I combined a creamy cheese sauce and an artichoke dip to come up with these bite-size morsels. The filling is tucked into triangles made from crescent roll dough-it's the perfect no-mess appetizer! -Tina Scarpaci of Chandler, Arizona

2/3 cup reduced-fat garlic-herb spreadable cheese
4 ounces reduced-fat cream cheese
2 tablespoons half-and-half cream
1 garlic clove, minced
1 tablespoon dried basil
1 teaspoon dried thyme
1/2 teaspoon celery salt
1/4 teaspoon dill weed
1/4 teaspoon salt
1/4 teaspoon pepper
3 to 4 drops hot pepper sauce
1/2 cup chopped canned water-packed artichoke hearts, rinsed and drained
1/4 cup chopped roasted red peppers
2 tubes (8 ounces each) refrigerated reduced-fat crescent rolls

Steps:

  • In a small bowl, beat the spreadable cheese, cream cheese, cream and garlic until blended. Beat in the herbs, salt, pepper and hot pepper sauce. Fold in artichokes and red peppers. Cover and refrigerate for at least 1 hour., Unroll both tubes of crescent roll dough. On a lightly floured surface, form each tube of dough into a long rectangle; seal seams and perforations. Roll each into a 16-in. x 12-in. rectangle. Cut lengthwise into four strips and width-wise into three strips; separate squares. , Place 1 rounded tablespoon of filling in the center of each square. Fold in half, forming triangles. Crimp edges to seal; trim if necessary. Place on ungreased baking sheets. Bake at 375° for 10-15 minutes or until golden brown. Serve warm. ,

Two 8-ounce packages cream cheese, softened
4 ounces jarred salsa (hot)
4 green onions, finely sliced
4 large flour tortillas
10 slices bacon, cut into small pieces and cooked till crisp
16 thin slices deli ham

Steps:

  • In a medium bowl, mix together the cream cheese, salsa and onions until fully combined. Spread the tortillas with the mixture, leaving a 1/2-inch edge. Top each with bacon and ham, then roll into tight cylinders and wrap in plastic wrap. Refrigerate for at least one hour. Remove from fridge, discard the plastic wrap and cut each roll into 1-inch pieces, discarding the uneven ends (or eating them while preparing, like I did!). Each roll should yield eight pieces. If you like, before cutting, stick toothpicks in the rolls at 1-inch intervals; it makes serving a snap.

4 (5 1/2 ounce) salmon fillets
2 lemons or 2 limes (I sliced, 1 zest and juice only)
20 basil or 20 mint leaves
2 tablespoons butter
1 clove garlic, minced

Steps:

  • Mince a few herb leaves for butter sauce and set aside.
  • Cut two deep bias cut slits across the width of each fillet.
  • Stuff each slit with a citrus slice and herbs.
  • Preheat oven to 425 degrees.
  • Combine butter, garlic, citrus zest, juice and minced herbs in a small pan over high heat, and boil for 1 minute.
  • Pour the butter sauce over fillets in a baking dish.
  • Bake for eight to 12 minutes depending on thickness.

¼ teaspoon dried dill weed
¼ teaspoon dried basil
¼ teaspoon ground black pepper

Steps:

  • Mix together the butter, cream cheese, Parmesan cheese, garlic, oregano, parsley, thyme, dill, basil, and pepper in a bowl until evenly combined. Chill in refrigerator overnight or 8 hours. This can be frozen for long-term storage.

12 pita pocket bread
1/2 cup olive oil
1 teaspoon garlic and herb seasoning (McCormick)
salt & pepper
1 (15 ounce) can artichoke hearts, drained and chopped
11 ounces cream cheese, softened
1/2 cup sour cream
1/2 cup parmesan cheese, grated
2 garlic cloves, minced
1 tablespoon fresh parsley
1 tablespoon fresh chives
3 cups monterey jack cheese, shredded
1 tomatoes, diced
2 green onions, diced

Steps:

  • Pita Chips:.
  • Preheat oven to 400 degrees.
  • Cut each Pita bread into 8 triangles & place on lined baking sheet.
  • Brush triangles with olive oil.
  • Sprinkle seasonings over chips.
  • Bake for 7 to 10 minutes or until light brown, watch carefully.
  • Let cook and put onto platter or dish that can go into oven.
  • Artichoke Dip:.
  • Combine all ingredients.
  • Drop by large spoonfuls onto chips or one large one in middle.
  • Sprinkle Monterey Jack cheese over all.
  • Sprinkle tomato and green onion slices over top.
  • Bake in 400 degree oven until cheese is melted.
  • (you can just broil until cheese is melted too if you want).
  • Enjoy!
