Gluten Free and Dairy Free Cream of Mushroom Soup image

A homemade, gluten and dairy-free, version of the cream of mushrooms soups you would find in the grocery store. Ghee, also known as clarified butter, is lactose free.

5 cups mushrooms
1 1/2 cups vegetable broth
1/2 cup chopped onion
1/8 teaspoon dried thyme
3 tablespoons ghee
3 tablespoons rice flour
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 cup rice milk or 1 cup almond milk
1 tablespoon sherry wine

Steps:

  • 1. In saucepan, cook mushrooms, broth and thyme until mushrooms are tender.
  • 2. Blend mixture in blender, leaving some chunks of veggies in it. Set it to the side.
  • 3. In saucepan, melt the butter, and whisk the flour until smooth. Add salt and pepper, rice milk and mushroom puree. Stirring consistently, bring to a boil and cook until thickened. Adjust seasoning to individual taste, and add sherry.

If you like kale and you like mushrooms, you're going to like this super-creamy, dairy-free, gluten-free soup! I wasn't so sure about this experiment, at first, because it smelled a little too "kaley" but I loved it and will make it again. *This recipe is intended for a Vitamix but can be blended in a regular blender, then transferred to a pot for cooking, or simmered in a pot first then blended.

2 cups unsweetened almond milk
1 (15 ounce) can mushrooms (drain about 1/2 of the liquid)
1 tablespoon cooking sherry
1 cup kale (baby or chopped)
1/2 cup onion
1/2 cup unsalted cashews
1/4 teaspoon thyme
1/8 teaspoon salt
pepper
1 cup shiitake mushroom (cooked)

Steps:

  • Put all of the ingredients, except for the Shitake Mushrooms, into your Vitamix and crank it to high for 5-6 minutes. Once the broth is steamy, turn your vitamix down to 5 and add the Shitake Mushrooms. Chop them lightly, then serve.

  • Heat a large stockpot or Dutch oven over medium heat, add chopped bacon and saute until crispy (about 3-5 mins.). Transfer cooked bacon bits to a plate and set aside, leaving 1-2 Tbsp of bacon grease in the pot (you can strain and save the rest for later in the fridge).
  • Add and sauté onion for 2 to 3 minutes until softened. Cook garlic until fragrant, about 1 minute.
  • Add mushrooms, thyme, parsley, and rosemary, cooking for 5 minutes. Pour in the balsamic vinegar and mix, let it cook for 2 more minutes or so.
  • Sprinkle mushrooms with flour, mix well and cook for 2 minutes. Add broth, mix again and bring to a boil. Reduce heat to low-medium heat, season with salt.

  • In a large saucepan, heat butter (or dairy-free butter) over medium-high heat; saute mushrooms, and minced garlic until tender.
  • Stir in the gluten-free chicken broth, salt, pepper, and nutmeg (optional, but so good!). Stir the mixture until the flour dissolves. Bring the soup to a boil and stir it until thickened (about 2 minutes).
