My grandmother used to make this at Thanksgiving and Christmas to fill out the usual sweet potato casserole and dressing menu. This was always one of my favorites. It is very easy and very tasty! It is a good way to get your kids (and reluctant DH's) to eat their vegetables!

1 (20 ounce) package frozen mixed vegetables
1 cup chopped onion
1 cup chopped celery
1 cup shredded cheddar cheese
1 cup mayonnaise
1 1/2 cups Ritz cracker crumbs
1/2 cup butter or 1/2 cup margarine, melted

Steps:

  • Cook the frozen vegetables according to the package directions. Drain well.
  • Combine cooked vegetables, onion, celery, cheese, and mayonnaise in a large bowl, stirring well.
  • Spoon the mixture into a greased 11 x 7 x 1 1/2 inch baking dish.
  • Combine cracker crumbs and butter. Stir well. Sprinkle crumb mixture evenly over the casserole. Bake at 350 degrees for 30 to 35 minutes or until thoroughly heated.

  • 1. Mix first 4 ingredients in a large bowl until well blended.

1 (16 ounce) bag broccoli (frozen (see note 1))
1 (16 ounce) bag carrots (frozen)
1 (16 ounce) bag cauliflower (frozen)
1 (16 ounce) package Velveeta (sliced (see note 2))
1 roll Ritz crackers (crushed (see note 3))
1/4 cup butter (melted (1/2 stick))

Steps:

  • Preheat oven to 350 degrees. In a large microwave-safe bowl, add broccoli, carrots, and cauliflower and stir to combine. Microwave uncovered on high until the vegetables are warm, about 12 to 15 minutes.
  • Transfer to a 9-inch by 13-inch baking dish. Evenly place the sliced Velveeta over the vegetables.
  • In a medium bowl, add Ritz crackers and melted butter. Toss to combine. Sprinkle over Velveeta.
  • Bake until cheese is melted and cracker topping is golden brown, about 30 to 45 minutes.

1 (16 ounce) bag frozen mixed vegetables (broccoli, cauliflower and carrots)
1 (8 ounce) can cream of mushroom soup
1 cup mayonnaise or 1 cup sour cream
1 small onion, chopped
1 (8 ounce) bag of grated cheese, of your choice (I use mild cheddar)
1 (4 ounce) package Ritz crackers, crushed (1 sleeve)
1/4 cup butter or 1/4 cup margarine

Steps:

  • Preheat oven to 350°F.
  • Cook vegetables according to package instructions, but not completely done.
  • In separate bowl mix soup and mayonnaise together and set aside.
  • Add to a buttered casserole dish, 1 layer of vegetables, 1/2 onions, 1/2 soup mix and 1/2 cheese.
  • Repeat layers ending with cheese on top.
  • Top off with crushed Ritz crackers and dot with butter or margarine.
  • Bake at 350°F for 30-35 minutes until golden brown.

If using the cheese, add 1 cup of the cheese to the sauce and stir to melt.
  • To the pot, add in the cooked noodles and tuna. Mix gently to combine. Pour the mixture into the buttered casserole dish and spread out evenly. If using the cheese, sprinkle the remaining cheese over top. In a separate bowl, mix the crushed cracker crumbs and melted butter. Sprinkle the buttered cracker crumbs over top and bake for 20-25 minutes or until the cracker crumbs are golden brown. Remove from the oven and allow to rest for 10 minutes before serving.
