CREAMY PUMPKIN PASTA SAUCE

Creamy Pumpkin Pasta Sauce image

Creamy Pumpkin Pasta Sauce. Made with pumpkin, cream cheese, and sage, this easy recipe tastes similar to Alfredo but is healthy and ready in 20 minutes!

Provided by Erin Clarke / Well Plated

Categories     Main Course

Time 30m

Number Of Ingredients 14

8 ounces whole wheat fettuccini (or any other long, thin noodle, such as linguine or spaghetti)
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
2 cloves garlic (minced)
2 cups nonfat milk
1 cup pumpkin puree (not pumpkin pie filling)
3 ounces reduced-fat cream cheese (cut into chunks and at room temperature (do not use fat free))
1 tablespoon chopped fresh sage leaves (divided)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Pinch ground cayenne pepper
1/2 cup grated Parmesan cheese (for serving)

Steps:

  • Bring a large pot of salted water to a boil and cook the pasta to al dente, according to package instructions. Reserve 1 cup of the pasta water, drain pasta, and set aside.
  • Melt the butter in a large saucepan over medium heat. Once hot and sizzling, add the flour, then whisk constantly until it turns a golden color and smells nutty. Add the garlic and cook for 30 seconds. Slowly pour in the milk a few splashes at a time, whisking constantly to smooth any clumps. Increase the heat to medium high, then let cook, stirring constantly, until the sauce bubbles and thickens, about 8 to 10 minutes. Remove the pan from the heat, then stir in the pumpkin, cream cheese, half of the chopped sage leaves, salt, pepper, cinnamon, nutmeg, and cayenne. Continue whisking until the cream cheese melts and you have a smooth, rich sauce. Taste and add additional salt and pepper as desired.
  • Add the cooked pasta to the pan and gently toss to combine. Thin the pasta with a bit of the reserved pasta water as needed if it seems too thick or sticky. Serve immediately, topped with Parmesan and the remaining sage.

PENNE WITH PUMPKIN SAUCE

Penne With Pumpkin Sauce image

I had an abundance of pumpkins that I grew last year, so I tried this recipe from Gourmet Magazine and it was fantastic. The recipe calls for solid packed pumpkin, so feel free to use that if you don't have fresh pumpkin available. This recipe is scaled to serve 2, so adjust according to your needs. I hope you enjoy it!

Number Of Ingredients 12

1/2 medium onion, chopped fine
1/2 medium red bell pepper, chopped fine

1 cup chicken broth
1/2 cup water
2 tablespoons heavy cream
freshly grated nutmeg, to taste
1/2 lb penne pasta
3 tablespoons minced fresh parsley leaves
parmesan cheese, freshly grated,as an accompaniment

  • Stir in the pumpkin, broth, water, cream, nutmeg, and salt and pepper to taste.

  • While the sauce is simmering, in a kettle of boiling salted water, boil the penne until it is al dente.

TORTELLINI WITH CREAMY PUMPKIN SAUCE

Tortellini With Creamy Pumpkin Sauce image

I saw Rachael Ray make something very similar to this, but I thought it was a little labor intensive and heavy looking. However, the idea of the flavors intrigued me, so I played around and came up with this version. It is so delicious and creamy and the entire family just loved it.

Provided by LizP5885

Categories     < 60 Mins

Time 40m

Yield 6 serving(s)

Number Of Ingredients 10

2 lbs cheese tortellini
4 tablespoons butter
1 medium onion, chopped
4 garlic cloves, minced
2 tablespoons flour
2 1/2 cups skim milk
15 ounces pumpkin
1/4 teaspoon nutmeg
salt and pepper
2 cups cheddar cheese, shredded

Steps:

  • Place a large pot of salted water over high heat to boil. When water is boiling, drop tortellini and cook according to package directions. Drain cooked tortellini and reserve.
  • Melt the butter, add the onion and garlic, and season with salt and pepper. Sauté until the onions soften.
  • Stir in flour and cook about a minute. Whisk in the milk and cook until the liquid comes up to a bubble and the sauce thickens, 2-3 minutes.
  • Stir in the nutmeg and pumpkin. Season with salt and pepper and simmer until thickened, about 1 minute. I found I needed quite a bit of salt.
  • Toss the tortellini with the pumpkin sauce and transfer to a casserole dish. Cover with cheese and broil until cheese is browned.

1 Tbsp butter ($0.13)
1 cup pumpkin purée ($0.78)
1 cup chicken broth* ($0.12)
1/8 tsp nutmeg ($0.02)
1/4 tsp chili powder** ($0.03)
Pinch cayenne pepper ($0.02)
Freshly cracked black pepper ( $0.05)

CREAMY PUMPKIN PASTA

Creamy pumpkin pasta image

Make the most of pumpkins this autumn. When puréed and combined with mascarpone and parmesan, their flesh transforms into a silky, delicious pasta sauce

Provided by Esther Clark

Categories     Dinner

Time 50m

Number Of Ingredients 9

2 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
500g pumpkin or squash, peeled and cut into roughly 3cm cubes
50-100ml whole milk
2 tbsp tomato purée
2 tbsp mascarpone
350g short pasta (rigatoni or penne work well)
40g grated parmesan or vegetarian alternative, plus extra to serve

Steps:

  • Heat the oil in a large, shallow, flameproof casserole or frying pan over a low-medium heat and fry the onion with a pinch of salt for 10-15 mins until softened and translucent. Add the garlic and fry for 1 min more. Remove from the heat and leave to cool slightly.
  • Meanwhile, cook the pumpkin in a pan of boiling salted water for 10-15 mins until tender when pierced with a cutlery knife. Drain and tip into a blender (or use a hand blender). Blitz with 50ml milk and the onions until completely smooth, gradually adding more milk until the mixture is thick enough to just coat the back of a spoon (you may not need all the milk). Tip into a large frying pan with the tomato purée and mascarpone, and bring to a simmer over a low heat.
  • Cook the pasta in a large pan of boiling, salted water following pack instructions. Drain, reserving a cupful of the cooking water. Toss the pasta with the pumpkin sauce, parmesan and 50-100ml of the reserved water to loosen. Season and scatter with extra parmesan.
