1 head green cabbage, cored and separated into 12 leaves
2 tablespoons olive oil
1 cup chopped onion
1/2 cup chopped green pepper
2 cloves garlic, chopped
8 ounces ground round
1 teaspoon thyme
salt & pepper
2 cups crushed tomatoes
1 1/2 cups cooked white rice
1/2 cup chicken stock
3 tablespoons chopped parsley

Steps:

  • In a pot of salted boiling water, cook the cabbage leave for about 2 minutes. Drain on paper towels and allow to cool.
  • Heat oil in a large skillet and cook onions until tender. Stir in green pepper and garlic and cook for three minutes. Stir in crumbled ground round and cook until meat is browned. Add thyme and season to taste. Stir in 1 cup crushed tomatoes and simmer gently for 2 minutes. Stir in cooked white rice and toss to coat. In a small bowl, mix together 1 cup crushed tomatoes and chicken stock and spread out in bottom of baking dish.
  • Preheat oven to 350 degrees. Lay each cabbage leaf out flat ad place about 3/4 cup of rice mixture in center of leaf. Fold in sides of leaf and roll up. Place seam side down in baking dish. Cover dish with foil and bake for 20-30 minutes. Serve each cabbage roll up with a little sauce and garnish with chopped parsley

1/4 cup Dijon mustard
20 mini hot dogs or cocktail franks
1 egg, lightly beaten
Poppy seeds or sesame seeds
Tangy Dipping Sauce, recipe follows
1/2 cup sour cream
1/2 cup mayonnaise
3 tablespoons Dijon mustard
1 tablespoon whole-grain mustard

Steps:

  • Preheat the oven to 350 degrees F.
  • Cut each triangle of crescent roll dough into thirds lengthwise, making 3 small strips from each roll.
  • Brush the dough strips lightly with Dijon mustard. Put the mini hot dogs on 1 end of the dough and roll up.
  • Arrange them, seam side down, on a greased cookie sheet. Brush with egg wash and sprinkle with poppy seeds or sesame seeds. Bake until golden brown, about 12 to 15 minutes. Serve warm with the dipping sauce.
  • Mix all of the ingredients in a bowl. Cover with plastic wrap and refrigerate until serving. Can be made a day ahead.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Wrap cheese around each frankfurter then the biscuit around that. Put on cookie sheet with the overlap of biscuit faced down, so you don't have to use tooth picks.

I started with Mom's recipe and modified it over the 25 years of my marriage. Also I learned a method of rolling the "pigs" from one of Martha Stewart's books.

2 lbs lean ground beef
1 lb pork sausage
1 1/2 tablespoons garlic salt
1 tablespoon sweet paprika
1/2 teaspoon black pepper
2 cups white rice, cooked and cooled
1 large cabbage
2 (28 ounce) cans whole canned tomatoes, crushed with a fork
32 ounces chicken broth (organic or homemade is best)
olive oil, to coat roasting pan
salt and pepper

Steps:

  • Wilt head of cabbage in large pot of boiling water for 5 minutes. Remove cabbage from pot, cool slightly and separate leaves, taking care not to break the leaves.
  • Mix ground beef, sausage, cooked rice, garlic salt, paprika and pepper. Form 3 inch balls. Place meatball into cabbage leaf and fold leaf around the ball. Place roll into a large square of cheesecloth, cover and twist ends of the cloth to shape and tighten the roll. Remove cabbage roll and repeat until all filling is used.
  • In a large roasting pan which has been coated with olive oil, place layer of cabbage rolls (folded side down), cover with 1 can of tomatoes, and repeat. Pour chicken broth over the layers.
  • Preheat oven to 325 degrees F. Cover roasting pan and bake for 2 hours or until until cabbage is tender. Serve with mashed potatoes.

I live in Holland, Michigan and these are just a few of the "traditional" recipes I've collected from people I know who probably brought them from "the old country." Enjoy! (Serving size is two pigs, or approx. 15 servings per recipe.)

3 cups flour
1 cup margarine
3 tablespoons baking powder
1 teaspoon salt
1 cup milk
3 lbs sausage

Steps:

  • Divide sausage, forming 30 to 36 "Pigs".
  • (About half the length of a hot dog) Do not roll in hands, form carefully with finger tips or fork.
  • Sift together flour, baking powder and salt. Cut in margarine as for pie dough.
  • Mix in milk, form into smooth ball.
  • Roll dough to 1/4 inch thickness, cut into strips about 3 1/2 inches wide. Wrap "pig" loosely in dough, overlapping on the bottom.
  • Do not pinch ends shut. Prick top of each "pig" with a fork.
  • Place on ungreased cookie sheets, bake 15 minutes at 400 degrees, then 15 minutes at 350 degrees until brown.
  • May be frozen up to 4 months.

We always made these at harvest time when the neighbors got together and filled silo. This is how I learned to make them from my grandmother.

1 head cabbage
1 1/2 lbs ground beef
1 cup rice, cooked
1 onion, chopped
1 cup tomato juice
1 cup water
salt and pepper

Steps:

  • Brown ground beef and onion. Salt and pepper to taste. Drain grease. Stir together rice and browned ground beef and set aside.
  • Bring a large kettle of water to a boil and remove from heat.
  • Carefully remove 16 leaves from the head of cabbage and put leaves in the water and let set until wilted.
  • Remove a leaf from the water with tongs, take a good sized tablespoon of the hamburger-rice mixture into the leaf and wrap leaf around the burger mixture. May need to secure with a toothpick to keep closed.
  • Place in a greased 9x13 pan.
  • Repeat with remaining leaves and burger mixture.
  • When you have used all the mixture, pour tomato juice and water over top of cabbage rolls.
  • Cover and bake for an hour at 325.

This is so much fun. I find the price of these, premade in the freezer section, to be excessive. That was my first motivator to attempt to make them (somewhat) at home... Then, more important things came into play: They taste better when rolled and baked fresh. They are fun to make. It's just enough cooking when you feel like a project that doesn't take up too much time. The pretzel flavor makes these special. It's pizza dough with the baking soda "bath" that gives you the pretzel vibes.

1 1/2 cups warm water (about 110 degrees F)
One 1/4-ounce package active dry yeast (2 1/4 teaspoons)
3 1/2 cups all-purpose flour, plus additional for dusting
1 tablespoon extra-virgin olive oil, plus additional for greasing
1 scant tablespoon honey
1 teaspoon kosher salt
6 tablespoons grainy Dijon mustard
2 tablespoons honey
1 tablespoon hot sauce, such as Tabasco
1 tablespoon red wine vinegar
Nonstick cooking spray, for the parchment, optional
One 12-ounce package mini hot dogs (32 to 36 pieces)
1/2 cup baking soda
2 to 3 tablespoons pretzel or kosher salt
Melted unsalted butter, for brushing

Steps:

  • For the dough: In a bowl, combine the warm water and yeast. Stir to dissolve the yeast and allow the mixture to rest for 5 minutes.
  • Using a sieve or strainer, sift about half of the flour over the yeast mixture and mix with your hands until smooth. Add the oil, honey and kosher salt. Sift over the remaining flour and mix to combine.
  • Lightly flour a cutting board or flat surface. Turn the dough onto the floured area and knead until the dough is smooth and the ingredients are fully integrated, 3 to 5 minutes. Lightly oil a bowl and place the dough inside. Cover with plastic wrap and let it rest in a warm place until it has doubled in volume, about 1 1/2 hours.
  • For the mustard sauce: In a medium bowl, whisk the mustard, honey, hot sauce and vinegar with a splash of warm water. Taste for seasoning. Set aside.
  • Preheat the oven to 375 degrees F.
  • For the pretzel-ish pigs in a blanket: Line 2 baking sheets with parchment paper sprayed with nonstick cooking spray or silicone baking mats and set aside. Sprinkle some flour on a flat surface. Roll the dough out into an 18-by-13-inch rectangle about 1/4 to 1/2 inch thick. Cut into 2 1/4-inch squares. Roll each mini hot dog in a single piece of the dough. Pinch the seam and ends to firmly close, tucking the excess on the ends underneath. Place each wrapped hot dog seam-side down on one of the prepared baking sheets.
  • For the baking soda bath: Prepare a third baking sheet or large platter with parchment. In a medium pot, bring about 6 cups of water to a boil over medium heat. Slowly whisk in the baking soda a bit at a time. Working in batches, use a slotted spoon to drop each pig in a blanket into the water for 30 seconds, then remove and transfer to the prepared third baking sheet or platter.
  • Transfer the pigs in a blanket in a single layer back onto the original baking sheets, allowing some space between each. Sprinkle the dogs with the pretzel salt or kosher salt. Bake in the center of the oven until the pastry is nicely browned, 25 to 30 minutes. Lightly brush with melted butter before serving. Serve with the mustard sauce on the side.

3 tablespoons toasted wheat germ
1/4 cup chilled vegetable shortening
1/3 cup buttermilk or plain yogurt
1 large egg yolk
10 frankfurters, ends trimmed and frankfurters halved crosswise

Steps:

  • Preheat oven to 375°F. and grease a large baking sheet.
  • In a bowl, whisk together flour, baking powder, baking soda, salt and wheat germ. Blend in shortening with a pastry blender or your fingertips until mixture resembles coarse meal. In a small bowl whisk together buttermilk or yogurt and yolk and stir into flour mixture, stirring until mixture just forms a moist dough.
  • Knead dough 4 times on a floured surface and with a floured rolling pin roll out into a 12-inch square. Cut dough into 1 1/2-inch-wide strips and roll a strip around middle of a frankfurter until dough just overlaps. Cut pig-in-blanket free from strip and make 19 more pigs-in-blankets in same manner, arranging them, seam sides down, as they are made on prepared baking sheet. Pigs-in-blankets may be prepared up to this point 1 day ahead and chilled, covered.
  • Bake pigs-in-blankets in upper third of oven until pale golden, about 15 minutes. Makes 20 pigs-in-blankets.

1-1.5 pounds Little Smokies
(2) 8-ounce cans Crescent Rolls

Steps:

  • Preheat your oven to (375°F) = (190°C). Place some parchment paper on your cookie sheets, it makes the clean-up so much easier. You can also place the pigs in a blanket on an ungreased cookie sheet. Unwrap the packages of crescent rolls. Spread them out, you should have 16 triangles. (8 triangles in each package of crescent rolls). Cut each triangle lengthwise into narrow long triangles. Place a sausage link on the widest end of each triangle. Then start rolling the pigs in a blanket to the skinny end of each triangle. Tuck the end under when you place them on the cookie sheet. Be sure to space them far enough apart so they have room to puff up a little while cooking. Bake for 12-15, or until golden brown. Serve warm from the oven with ketchup, mustard, ranch salad dressing, or your favorite dipping sauce. Enjoy.
