1 tablespoon olive oil
1 small onion, finely diced
2 carrots, finely diced
2 stalks celery, finely diced
3 cloves garlic, minced
2 italian sausages, casings removed, 1 sweet, 1 hot
1 lb ground sirloin
salt, to taste
pepper, to taste
2 tablespoons tomato paste
1 tablespoon italian seasoning
½ cup red wine
28 oz crushed tomato
16 oz beef broth
2 bay leaves
1 cup parmesan cheese
½ cup heavy cream
1 lb penne pasta, cooked to box instructions
parmesan cheese, shavings

Steps:

  • In a large pot, set on medium heat, add the olive oil and sauté the onions, celery, carrots, and garlic until they are soft, about 10-15 minutes.
  • Add garlic and cook for an additional 2-3 minutes.
  • Add the ground beef and the sausages. Season with salt and pepper, and break up the meat with a spoon and frying until no longer pink.
  • Next, add the tomato paste, Italian seasoning, and red wine. Stir and reduce until the wine has almost completely evaporated.
  • Now add all the remaining ingredients, except the parmesan and cream. Stir to ensure everything is well mixed.
  • Simmer for 30 minutes to 3 hours. The longer the simmer, the deeper and more concentrated the flavor.
  • Stir in the parmesan and cream to the sausage bolognese.
  • Add the cooked pasta to the sauce.
  • Serve with more parmesan, if desired.
  • Enjoy!

olive oil, to taste
1 onion, finely diced
4 sausage halves
½ teaspoon red pepper flakes
½ teaspoon black pepper
3 cans crushed tomatoes
4 cloves garlic, minced
1 teaspoon oregano
1 tablespoon dried basil, divided, plus 1 teaspoon
½ bag penne pasta
⅙ block parmesan cheese

Steps:

  • Heat up a 2-liter pot and pour in a little olive oil. Put onion and sausage in the pot once the pot is heated up. Add red pepper flakes and black pepper.
  • Once the sausage is seared, pour in 3 cans of crushed tomatoes. Pour in ½ cup of water. Add the minced cloves of garlic. Add oregano and 1 tablespoon basil. Let cook on low heat for an hour and a half.
  • Heat up some water to a rapid boil in another pot. Add the penne pasta. Once cooked strain the pasta.
  • Serve both pasta and sauce into a shallow bowl with a sausage half and top with Parmesan and basil.

3/4 lb bulk Italian sausage
1 tablespoon olive oil
1 tablespoon butter
3/4 cup chopped sweet red pepper
1/2 cup chopped onion
1/2 cup chicken broth
2 cups heavy cream
1/2 cup grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon chopped fresh parsley

Steps:

  • Cook pasta according to package directions.
  • In a large skillet, cook sausage in oil and butter over medium heat for 5 minutes.
  • Add red pepper and onion; cook and stir until vegetables are tender and sausage is no longer pink.
  • Add broth; cook for 2 minutes.

  • Bring to a boil. reduce heat; cook over low heat for 8-10 minutes, stirring occasionally.
  • Drain pasta.

This luscious pasta dish is one I've avoided making recently; it's not exactly a lowfat dinner and I feel guilty serving it to my husband -- neither of us should be eating such a high calorie meal. But it's so, so good! Even though I can't claim it's part of a healthy diet, I hope you try it at least once -- it's a fast, easy dish, after all! I serve this with a simple green salad.

1 lb penne pasta (fusilli or ziti could also be used, but I prefer penne)
3 tablespoons olive oil (preferably extra-virgin)
3 cloves garlic, minced
1 pinch cayenne pepper
1 lb sweet mild Italian sausage
1 cup heavy cream
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon freshly grated nutmeg
3 tablespoons unsalted butter (cut into small bits)
1/2 cup freshly grated parmesan cheese
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh flat leaf parsley

Steps:

  • Bring a large pot of salted water to boil and cook the penne until al dente; drain well and do NOT rinse.
  • After you put the water on to boil, remove sausage meat from the casings, crumble, and set aside.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add garlic and cayenne and saute for approximately 30 seconds, then add sausage meat to skillet.
  • Cook until sausage meat is no longer pink (about 5 minutes or so).
  • Add cream, salt, pepper and nutmeg to skillet and turn heat to high to bring mixture to a boil.
  • Reduce heat and simmer, gently, until the cream reduces and the sauce thickens a bit; it takes about 10 minutes.
  • Place cooked penne in a large serving bowl (it's nice if you warm it first) and pour sauce over; add butter and cheese to bowl and combine all well.
  • Taste; add more salt and/or pepper if you wish.
  • Sprinkle chopped herbs over top and serve.

1 packet penne pasta
1 onion
15 mushrooms, sliced
cherry tomato, handful
1 green pepper, diced
2 green chiles, chopped
2 garlic cloves, finely chopped
6 sausages, sliced in circles and cooked well
1 cup marinara sauce
2 cups cream
1 teaspoon salt
½ teaspoon pepper
1 teaspoon red chili powder
½ cup shredded mozzarella cheese, grated

Steps:

  • Cook pasta according to package directions and set aside.
  • In a separate pan, dice your onions and saute til golden-brown. To this, add garlic cloves, cherry tomatoes, green peppers and mushrooms, and allow to braise together for 10-15 min on medium heat.
  • Add salt, green chilis, pepper and crushed red chili's. Mix well.
  • Then, add tomato pasta sauce and fresh cream and simmer on low heat for 2-3 minutes. Once combined, add cooked sausages and cook for another 5 minutes.
  • To the pan, add cooked pasta inside, mix well, and add grated mozzarella.
  • Serve topped with grated Parmesan or a drizzle of olive oil, if desired.

2/3 cup dry white wine
1 (14 1/2 ounce) can diced tomatoes in tomato puree
1 cup whipping cream
6 tablespoons chopped Italian parsley
1 lb penne
1 cup freshly grated parmesan cheese

Steps:

  • Melt butter with oil in heavy large skillet over medium-high heat.
  • Add sausage, onion and garic and saute until golden brown and tender, about 7 minutes.
  • Drain any excess dripping from skillet.
  • Add wine to skillet and boil until almost all liquid evaporates, about 2 minutes.
  • Add tomatoes with juices and simmer 3 minutes.
  • Add cream and simmer until sauce thickens slightly, about 5 minutes.
  • Stir in 4 tablespoons parsley.
  • Season to taste with salt and pepper.
  • Remove from heat.
  • Cook pasta in large pot of boiling, salted water until firm to bite.
  • Drain; transfer to large bowl.
  • Bring sauce to simmer.
  • Pour sauce over pasta.
  • Add 3/4 cup cheese and toss to coat.
  • Sprinkle remaining 1/4 cup cheese and 2 tablespoons parsley.

2 tablespoons butter or 2 tablespoons margarine
2 garlic cloves, minced
2 tablespoons flour
3/4 cup chicken broth or 3/4 cup beef broth
3/4 cup milk
2 teaspoons parsley flakes
salt and pepper, to taste
1/3 cup grated parmesan cheese

Steps:

  • Melt butter and add garlic in a medium sauce pan.
