This is my favorite punch recipe, from an issue of Taste of Home magazine. We have enjoyed it on special occasions for the last 8 years because it's so tangy and refreshing just as punch should be. But, I will often freeze half of the punch base separately and keep it in the freezer for a family breakfast or a hot summer day. The first 5 ingredients make 3 quarts of frozen base. The final two ingredients are for serving.

6 medium ripe bananas
1 (12 ounce) can frozen orange juice concentrate, thawed
1 (6 ounce) can frozen lemonade concentrate, thawed
3 cups water, divided in half
2 cups sugar, divided in half
1 (46 ounce) can pineapple juice
3 (2 liter) bottles carbonated lemon-lime beverage
orange slice (optional)

Steps:

  • In a blender or food processor, blend bananas, orange juice and lemonade until smooth.
  • Remove half of the mixture and set aside.
  • Add 1-1/2 cups of warm water and 1 cup of sugar to remaining mixture in blender; blend until smooth.
  • Place in a large freezer container.
  • Repeat with remaining banana mixture, water and sugar; add to container.
  • Cover and freeze until solid.
  • One hour before serving, take punch base out of freezer.
  • Just before serving, place in a large punch bowl.
  • Add pineapple juice and soda; stir until well blended.
  • Garnish with orange slices if desired.

3/4 cup thawed lemonade concentrate
3 cups warm water, divided
2 cups sugar, divided
1 can (46 ounces) pineapple juice, chilled
3 bottles (2 liters each) lemon-lime soda, chilled
Orange slices, optional

Steps:

  • In a blender, cover and process the bananas, orange juice and lemonade until smooth. Remove half of the mixture and set aside. Add 1-1/2 cups warm water and 1 cup sugar to blender; blend until smooth. , Place in a large freezer container. Repeat with remaining banana mixture, water and sugar; add to container. Cover and freeze until solid. , One hour before serving, remove punch base from freezer. Just before serving, place in a large punch bowl. Add pineapple juice and soda; stir until well blended. Garnish with orange slices if desired.

6 cups water
4 cups white sugar
5 bananas
1 (46 fluid ounce) can pineapple juice
4 (6 ounce) cans frozen orange juice concentrate
2 (6 ounce) cans frozen lemonade concentrate
2 ½ (2 liter) bottles lemon-lime flavored carbonated beverage (such as 7-Up®)
2 oranges, sliced for garnish

Steps:

  • Combine water and sugar in a large pot; bring to a boil. Cook and stir until the sugar dissolves, about 3 minutes. Cool in the refrigerator.
  • Put 1 banana and about 1 cup pineapple juice in a blender; blend until smooth. Repeat until all bananas are pureed into pineapple juice; stir into the pot with the simple syrup. Add orange juice concentrate and lemonade concentrate to the pot; stir. Divide the mixture into smaller containers and freeze until mostly solid.
  • Put frozen mixture into a large punch bowl. Thaw until slushy, but stirrable. Stir lemon-lime carbonated beverage into the punch bowl. Garnish with orange slices.

1 (12 ounce) can frozen lemonade
1 (46 ounce) can pineapple juice
6 large bananas, ripe
6 (28 ounce) bottles ginger ale (or any lemon-lime drink)

Steps:

  • Dissolve sugar in water. Mash bananas and add all juices. (By using some of the lemonade over the bananas as theya re mashed or blended, the natural color is kept." Freeze in containers of your choice. Remove from freezer 2 hours before serving. Add ginger ale. No ice is needed.

Steps:

  • Combine sugar and water in a saucepan; cook, stirring constantly, until sugar dissolves.
  • Cool completely.

  • Combine bananas, dissolved sugar mixture, juices and lemonade in a large freezer container (a plastic 1-gallon milk carton works well).
  • To serve, thaw until slushy.

It is no secret that I am a die-hard nanner fan. I love nanners any way I can get 'em. However, I think my favorite way to have them is in a flavorful drink. This recipe I got from an ancient cookbook compiled by home ec teachers. Miz Knaus (whoever you are), I salute you!! (Passive time is freeze time - it will vary depending on how firm you freeze it and how far ahead you make it. I would make it the day before serving, so I said 8 hours (overnight).

2 lemons, juice of
5 bananas, mashed well
5 (2 liter) bottles carbonated lemon-lime beverage
frozen raspberries (optional)

Steps:

  • Combine the sugar and water in a large pot and bring to a boil. Cool.
  • Add the fruit juices and bananas and mix well. Place in a container and freeze.
  • When ready to serve, plae the fruit mixture in a punch bowl. Allow to soften slightly. Break into slush.
  • Add the soda, raspberries if using, and tint with food coloring if desired.

BRAZIL NUT & BANANA CRUNCH SATURDAES

Make the crunchy caramel and sauce ahead and these grown-up ice cream sundaes will take just a few minutes to assemble

150g pack Brazil nut , roughly chopped
a little vegetable or sunflower oil
175g golden caster sugar
2 x 500ml tubs good quality vanilla ice cream
2-3 ripe bananas
100g bar dark chocolate (70% cocoa)
1 tsp ground cinnamon
150ml pot double cream
150ml whole milk
1 tbsp golden syrup

Steps:

  • Toast the Brazils on a baking sheet at 180C/160C fan/gas 4 for 10 mins. Tip onto a separate lightly oiled baking sheet. Gently heat the sugar in a non-stick pan for about 5 mins until it melts, then let it bubble into a dark golden caramel, swirling it around the pan if it colours patchily. Pour the caramel over the nuts and allow to cool. Once cold, put half of the nutty caramel into a food processor and whizz until grainy. Smash the rest with a rolling pin to give nobbly shards. Can be made up to 3 days ahead and kept in an airtight container.
  • Soften the ice cream for 10 mins, scoop into a large bowl or tub, then use electric handheld beaters to beat until smooth and thick. Fold half of the fine, nutty caramel through it, then re-freeze. On the day of your party, scoop the ice cream, then return the scoops to the freezer on a tray. This will make assembling the puds really simple.
  • For the sauce, put all the ingredients in a pan, then gently heat until melted and smooth. Make up to 3 days ahead if you like, then gently reheat.
  • To serve, slice the bananas. Spoon a little of the whizzed caramel into the bottom of 6 glasses. Add some banana, then a scoop of ice cream. Drizzle with warm sauce, add some more banana, a little more sauce, then top with shards of Brazil nut caramel.

5 mashed bananas
1 can frozen orange juice
1 can frozen lemonade

2 quarts 7-Up soda (ROOM TEMP)

Steps:

  • BRING WATER AND SUGAR TO A BOIL.
  • BOIL FOR 3 MINUTES AND LET COOL.
  • MAKE FROZEN JUICES ACCORDING TO CAN DIRECTIONS.
  • MIX BANANAS AND ALL JUICES TOGETHER, THEN ADD THE SUGAR WATER.
  • FREEZE MIXTURE.
  • LET THAW 2 OR 3 HOURS BEFORE SERVING.
  • JUST BEFORE SERVING, ADD THE 7 UP, SLOWLY.
  • SERVE WHILE STILL SLUSHY.
  • ENJOY!!
