked, buttered and seasoned)
2 pounds of cubed chuck roast
1/2 cup of flour
1/4 tablespoon of garlic powder
1/4 teaspoon of nutmeg
2 tablespoons of extra virgin olive oil
1 sliced onion
1/4 cup of brandy
1/4 cup of dry red wine
3 cups of beef broth
1 tablespoon of butter
1 cup of sliced mushroom
3/4 cups of sour cream
A pinch of salt
A pinch of black pepper
3 tablespoons of fresh chives

Steps:

  • In a large mixing bowl, combine 1/3 cup flour, garlic powder, nutmeg, 2 teaspoons salt, and 1/4 teaspoon black pepper. Add beef patted dry with paper towels to this mixture and toss to coat.
  • Heat oil over medium-high heat in a Dutch oven. Add the coated beef to the Dutch oven in batches and cook until browned on all sides. Transfer to a plate.
  • Reduce the heat to medium and add the sliced onion. Cook for about 4 minutes, stirring often until softened. Add the brandy and wine and cook for about 1 minute, scraping the pan with a spoon.

Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil

1 medium yellow onion, sliced
8 ounces white button mushrooms, quartered
7 ounces shiitakes, caps sliced (stems removed and discarded)
1 tablespoon chopped fresh thyme
1 clove garlic, minced

Steps:

  • Bring a large pot of salted water to a boil.
  • Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute.   • In a large frying pan heat the butter until it has melted. Add the shallots and cook until soft.
  • Add the mushrooms and stir occasionally until all the mushrooms are tender. Sprinkle over the flour and cook for another couple more minutes stirring constantly .
  • Add roughly 1/4 of the stock, continuing to stir until thickened and then continue to add the rest of the stock in the same way until all of it is used.

  • Cut the chicken into 1" pieces. Sprinkle them with garlic powder and generously with salt & pepper, then coat each piece in flour.
