CREAMY BAKED SPAGHETTI
Creamy baked spaghetti is an easy, fuss-free dinner recipe and is perfect for weeknight dinners and will become a family favorite in no time.

Steps:
- Pre-heat the oven to 200ºC/400ºF. Melt the butter in an oven-proof skillet/deep frying pan.
- Whisk in the flour until a smooth paste is formed then slowly whisk in the milk over medium-low heat until the sauce is smooth. Add the cream and spices and allow the sauce to cook gently for 5-10 minutes or until the flour has cooked out and the sauce is silky smooth.
- Add the cheese and turn the heat off. Allow the cheese to melt then season to taste.
- Add the cooked spaghetti and stir to combine.
- Top with cheese then place in the oven and allow to bake for 20 minutes or until the cheese is melted and golden.
- Remove from the oven and serve.

I found this on a package of Philadelphia light cream cheese and it sounds good. It uses jarred sauce and cream cheese, I can't wait to try it.

Steps:
- Cook spaghetti according to package directions.
- Meanwhile brown ground beef in a large skillet, drain off grease. Stir in sauce and cream cheese, cook on low for 3-5 minutes or until the sauce is well blended and heated through, stirring frequently.
- Drain spaghetti, add it to the sauce and mix lightly. Top with parmesan cheese.

CREAMY SPAGHETTI PIE
I went to a Pampered Chef party where this was served. Many people asked for the recipe! Update: I have revised this recipe due to people having trouble with the instructions. I hope this makes it easier to follow.

Steps:
- Save out 1/4 cup of the Parmesan cheese and 1/4 cup shredded mozzarella cheese. Set aside.
- Mix together green onions, garlic,chopped parsley, 1/2 cup Parmesan cheese, ricotta cheese, egg, butter(if using), salt, Italian seasoning, and 3/4 cup mozzarella cheese.
- Mix cheese/egg mixture with cooked spaghetti and place on the bottom of a shallow casserole dish.
- In a bowl, mix spaghetti sauce with tomatoes. Pour over spaghetti mixture.
- Sprinkle with remaining 1/4 cup Parmesan cheese and 1/4 cup mozzarella cheese that was set aside.
- Bake about 30 minutes at 350 degrees. After pulling out of oven, garnish pie with chopped parsley. Serve and enjoy!
- Pie will feel firm to the touch. Enjoy!
CREAMY SPAGHETTI AND BEANS

- Place the stock in a sauce pot and warm it over medium heat then reduce to simmer.
- Heat the extra-virgin olive oil and the butter in a large, deep skillet over medium to medium-high heat. Add the pancetta to brown slightly. Next add the garlic and spaghetti and toast the noodles lightly, 3 to 4 minutes. Add onions and carrots, bay leaf and thyme, and season with salt and pepper. Soften veggies a bit, 5 minutes. Add wine and allow it to be completely absorbed. Add beans then add a few ladles of stock and stir the pasta. Keep adding stock a few ladles at a time allowing liquids to be mostly absorbed before adding more, as if you were preparing a risotto. When liquids are absorbed and spaghetti is cooked to al dente, 12-15 minutes, stir in cheese. Adjust salt and pepper. Turn off heat and stir another minute. Remove the bay leaf and thyme stems. Serve in shallow bowls and garnish with lots of parsley.
CREAMY CHEESY ORZOTTO
Orzo is rice-shaped pasta. Ree's orzotto recipe treats the orzo as one would risotto rice to create an interesting blend of ingredients and ideas.

- Heat the broth in a small saucepan and keep warm.
- Heat the oil in a saucepan over medium heat. Add the rosemary and shallot to the oil, then cook for a minute. Add the orzo, red pepper flakes and garlic and cook, stirring, for an additional 1 to 2 minutes. Deglaze with the wine and add the warm broth. Allow the broth to come to a simmer, then cook for 5 minutes, stirring occasionally.
- Stir in the cream, cheeses, sun-dried tomatoes and kale. Cook until the kale wilts and the sauce is thick and creamy, an additional 3 to 4 minutes. Taste and season with salt and pepper.
- Garnish with the parsley and serve.
CREAMY MUSHROOM SPAGHETTI

- Heat water to a boil for the pasta, salt water, drop in pasta and cook to al dente.
- Wipe mushrooms clean with damp towel. Remove woody stems. Thinly slice the mushrooms.
- Heat a large deep skillet with extra-virgin olive oil over medium-high heat. Add the mushrooms and cook until deeply golden and tender, 10 minutes.
- While mushrooms cook, halve the leeks lengthwise. Cut off a couple of inches from tough tops. Trim off root end. Thinly slice the leek then vigorously wash in a large bowl of cold water, separating all the layers to free of grit. Let leeks sit a few minutes then lift out of the water and dry on kitchen towel.
- Add leeks to mushrooms along with garlic and season with salt, pepper and fresh thyme. Cook 3 to 4 minutes more then add wine, reduce half a minute then stir in cream and heat through. Toss pasta with mushrooms and adjust seasoning. Top with grated cheese at the table.

CREAMY PASTA
Forget boxed macaroni and cheese - what kids really like are noodles bathed in a creamy sauce. This is a fine alternative to the packaged stuff. Instead, make the sauce by blending cottage cheese with milk in a food processor. It's not yellow, but it has that creamy, cheesy taste. Make sure to blend the sauce well so that it won't be chalky. This is a good sauce for penne or fusilli (though other kinds of pasta will work). You can add vegetables, like broccoli, which really catches the sauce.

- Bring a large pot of generously salted water to a boil. Meanwhile, place the cottage cheese in a food processor fitted with a steel blade and blend until smooth. Scrape down the sides of the bowl. Turn on the machine, and add the milk with the machine running. Blend until the mixture is smooth and there is no sign of graininess. Blend in the olive oil and the Parmesan, taste, then add salt and pepper as desired. Scrape the cottage cheese mixture into a large pasta bowl.

- Bring a large pot of water to a boil. Add chicken, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Cover, reduce heat to a gentle boil, and cook until chicken is no longer pink in the center and the juices run clear, 10 to 12 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken and set aside until cool enough to handle, then chop into bite-sized pieces. Leave broth in the pot.

- Press the SAUTE button. When the pot is hot, add in the ground beef, salt, pepper, garlic, Italian seasoning.
- Cook until the beef is no longer pink (about 5-7 minutes). If desired, drain grease.
- Press CANCEL to turn off the saute.
- Break the noodles in half. Layer them in a criss cross pattern so they do not stick as they cooks.
- Pour the spaghetti sauce and chicken broth on top of the noodles. DO NOT MIX TOGETHER.
- Place lid on top of Instant Pot. Press MANUAL (or PRESSURE COOK) button and set timer for 8 minutes.
- When the timer is done, do a QUICK RELEASE of the pressure.
- Remove the lid and mix together - make sure that all the noodles are not stuck together.
- Add in Parmesan cheese and cream cheese and stir until sauce is creamy and smooth.
- Serve topped with fresh basil, if desired.
