1 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper
16 ounces elbow pasta (, cooked and drained)
1 green bell pepper (, minced)
4 stalks celery (, trimmed and minced)
1/2 cup red onion (, minced)

Steps:

  • Cut shrimp into small chunks, then add to a pot of boiling water and boil for 30 seconds until pink and drain.
  • In a large bowl whisk together mayonnaise, sour cream, dijon mustard, cayenne pepper, lemon juice, dill, salt, and pepper.
  • Reserve 1 cup of the dressing in a covered container.
  • Add pasta, shrimp, green bell pepper, celery, and red onion and fold until well coated.
  • Refrigerate for 2 hours (at least) then stir in the remaining dressing right before serving (this makes it extra creamy).

  • Add 3/4 lb pasta to a pot of boiling water with 1 Tbsp salt and cook according to package instructions until al-dente. Drain without rinsing and set aside.
  • While pasta is cooking, prepare the shrimp and sauce. Season shrimp with 1/2 tsp salt, 1/4 tsp black pepper and 1/4 tsp paprika. Place a large, non-stick pan over medium/high heat and add 1 Tbsp oil. Once oil is hot, add shrimp in a single layer and cook 2 min per side or just until cooked through and no longer translucent. Remove to a separate dish to prevent overcooking.
  • In the same hot pan, add 2 Tbsp butter with finely chopped onion and sauté until soft and golden (3-5 mins), stirring often. Add minced garlic and sauté another minute until fragrant. Stir in 1/3 cup white wine and boil down until there is only 25% of the liquid left.
  • Stir in 2 cups cream, bring to a light boil then simmer 2 min. Sprinkle sauce with 1/3 cup parmesan cheese and stir just until creamy and smooth. Let it come just to a simmer without boiling then turn off the heat and season sauce with more salt, pepper and paprika to taste.

  • Start a pot of well salted water to a boil. Boil the pasta until it is just al dente. Start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside; usually around 7 to 8 minutes. Drain the pasta. (If it finishes before the sauce, add it back to the pot with a drizzle of olive oil so it doesn’t stick.)
  • Pat the shrimp dry. In a medium bowl, mix the shrimp with the spices. In a large skillet, heat the olive oil on medium high heat. Cook the shrimp for 1 to 2 minutes per side until opaque and cooked through, turning them with tongs. Set them aside.
  • Wipe out the skillet. In the same skillet make the White Wine Sauce or Parmesan Cream Sauce (takes about 10 minutes).

  • Boil a salted pot of water for the pasta. Cook it al dente according to package directions, then once it's done, drain it and rinse with cool water. Let it drain thoroughly before adding it to a large salad bowl.
  • Meanwhile, prep the shrimp (run under cool water to thaw if they're frozen, peel them, remove the tails, and devein if needed). Boil a pot of water to cook them, and fill a medium-sized bowl with cold water and ice cubes. Once the water is boiling, add the shrimp and cook for 2-3 minutes. Drain the shrimp and add them to the ice bath to stop them from cooking further. Let them cool in there for a few minutes prior to draining them and patting them dry with paper towel. If desired, cut them into smaller pieces before adding them to the salad bowl.
