Creamy Farfalle with Shrimp image

This is so easy and amazing, it feeds an army. It is fresh and flavorful. I made this for my mom and some friends, they loved. On the day we were making marmalade and bread and butter pickles, I figured I would make this, this is my own recipe. I hope everyone enjoys it.

2 1/2 Tbsp olive oil, extra virgin
3 clove garlic, minced
2 tsp rosemary sprigs (cut)
2 tsp coarse sea salt (pink)
1 tsp thyme, leaves (cut)
5 sprig(s) basil, fresh (cut)
1/2 c orange bell pepper (chopped)
1/2 c yellow bell pepper (chopped)
3/4 c sweet red pepper (chopped)
1 c green onion tops (chopped)
1 c wine, dry white
8 oz cream cheese, room temperature
1 pt heavy cream
2 lb shrimp, shelled
1 1/2 c parmesan cheese fresh grated
1 c roma tomatoes (chopped)
2 box bow-tie pasta, cooked and drained (aldente)
2 tsp sea salt (for pasta)
EXTRA PARMESAN FOR SERVING

Steps:

  • 1. Prep Veggies and Herbs, set aside. Wash and drain shrimp, place on paper towel to drain and pat dry. Place olive oil in large saute skillet, brown garlic, rosemary, thyme, in saute skillet. Be sure not to burn, add in shrimp sprinkle pink sea salton top of shrimp and saute on both sides approx 2 min per side till it has a touch on golden seare on it. Remove shrimp from pan, set aside.
  • 2. Start pasta, and add sea salt to the water, should be aldente. Pour in wine to deglaze pan, add in cream cheese, stir constantly with wisk till sauce begins to form. Add 2 fine cut leaves of basil Stir in cream with whisk, add fresh parmesan cheese stirring constantly, sauce will be slightly thick. Place shrimp back in to pan, turn heat down and let simmer uncovered approx 10 min.
  • 3. Drain and rinse pasta (aldente), place in large pasta bowl. Pour sauce onto pasta, fold in. Add in all vegetables except basil and fold in carefully. Sprinkle fine cut basil on top, serve immediately, sprinkle parmesan on top at serving with garlic toast or bread sticks.

1/4 cup extra virgin olive oil
1/4 cup Chardonnay wine
1/8 cup balsamic vinegar
1 teaspoon fresh rosemary, finely diced
3 cups heavy whipping cream
2 tablespoons unsalted butter
1 teaspoon red pepper flakes
1/2 teaspoon fresh ground pepper
1/4 cup shredded pancetta
3 ounces romano cheese, fresh grated
1/4 cup mozzarella cheese, grated
1/4 cup sun-dried tomato
1 cup Chardonnay wine
1/2 cup green onion, sliced
2 lbs jumbo shrimp, peeled
2 tablespoons butter
6 -8 garlic cloves, pressed
1 teaspoon lemon pepper

Steps:

  • In a large bowl combine chicken olive oil, Chardonnay, balsamic vinegar and rosemary (rosemary must be fresh, dried cannot be substituted). Cover, refrigerate and marinate for at least 1hr.
  • Cook cream over low heat in a large sauce pan stirring constantly. Add butter, red pepper flakes, black pepper & pancetta.
  • Reduce cream by 1 third. Slowly stir in romano and mozerella cheeses and sundried tomatoes, adding chardonay as needed to maintain desired consistancy.
  • Heat skillet and add chicken with all ingredients from marinade. Cook over medium-high heat till thorouly cooked and browned on both sides. Slice into bite size pieces and add to cream sauce.
  • In a separate pot bring water to boil for the pasta and add pasta.
  • Heat butter in skillet add shrimp garlic and sprinkle with lemon pepper. Do not overcook shrimp.
  • Serve shrimp over sauce and pasta.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
2 cups grape tomatoes

8 fresh basil leaves, cut into strips

Steps:

  • Cook pasta as directed on package, omitting salt. Meanwhile, heat 2 Tbsp. dressing in large skillet on medium heat. Add shrimp; cook and stir 2 to 3 min. or until shrimp turn pink. Use slotted spoon to remove shrimp from skillet; cover to keep warm. Discard any drippings in skillet.
  • Add remaining dressing, broth and seasonings to skillet; cook 2 min. or until heated through, stirring frequently. Add Neufchatel; cook and stir 2 to 3 min. or until melted. Stir in tomatoes; cook 1 min.
  • Drain pasta. Add to ingredients in skillet. Stir in Parmesan and half the basil; top with shrimp and remaining basil.

1 pound shrimp
1 pound asparagus
1 medium onion, chopped
1 clove garlic, minced
3 tablespoons olive oil
1 1/2 cups chopped Italian tomatoes, with their juice
3/4 cup dry white wine
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
1 pound farfalle
Coarse salt and freshly ground pepper
2 tablespoons flat-leaf Italian parsley

Steps:

  • Peel the shrimp. Trim the tough ends of the stalks from the asparagus. With a vegetable peeler, pare away any tough skin from the lower half of the stalk. Cut the asparagus into 1 1/2-inch pieces.
  • Cook the asparagus in boiling salted water until barely tender. Rinse under cool running water and drain well. Set aside.
  • Meanwhile, sauté the onion and the garlic in 2 tablespoons olive oil until soft. Add the tomatoes, wine and thyme and simmer gently for 20 minutes, covered. Bring 6 quarts salted water to boil for the farfalle.
  • Cook the farfalle until al dente. While it is cooking, add the shrimp to the sauce, cook for 3 minutes, stirring, then add the asparagus and heat through. Correct seasoning.
  • Drain the farfalle and toss the pasta in a heated bowl with the remaining tablespoon of olive oil. Then add the sauce and toss well. Serve immediately. Sprinkle with parsley. This needs no cheese.

Creamy seafood pasta that's easy to whip up during busy weeknights!

1/2 pound farfalle pasta
1 Tablespoon butter
1 large clove (or 2 small cloves garlic, minced)
6 oz canned smoked salmon
1/2 cup frozen or fresh peas
1 Tablespoon flour
1/4 cup heavy cream (or almond milk or full fat coconut milk)
1/4 cup white wine
1 teaspoon fresh lemon juice
1/4 cup freshly grated parmesan cheese
1 teaspoon finely chopped mint leaves

Steps:

  • Cook pasta according to package directions.
  • Meanwhile, in a large skillet, heat butter over medium heat. Add garlic and saute for 1 minute.
  • Add canned salmon (as much or as little of the can as you would like) and peas, saute for 1 minute. Sprinkle flour over salmon and peas, then mix in well, sauteeing for another minute.
  • Slowly pour in heavy cream. Mix, then slowly add white wine, lemon juice, and parmesan cheese.
  • Lower heat to low-medium, and continue stirring sauce with salmon and peas until sauce is slightly thickened.
  • Add cooked pasta along with 1/4 cup hot starchy pasta water reserve.
  • Stir pasta, sauce, salmon, and peas together until well blended. Turn off heat.
  • Add mint leaves, stir.
  • Top off with some freshly grated parmesan if you wish.
  • Serve immediately.

12 oz farfalle noodles
2 Tbsp olive oil
8 oz sliced white mushrooms
1/2 c frozen corn niblets, thawed
1/2 c sliced celery
1/2 c diced red pepper
1 large shallot, diced
1 garlic clove, minced
8 oz frozen 26-30 count peeled raw shrimp, thawed
1/4 c cornstarch
1/2 c chicken stock
1 1/2 c heavy cream
1 tsp seafood seasoning
1 tsp dried basil leaves
1/2 c freshly grated parmesan cheese

Steps:

  • 1. Cook farfalle noodles according to package directions. Rinse, drain, cover and keep warm.
  • 2. Heat remaining olive oil in a 10-inch non-stick skillet over medium heat. Add mushrooms, corn, celery, red pepper, shallot and garlic. Cook and stir for 2 minutes.
  • 3. Add shrimp. Cook and stir until shrimp is almost fully cooked.
  • 4. In a small bowl, whisk cornstarch into chicken stock; stir into shrimp mixture along with the cream, seafood seasoning and basil leaves. Cook and stir over medium heat until mixture is hot and thickened. Remove from heat.
  • 5. Place farfalle noodles onto serving plates. Generously top with sauce. Sprinkle with Parmesan cheese.
