FETTUCCINE ALFREDO

Fettuccine Alfredo image

Provided by Tyler Florence

Categories     main-dish

Time 1h45m

Yield 4 servings

Number Of Ingredients 11

3 cups 00 flour or unbleached all-purpose, plus more for dusting
1 teaspoon salt
3 eggs plus 2 yolks
1 tablespoon extra-virgin olive oil, plus 1 tablespoon
1 tablespoon water
Cornmeal, for dusting
1 pint heavy cream
1/2 cup (1 stick) unsalted butter, softened
1 cup freshly grated Parmigiano-Reggiano
Freshly cracked black pepper
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • To make pasta dough: Combine the flour and salt; shape into a mound on your work surface and make a well in the center. Add whole eggs, yolks, and 1 tablespoon olive oil to the well and lightly beat with a fork. Gradually draw in the flour from the inside wall of the well in a circular motion. Use 1 hand for mixing and the other to protect the outer wall. Continue to incorporate all the flour until it forms a ball. Knead and fold the dough until elastic and smooth, this should take about 10 minutes. Brush the surface with remaining olive oil and wrap the dough in plastic wrap; let rest for about 30 minutes to allow the gluten to relax. Divide the ball of dough in small sections, cover and reserve the dough you are not immediately using to prevent it from drying out. Form the dough into a rectangle and roll it through the pasta machine, 2 or 3 times, at widest setting. Pull and stretch the sheet of dough with the palm of your hand as it emerges from the rollers. Reduce the setting and crank dough through again, 2 or 3 times. Continue tightening and rolling until the sheet is about 1/4-inch thick. Keep in mind, overly thick pasta tastes gummy. Cut the long sheet into workable 18-inch pieces. Now, using the fettuccine cutting attachment, run the sheets through the cutting slot. Dust the noodles and a baking sheet with cornmeal. Coil the strands into a nest. Allow to dry for about 10 minutes before cooking.
  • To prepare Alfredo sauce: Heat heavy cream over low-medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Season with freshly cracked black pepper. In a large stockpot, cook pasta in plenty of boiling salted water for 3 minutes. Quickly drain the pasta and add it to the saute pan, gently toss the noodles to coat in the Alfredo. Transfer pasta to a warm serving bowl. Top with more grated cheese and chopped parsley. Serve immediately.

Provided by Elena Silcock

Categories     Dinner, Main course, Supper

Time 25m

Number Of Ingredients 8

1 tbsp olive oil
4 skinless boneless chicken thighs, cut in half
300g fettuccine, or tagliatelle
1 tbsp butter
200ml double cream
½ a nutmeg, grated
100g parmesan
parsley, chopped, to serve

Steps:

  • Heat the olive oil in a non-stick frying pan over a medium high heat. Add the chicken thighs and fry for around 10 mins, turning half way, until they are golden brown and cooked through. Set aside to cool a little, then use two forks to shred.
  • Bring a pan of salted water to the boil and add the pasta, cook for 1 minute less that package instructions. Whilst the pasta is cooking, add the butter to the frying pan over a medium heat, scraping the bottom a little to get any of the browned bits. Tip in the cream along with the nutmeg and bring to a simmer. Add the chicken back to the pan.
  • Once the pasta is cooked, use tongs to transfer the pasta straight from the water into the frying pan with the cream mixture. Sprinkle most of the parmesan over and use the tongs to toss it all together, adding a splash of the pasta water if it looks a little stiff. Season well, then tip into bowls. Top with the remaining parmesan, a scattering of parsley, and black pepper.

FETTUCCINE ALFREDO

Fettuccine Alfredo image

This marvelous recipe is one I got off this newsgroup some months back, but am reposting for the Alfredo request since I have no idea if the original poster is still around to see the new request. Since it isn't mine, I've also included the original poster's notes and attribution. Yummy stuff! Introduction: This is the real thing. You will not find a better Fettuccine Alfredo other than at Alfredo's in Rome, Italy. The secret to his sauce is in the Parmigiano-Reggiano cheese (don't even try this recipe without it), the balance of the pepper and nutmeg. For some reason restaurants never get it right. Be warned that the sauce is heavy. This recipe serves 2. Recipe by Ricardo Batista Fettuccine Alfredo

Categories     Main Course

Time 47m

Number Of Ingredients 20

400 g fettuccine
1 1/2 C raw cashews, soaked for 20 minutes in hot water
1 C fresh water (1/2 a cup if using tofu instead of cashews)
1 tsp apple cider vinegar
1 tbsp lemon juice
2 tbsp olive oil
1 C finely chopped white onion
2 large portobello mushroom caps, thinly sliced
4 C thinly sliced cremini mushrooms
4 garlic cloves, minced
1/2 tsp sea salt
1/2 tsp ground black pepper
1/2 C dry white wine (vegan friendly)
2 tbsp finely chopped fresh basil
1 tsp dried parsley
4 C fresh baby spinach
1 C low-sodium vegetable stock
2/3 C raw cashews
1/4 C nutritional yeast
1 tsp sea salt

Steps:

  • To make the vegan parmesan, combine ingredients together in a food processor until a fine crumb or meal is formed. Store in a jar or container in the fridge. This will last up to 3 weeks.
  • Bring a large pot of salted water to a boil. Cook noodles to al dente. Drain but do not rinse.
  • Meanwhile, rinse and drain cashews from the soaking water and add to a high-powered blender along with water, apple cider vinegar, and lemon juice. Blend until very smooth.

  • Once mushrooms have shrunk and released all their water, add in white wine (or replace with an equal amount of low-sodium vegetable stock, plus 1 to 2 teaspoons of lemon juice) and simmer for 7 minutes. Reduce heat to medium-low, stir in fresh basil and dried parsley, and cook for another minute.
  • Stir in the cashew cream, spinach, and slowly stir in 1 cup of low-sodium vegetable stock. Stir for about 4 minutes.
  • Add noodles to the pan and toss to combine everything well, and coat noodles in sauce for 3 minutes.
  • Add 2 to 3 tablespoons of vegan parmesan and toss to combine. Serve with more vegan parmesan and ground black pepper as garnish.

FETTUCCINE ALFREDO

Fettuccine alfredo image

Hankering for a comforting bowl of pasta in creamy sauce? This sumptuous Italian dish is for you. It takes just 25 minutes so it's an easy midweek meal

Provided by Orlando Murrin

Categories     Dinner, Lunch, Main course, Supper

Time 25m

Number Of Ingredients 7

227g tub clotted cream
25g butter (about 2 tbsp)
1 tsp cornflour
100g parmesan, grated
freshly grated nutmeg
250g fresh fettuccine or tagliatelle
snipped chives or chopped parsley, to serve (optional)

Steps:

  • In a medium saucepan, stir the clotted cream, butter and cornflour over a low-ish heat and bring to a low simmer. Turn off the heat and keep warm.
  • Meanwhile, put the cheese and nutmeg in a small bowl and add a good grinding of black pepper, then stir everything together (don't add any salt at this stage).
  • Put the pasta in another pan with 2 tsp salt, pour over some boiling water and cook following pack instructions (usually 3-4 mins). When cooked, scoop some of the cooking water into a heatproof jug or mug and drain the pasta, but not too thoroughly.
  • Add the pasta to the pan with the clotted cream mixture, then sprinkle over the cheese and gently fold everything together over a low heat using a rubber spatula. When combined, splash in 3 tbsp of the cooking water. At first, the pasta will look wet and sloppy: keep stirring until the water is absorbed and the sauce is glossy. Check the seasoning before transferring to heated bowls. Sprinkle over some chives or parsley, then serve immediately.

CREAMY FETTUCCINE ALFREDO

Creamy Fettuccine Alfredo image

This a a very creamy alfredo sauce. I found it in my sister's cookbook when I was looking for recipes one day. She had never tried it and doesn't know where she got it from. I decided to give it a try and haven't stopped making it since. It is one of my husbands favorite recipes I make. I also have a few other fans in the family too. It is very easy and quick. Try adding chicken and shrimp to the alfredo sauce. It's delicious! I gave you the details below. I made some changes to the way I make the recipe so I will just give you the directions for how I make it, not what the recipe says.

Provided by Chef 495452

Categories     < 30 Mins

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

1 (8 ounce) package Philadelphia Cream Cheese, cubed (you can use 1/3 less fat if you prefer)
3/4 cup kraft grated parmesan cheese (NOT THE POWDER KIND!!!)
1/2 cup Parkay margarine (I use butter)
1/2 cup milk (you will mostly likely use 1 cup to 1 1/2 cups throughout the entire simmering process)
8 ounces fettuccine, cooked, drained
1 boneless chicken breast, uncooked, if desired
1/2 lb deveined and peeled shrimp, uncooked, if desired

Steps:

  • Go ahead and start your boiling water for the fettuccine noodles and let them cook while you are preparing the sauce.
  • **This is the way I make it: In a large saucepan, on LOW to MEDIUM heat, begin melting the cream cheese first and then add the butter so it will not burn. Once the cream cheese is almost melted, add the milk. Once the milk gets warm or hot, add the freshly grated parmesan cheese. As the mixture thickens, add more milk to the amount of your desire, probably an additional 1/2 cup of milk, maybe even 1 additional cup of milk. Be careful or you will add too much and it will not thicken anymore. Keep stirring as you are simmering on LOW heat until smooth.
  • ***I like to add chicken and shrimp to the fettuccine mixture too. (In a separate saucepan, cook the chicken with some olive oil, Mrs. Dash original, Lawry's garlic salt blend and salt and pepper. Once the chicken is nearly cooked go ahead and add the shrimp since it doesn't take as long to cook. After the chicken and shrimp are cooked completely, add it to the alfredo mixture. Serve the sauce with chicken and shrimp in one serving dish and your fettucine noodles in a different dish. Enjoy!

CREAMY CAULIFLOWER ALFREDO

Creamy Cauliflower Alfredo image

The key to a tasty fettuccine alfredo is a creamy sauce. By cooking and blending cauliflower to a smooth puree, you get the creamy mouthfeel of butter and cream without the high calories and fat.

Provided by Food Network Kitchen

Time 1h

Yield 4 servings

Number Of Ingredients 12

2 cups cauliflower florets, about 8-ounces
1 cup low-sodium chicken broth
8 ounces whole grain fettuccine pasta
1 teaspoon extra-virgin olive oil
2 cloves garlic, minced
1/2 cup low-fat evaporated milk
Kosher salt and freshly ground pepper
3/4 cup frozen petite peas, thawed, (4 ounces)
1/4 cup grated Parmesan cheese
1 tablespoon unsalted butter
1 tablespoon chopped fresh parsley, plus extra for garnish
1 1/2 teaspoons finely grated lemon zest

Steps:

  • 1. Put the cauliflower, broth, and 1 cup water in a small pot; bring to a boil over medium-high heat. Adjust the heat to maintain a simmer and cook until the cauliflower is very soft, 25 to 30 minutes. Remove from the heat and cool 5 minutes. Carefully puree cauliflower and all the liquid in a blender until very smooth; set aside.
  • 2. Meanwhile, bring a large pot of salted water to a boil and cook the pasta until al dente, 8 minutes. Drain well, reserving about 1 cup pasta cooking water.
  • 3. Heat the oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Add the cauliflower puree and evaporated milk and bring to a simmer. Cook until slightly thickened, 5 minutes and season with salt and pepper. Stir in the peas until heated through, 2 minutes. Toss in the cooked pasta, Parmesan cheese and about 1/2 cup of pasta water until the noodles are coated but the sauce is still loose. Remove from the heat and toss in the butter, chopped parsley and lemon zest. (If the sauce seems thick, adjust the consistency with the remaining pasta water). Serve immediately sprinkled with chopped parsley.

FETTUCCINE ALFREDO

Fettuccine Alfredo image

I can't remember where I came across this recipe but it was on the web somewhere. There isn't another exactly like it here at recipezaar. I like it because it doesn't use cream cheese which I think is cheating a bit. I don't think you would find cream cheese in the traditional italian dish. This dish requires constant attention so be advised!

Categories     < 30 Mins

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 8

1/2 cup butter, no substitutes
1 pint heavy whipping cream
1 teaspoon garlic powder
salt and pepper
1 dash cayenne pepper
2/3 cup grated parmesan cheese
16 ounces fettuccine
chopped parsley (to garnish)

Steps:

  • In a 2 quart saucepan over medium-low heat melt butter; add cream, garlic powder, salt, and peppers; simmer for 20-30 minutes stirring constantly, until thick.
  • Meanwhile, cook fettuccine noodles according to package directions, coordinating so that the sauce and noodles are done about the same time. This is important because if the sauce cooks too long it will separate and though it will still taste great it won't look pretty!
  • Remove sauce from heat and stir in cheese. Do not heat sauce after cheese has been added.
  • Serve sauce over hot fettuccine noodles and sprinkle with parsley if desired.

  • Bring a large pot of salted water to a boil. Add the cauliflower and boil until the cauliflower is fork tender, 8 to 10 minutes. Drain and place the cauliflower in a blender. Add the Parmesan cheese, olive oil, garlic, mustard, butter, lemon juice, salt, and several grinds of pepper.
  • Cook the pasta in a large pot of salted boiling water according to package directions or until al dente. Drain the pasta, reserving 1½ cups of the starchy pasta water. Add 1 cup of the pasta water to the blender and blend the sauce until creamy.
  • Transfer the pasta to a large bowl or skillet. Add the sauce and toss to coat. If the sauce is too thick, add the remaining ½ cup pasta water and toss again to loosen the sauce and make it a bit creamier.

  • Meanwhile heat the milk and cream in a saucepan just until warm; don’t let it come to a simmer (you can also do this in a microwave).
  • While the milk is heating, melt the butter in large deep skillet over medium heat, then add the garlic cloves and stir for 1 minute, just until you can smell the garlic and it turns golden. Add the flour and stir for about 3 minutes until the flour is well incorporated and the mixture starts to lightly brown. Very slowly pour the warmed milk mixture into the flour mixture, whisking constantly until all of the milk mixture is added, and the sauce is smooth. Bring to a gentle simmer and continue to cook, whisking frequently, until the mixture thickens. Add the parmesan in a few batches, whisking after each addition until the cheese is melted and smooth. Season with salt and pepper, and whisk in the parsley.
  • When the pasta is cooked, drain it, and then add it to the skillet with the sauce. Turn off the heat and toss (tongs are good for this), until the pasta is well coated with the sauce. Serve immediately with red pepper flakes, if desired.
