5 cups peeled and diced potatoes
1 cup peeled and diced sweet potato
3 stalks celery, diced
1 cup diced onion
4 cups chicken broth
4 cups half-and-half cream
8 tablespoons butter
1/2 cup flour
3 -4 chicken bouillon cubes
1/4 teaspoon ground black pepper
1/8-1/4 teaspoon nutmeg (more if desired)

Steps:

  • Combine potatoes, celery, onion and 4 cups chicken broth in a pan and bring to a boil. On medium high cook until potatoes are tender, 12-15 minutes. Strain and save liquid.
  • Put liquid back in pot and add half & half. Heat on medium. In a bowl combine melted butter and flour. Stir into half & half mixture. Once thickened add in the vegetables, the rest of the broth, bouillon, pepper and nutmeg.
  • Enjoy!

2 to 2-1/2 pounds fresh broccoli spears, cut into florets
1/2 cup chopped green onions
1 tablespoon canola oil
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon pepper
1 cup half-and-half cream

Steps:

  • In a large saucepan, bring broth to a boil; add broccoli. Reduce heat; cover and simmer until tender, about 10 minutes. , Meanwhile, in a small skillet, saute onions in oil until tender; stir into broth. Remove from heat; cool 10-15 minutes. Puree in small batches in a blender or food processor until smooth. Return all to the saucepan; set aside. , In a small pan, combine flour, salt, nutmeg and pepper. Slowly add cream, stirring constantly. Bring to a boil over medium heat. Cook and stir for 2 minutes or until slightly thickened. Gradually stir into broccoli mixture. Return to the heat; cook over medium until heated through, stirring occasionally.

1 tablespoon vegetable oil
1 onion, chopped
1 ½ quarts water
1 cube chicken bouillon
2 cups fresh spinach
4 small potatoes, peeled and halved
ground nutmeg to taste
½ cup milk
salt and pepper to taste

Steps:

  • Heat the oil in a skillet over medium heat. Cook and stir the onion until tender.
  • In a saucepan, bring the water to a boil. Reduce heat to low, and dissolve the bouillon cube in the water.
  • In a blender or food processor, blend the onion, spinach, potatoes, nutmeg, and about 2 cups of the bouillon until thick and smooth.
  • Blend the potato mixture into the saucepan with the remaining bouillon. Bring to a boil, reduce heat, and simmer 20 minutes. Stir in the milk, and continue cooking 10 minutes. Season with salt, pepper, and more nutmeg to taste. Thus the soup is complete.

11/2 teaspoons salt

Steps:

  • In a large heavy saucepan, bring the leeks, potatoes, water, and salt to the boil over high heat. Cover partially, reduce heat, and simmer for 20 to 30 minutes until the vegetables are tender. Correct the seasoning, to taste, and puree with a handheld immersion blender, or in batches in a food processor.
  • Whisk in the cream and reheat before serving. Top each serving with a dollop of creme fraiche and sprinkling of fresh chives.

1 tablespoon seasoned salt

Steps:

  • Add potatoes, onion, garlic, seasoning, and chicken stock to slow cooker.
  • Cook on high for 6 hours or low for 10 hours.
  • Add the softened cream cheese and puree soup with an immersion blender until the cheese is incorporated and about half the soup is blended.
  • Stir well, top with your choice of garnishes & enjoy!

2 tbsp olive oil
2 cloves garlic, sliced finely
1 small onion, sliced finely
1 medium carrot, diced
1 stalk celery, diced
1/2 kg potatoes, diced
3 cups stock
1 bay leaf
3/4 cup double cream
1 tbsp butter, heaping, chilled
1 lemon, grated zest
1/4 cup spring (green) onions, cut into thin rings
salt and pepper, to season
dash cumin powder (optional)
dash nutmeg powder (optional)

Steps:

  • Heat up olive oil on a medium-sized pot.
  • Once olive oil is ready, add garlic and onion.
  • Cook until garlic becomes fragrant and onion becomes softer.
  • Add carrot and celery. Mix and cook for a few minutes.
  • Add potatoes, stock and bay leaf.
  • Cover with a lid and bring to a boil.
  • Keep simmering until the vegetables are slightly cooked (i.e. softened).
  • Remove the bay leaf. Scoop about 1/3 of the vegetables and set aside.
  • Add double cream and butter. Mix until butter has completely dissolve.
  • Blitz the soup by using a stick blender. (Alternatively, you can use a stand blender, but you have to make sure the soup has cooled down a bit.)
  • Season with salt and pepper. Add lemon zest. (Although cumin and nutmeg are optional, you should add them now if you intend to use them.)
  • Mix to combine everything.
  • Add spring onions. Mix, taste and adjust the seasoning, if desired.
  • Add back the 1/3 of the vegetables that was set aside earlier. Cover and simmer for about 3 minutes.
  • Serve. Garnish with more spring onions, if desired.

2 tablespoons pure maple syrup

Steps:

  • Melt butter in heavy large pot over medium-high heat. Add onion and sauté 5 minutes. Add chopped celery stalks and leek and sauté until onion is translucent, about 5 minutes. Add garlic and sauté 2 minutes. Add potatoes, chicken stock, cinnamon, and nutmeg; bring to boil. Reduce heat and simmer uncovered until potatoes are tender, about 20 minutes.
  • Remove cinnamon stick and discard. Working in batches, puree soup in blender until smooth. Return to pot. Add half and half and maple syrup and stir over medium-low heat to heat through. Season soup to taste with salt and pepper. (Can be prepared 1 day ahead. Cool soup slightly. Cover and refrigerate soup and celery leaves separately. Bring soup to simmer before continuing.) Ladle into bowls. Sprinkle with celery leaves.
