CREAMY RED ONION VINAIGRETTE
Creamy and lightly pickled red onion vinaigrette.

Steps:
- Add the minced red onion and red wine vinegar to a small mixing bowl. Let it sit for a few minutes to slightly pickle the red onions.
- Add the rest of the ingredients except for the olive oil.
- Whisk the ingredients to incorporate the honey. Keep whisking and stream in the olive oil until a nice creamy and combined consistency.
- Add salt and pepper, adjust to taste.
- Store in an airtight container in the fridge. Dressing only lasts for a few days. Let the dressing come to room temperature and whisk to combine before serving.
CREAMY VINAIGRETTE
Steps:
- In a small bowl, whisk together the oil, vinegar, mustard, honey, salt, pepper and shallots until the vinaigrette is emulsified.
- Toss the greens with enough dressing to moisten and serve immediately.
CREAMY RED ONION SALAD DRESSING
DH loves this dressing. I was going to make a buttermilk dressing but forgot to buy the buttermilk so I had to come up with this on the fly. Cooking time is chill time.

- Combine all ingredients in a blender and blend on high speed until smooth and thickened.
- Refrigerate for at least 1 hour before serving.
SPICE-RUBBED STEAK SALAD WITH CREAMY RED WINE VINAIGRETTE
Steps:
- For the steak: Place the steak on a large plate. Mix together the salt, sugar, pepper and cayenne in a small bowl. Rub the spice mix all over the steak.
- Heat a grill or grill pan to medium-high heat. Brush with the vegetable oil.
- Add the steak and onions to the grill and cook, without disturbing, 2 to 3 minutes; flip and cook the other side for another 2 to 3 minutes. Remove the steak to a cutting board to rest before carving, 6 to 8 minutes. Transfer the onions to a cutting board and roughly chop.
- For the creamy red wine vinaigrette: Whisk together the vinegar, mayonnaise, honey, red pepper flakes and garlic in a large bowl. Slowly whisk in the olive oil until combined and smooth. Season with salt and pepper.
- For the salad: Add the lettuce, cheese, tomatoes and grilled onions to the bowl with the dressing and toss to coat. Serve with the sliced steak.

- Heat 1 tablespoon oil in a heavy skillet over moderate heat until hot but not smoking, then cook mustard seeds, stirring, until they pop and are 1 shade darker, about 2 minutes.
- Transfer oil with seeds to a large bowl.
- Simmer vinegar and sugar in a small saucepan, stirring, until sugar is dissolved, then cool 5 minutes.
- Heat remaining 2 tablespoons oil in cleaned skillet over moderately high heat until hot but not smoking, then cook onion, stirring, until golden brown, 8 to 10 minutes.
- Remove from heat and stir in vinegar, then add to mustard oil in large bowl.
- Have ready a large bowl of ice and cold water.
- Cook beans in a pot of boiling salted water until crisp-tender, about 5 minutes.
- Drain in a colander and plunge into ice water to stop cooking, then drain well.
- Toss beans with vinaigrette and salt and pepper, to taste.

- In mean time grill onion slices.

Posted this recipe as a request on the message board. I found the recipe in the "Blueberries and Polar Bears" cookbook. The recipe suggests serving this with "beef or Jalaneo Goose, or on top of a beef sandwich the next day!" I guessed on the serving size, because it wasn't given.

Steps:
- Slice the onions very thin and place them in a plastic or glass dish.
- Combine the vinegar, water, sugar, and salt.
- Mix well to dissolve the sugar and salt.
- Pour over the sliced onions and mix well.
- Put a plate on top of the onions and set a weight on it.
- A plastic bottle of oil and vinegar works well.
- Let the onions sit on the counter all day- overnight is best.
- Drain the onions (You will wonder where all the liquid came from!).
- Combine the dressing and celery seed and toss with onions.
- Put in a serving bowl and serve.
