CREAMY SHRIMP ÉTOUFFéE

Creamy Shrimp Étouffée image

Cajun or Creole, what's the difference? Well they're both cuisines in Louisiana, but the difference can be found by the addition of tomato. This étouffée is best served with warm crusty bread to sop up the sauce. I do use tomato powder, but feel free to use tomato paste if your spice cabinet doesn't include this incredible staple. Serve over hot cooked rice.

Categories     Main Course

Time 1h5m

Number Of Ingredients 15

¼ cup vegetable oil ((or other neutral-flavored oil))
¼ cup all-purpose flour
1 onion (chopped)
1 stalk celery (chopped)
4 cloves garlic (minced or crushed)
Pinch allspice
Pinch cayenne pepper
½ cup chopped tomatoes
2 ½ cups shellfish or shrimp stock
3 tablespoons butter
1 pound medium or large wild American shrimp (peeled completely and deveined)
1 scallion (sliced)
Hot sauce (such as Tabasco or Frank's Red Hot)
Kosher salt and black pepper
4 cups cooked white rice

Steps:

  • Make a brown roux by heating the oil in a large heavy-bottomed pot over high heat. Whisk the flour into the hot oil. It will immediately begin to sizzle. Reduce the heat to medium and continue whisking until the roux turns a deep brown color, about 15 minutes. (Although depending on the thickness of your pan and the heat of your stove it may darken faster!)
  • Add the onions, stirring them into the roux with a wooded spoon. Lower the heat to medium low and continue stirring until the roux turns a glossy dark brown, about 10 minutes.
  • When the onions have turned the roux shiny and dark, add the celery, garlic, allspice and cayenne. Cook for 5 minutes.
  • Then add the tomatoes and stock and raise the heat to high. Once the sauce has come to a boil, lower the heat to medium and simmer 5 to 7 minutes, stirring often to make sure the sauce doesn't burn or stick to the pan.
  • Reduce the heat to low and stir in the butter. Add the shrimp and scallions. Season with hot sauce, salt, and pepper. Once the shrimp are heated through, remove the pot from the heat. Serve over rice.

4 cups chopped onions
2 cups chopped green bell peppers
2 cups chopped celery
2 tablespoons minced garlic
1 (14.5-ounce) can diced tomatoes
2 bay leaves
2 teaspoons salt
1/2 teaspoon cayenne pepper
2 tablespoons Essence, recipe follows
1 quart shrimp stock, recipe follows
3 pounds medium shrimp (21 to 25 count per pound), peeled and deveined
1/4 cup chopped parsley leaves
Steamed white rice, for serving
1/2 cup thinly sliced green onion tops, for garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
1 pound (about 1 quart) shrimp shells and heads
1 cup coarsely chopped yellow onions
1/2 cup coarsely chopped celery
1/2 cup coarsely chopped carrots
3 smashed garlic cloves
1 bay leaf
1 teaspoon black peppercorns
1 teaspoon dried thyme
2 teaspoons salt

Steps:

  • Melt the butter in a large Dutch oven set over medium heat. Add the flour and stir continuously to make a roux. Stir the roux over medium heat until the color of peanut butter, 5 to 7 minutes. Add the onions, bell peppers, celery, and garlic to the roux, and cook, stirring often, for 10 minutes. Add the tomatoes to the pot and season with the bay leaves, salt, cayenne, and 1 tablespoon of the Essence. Cook the tomatoes for 2 to 3 minutes and then whisk in the shrimp stock.
  • Bring the mixture to a boil, and reduce to a simmer. Cook the etouffee, stirring occasionally, for 45 minutes. Season the shrimp with the remaining tablespoon of Essence and add them to the pot, stirring to evenly distribute. Cook the shrimp for 5 to 7 minutes, or until they are cooked through. Add the chopped parsley to the pot and stir to combine.
  • Serve immediately over steamed white rice and garnish with sliced green onion tops.
  • Combine all ingredients thoroughly.
  • Place the shrimp shells and heads in a large colander and rinse under cold running water for several minutes.
  • Combine the shrimp shells and remaining ingredients in a heavy 6-quart stockpot, add 4 quarts water, and bring to a boil over high heat. Skim to remove any foam that rises to the surface. Reduce the heat to medium-low and simmer, uncovered, for 45 minutes, skimming occasionally.
  • Remove the stock from the heat and strain through a fine-mesh sieve into a clean container; let cool completely. Refrigerate the stock for up to 3 days or freeze in airtight containers for up to 2 months.

COMFORT SHRIMP ETOUFFEE

Comfort Shrimp Etouffee image

Our family Shrimp Etouffee recipe. Adapted from many different recipes to suit our own tastes. This one is spicy and delicious, a dark Etoufee, not a pale imitation!

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 18

1/4 cup butter
1/3 cup all-purpose flour
1 cup chopped onion
1 cup chopped celery
1/2 cup chopped green pepper
1/2 cup chopped red pepper
2 -3 garlic cloves, minced
1 lb raw shrimp, peeled and deveined
1 1/2 cups chicken broth
1/2 cup dark beer
1/4 cup chopped fresh parsley
1 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon ground red pepper
1/8 teaspoon white pepper
1/8 teaspoon red pepper flakes
4 -5 dashes Tabasco sauce
3 cups hot cooked rice

Steps:

  • Melt butter in large cast iron skillet.
  • The cast iron is very important as this is what helps develop the very dark color of the roux.
  • Blend in flour and stir over medium heat, until the roux is dark brown.
  • Be patient, this will take at least 20 minutes and should be the consistency of dark rich peanut butter.
  • This is the key to good etouffee.
  • Don't be tempted to turn up the heat, just keep stirring!
  • Add onion, celery, green peppers and garlic; cook until tender crisp, 2 to 3 minutes.
  • Add all spices except parsley and cook another 5-10 minutes.
  • Stir in shrimp, beer and broth and simmer 15 minutes.
  • Add fresh parsley and simmer five more minutes.
  • Serve etouffee over hot cooked rice.
  • Serve with icy cold beer and very crusty French bread.

EASY SHRIMP ETOUFFEE

Easy Shrimp Etouffee image

I got this recipe from a Coast Guard wife whose husband worked with mine. She was from a tiny town in Louisiana and said sometimes her dad would work for shrimp when it was in season and her mom would make this with some homemade biscuits to go with it. I lost this recipe once, and tried some more elaborate recipes for the etoufee, but this ones is TONS better than any I've tried.

EMERIL'S SHRIMP ETOUFFEE

Emeril's Shrimp Etouffee image

Bought a new Dutch Oven and this recipe from Emeril Lagasse (sp?) came with it. Gave it a try and it was pretty simple and DH loved it. It looked pretty impressive too. Served it with steamed white rice. I'm guessing at the serving size as it only states 3 quarts. Edited to include shrimp and amount (how could I forget something that important) thanks Grease for bringing it to my attention. Also for the Essence I used recipe#14372.

ULTIMATE SHRIMP ETOUFFEE

Ultimate Shrimp Etouffee image

My aunt lives in Baton Rouge Louisiana, she has been making and serving this at family get togethers for years, I always loved it, I finally got the recipe from her. Yes it has cream of mushroom soups in it, I was just as suprised, if you don't tell anyone they will never know. This is a real treat, very rich, easy to make and perfect for special occations. I know I know, the "cream-of" soups makes it seem not-so-cajun but like I said, my aunt lives in cajun country, so if you have a problem.....take it up with her, ha ha. Her son, my cousin, is famous for his Gumbo, maybe I can get his recipe as well.

Time 40m

Yield 1 large pan, 6 serving(s)

Number Of Ingredients 8

1/2 cup butter
1 medium onion
1 bell pepper
2 stalks celery
1 (10 ounce) can Rotel Tomatoes (I use original diced)
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (10 3/4 ounce) can condensed golden mushroom soup
2 lbs shrimp (peeled and deviened) or 2 lbs crawfish (peeled and deviened)

Steps:

  • Dice onion. pepper and celery, I do a medium dice.
  • In a large pan, melt butter and add onion, bell pepper, celery and saute intil tender.
  • I use the diced original rotel, but if you get the can with whole tomatoes, dice it up. It comes in mild, original and hot, use your preference.
  • Add the mushroom soups and rotel and bring to a simmer.
  • Season to taste.
  • Add shrimp, bring back to a simmer, cook until shrimp is done. About 10 minutes.
  • If it is too thick, add a little water or chicken broth.
  • Serve over cooked rice. I like to pack a ice cream scoop with the rice, put it in a serving bowl and ladle the etouffee around the rice. For larger bowls, use 2 scoops.
  • I have also spooned over grilled steaks before and it was delicious!
