RED CREOLE CRAWFISH GUMBO
Gumbo is one of the oldest beloved Creole and Cajun cuisines in Louisiana, Gumbo is as much of a cultural symbol of as the bayou or jazz music heard playing in the French Quarters of New Orléans.

Steps:
- Wash the fresh okra in cold tap water; then trim the stems and tips from the okra, cut into rounds.
- Heat the peanut oil in a large Gumbo pot over medium-high heat.
- Add the andouille sausage and cook, stirring often, to render out the fat, about 6-7 minutes.
- Add the fresh okra to the Gumbo pot and cook, stirring constantly, for 8 to 10 minutes
- Add the diced tomatoes, onions, green bell peppers, celery, and garlic and cook, stirring often, for 8 minutes, or until the okra and other vegetables are tender. Remove from the Gumbo pot and set to the side in a clean bowl till needed.
- Add 3 tablespoons of peanut oil to Gumbo pot, let heat then add 3 tablespoons of all-purpose flour to the oil; cook stirring constantly till it becomes an amber color. Careful not to scorch the roux. Reduce the heat to the lowest setting.
- One roux is done; place the veggies back to Gumbo pot; add the Creole seasoning, bay leaves, fresh chopped parsley, dried thyme, oregano, cayenne, kosher salt, freshly ground pepper, and the vegetable Stock to the Gumbo pot, turn heat up to medium-high heat.
- Stir the Gumbo pot and bring the contents to a low boil. Reduce the heat under the Gumbo pot to medium and simmer on low, uncovered, for about 45 minutes to 1 hour.
- Add the crawfish and cook, stirring occasionally, for 8 minutes.
- Remove the bay leaves, garnish with the parsley and green onion tops, and serve in shallow bowls over white rice.

SUNNY'S BIG EASY CHICKEN AND ANDOUILLE FILE GUMBO

Steps:
- Add the oil, chicken and sausage rounds to a stockpot on medium-high heat. Sear the chicken to get color and sausage to get color and render fat, but not to cook fully. As the parts finish searing, use a slotted spoon to remove them and place on a plate, leaving the fat in the pot, about 10 minutes total.
- Add the butter, flour and Cajun seasoning to the pot. Cook on medium heat, constantly stirring, until the roux becomes a rich, dark caramel color, 10 to 15 minutes.
- Add the bell peppers, onions, celery, jalapenos and garlic. Season with salt and pepper. Cook, stirring, to coat, until everything gets tender, 5 to 8 minutes, then add the stock base and 8 cups water and stir to mix the base into the pot. Add the bay leaves and cover the pot to simmer until the gumbo is thickened, 30 minutes to 1 hour.
- Add the reserved chicken and sausage, then stir in the file powder. Simmer, uncovered, for another 30 minutes.
- Shred the chicken in the pot. Serve over rice with a shake of hot sauce and file powder.
PASTA JAMBALAYA WITH CRAWFISH AND ANDOUILLE SAUSAGE
Steps:
- Fill a large 1-gallon stock pot with a pasta insert three-quarters full with water. Bring to a boil over high heat and add the salt as it boils. Place the angel hair in the salted water and return to a boil, stirring occasionally. Cook the pasta until nearly al dente, about 8 minutes. Drain and set aside.
- While the pasta is cooking, heat a large saute pan over medium-high heat and add the olive oil, sausage and onions and saute, stirring occasionally, until the sausage is lightly caramelized and the onions are translucent. Add the garlic to the pan, and then add the zucchini, bell peppers, tomatoes and thyme. Cook until the vegetables are tender, about 3 minutes. Add the heavy cream to the pan and cook an additional 2 minutes. Add the crawfish and basil. Add the al dente pasta and continue to cook the sauce and pasta, stirring occasionally. Remove from the heat and add the seafood seasoning and Parmesan.
CRAWFISH AND ANDOUILLE SAUSAGE PIZZA
Steps:
- Dough:
- In a food processor or mixer with a dough hook, combine the yeast, sugar and 3/4 cup water. Allow the yeast to proof for about 5 minutes, (bubbles will form around the outer edges).
- Add the oil, flour, and salt. Begin processing or mixing the ingredients, slowly pouring in the remaining 1 cup of water. Mix until the dough balls together and is shiny and elastic, about 5 minutes. Add a little olive oil to a large bowl and spread evenly around the bowl to prevent the dough from sticking. Add the dough, cover with plastic wrap and put in a warm spot (I use the microwave oven) for about 2 hours. Punch the dough down and let it rise again, about another 2 hours. I prefer to make my dough early in the day for evening dinner or a day ahead.
- Sauce:
- Combine all the ingredients in a small saucepan and simmer over medium-low heat until the sauce is slightly thickened, about 30 minutes.
- I use 2 ovens when I cook my pizzas, 1 oven is preheated to 450 degrees F with a "Hearth-kit" in it, and the other oven is preheated at 500 degrees F with a pizza stone. Heat the stones for at least 1 hour before baking pizzas.
- Assembly:
- Divide the dough into 4 equal portions. Roll out dough until very thin and cannot be rolled further. Sprinkle about 1/2 teaspoon of polenta onto a pizza peel. Put the dough on the peel and spread 1/2 tablespoon of oil all around the edges. Add 1/4 cup of pizza sauce to the middle of the dough and spread it to the outer edges, leaving about a 1-inch margin. Sprinkle the sauce with the mozzarella and Monterey Jack cheeses. Top with crumbled sausage and drizzle the remaining 1/2 tablespoon of olive oil over the pizza. Bake for 10 minutes in the 450 degree F oven. (If using only 1 oven, raise the heat to 500 degrees F.) Remove the pizza from the oven and top with the cooked crawfish. Put the pizza in the 500 degree F oven and cook until the top is golden brown and bubbling, about 2 minutes.
- Transfer the pizzas to a cutting board and slice. Arrange on a serving platter and serve.
- "Mangia, mangia".

- Melt butter in heavy sauce pan and saute onions, parsley, crawfish and andouille until golden brown. Stir in flour. Add cream, red pepper and salt.

Known in Italian as arrabiata sauce, this is an amazing homemade red sauce. The ingredients are frugal but the end result is delicious. My fiance and I use this often when we are having friends over. Add some chicken sausage and fresh basil if you want to make it extra special.

- Combine 1 1/2 cups oil and 1 3/4 cups flour in a heavy skillet or pan over low heat.
- Stir constantly until the flour thickens and turns light brown.
- Add more flour if needed to absorb oil and make a smooth paste.
- It takes approximately 15 minutes or so, but be careful to not burn the flour.
- Set the roux aside.
- Mix together all spices in a bowl and set aside.
- In a large 12 quart pot, sauté onions, garlic, bell pepper and celery in 3 tbsp olive oil.
- Cook for approximately 3-4 minutes.
- Add the chicken, shrimp, cat fish and okra (and sausage if desired).
- Cook for approximately 4-5 minutes.
- Add the peppers, tomatoes, seasonings, chicken stock, V-8 and clam juice.
- Simmer, uncovered for approximately 1 hour.
- With a wire whisk, slowly incorporate the roux into the mixture to desired consistency.
- Add more chicken stock if necessary.
- Add the rest of the seafood to the mixture.
- Turn down heat, cover and simmer on low for about 10 minutes.
- In a shallow bowl, mound 1/2 cup rice and ladle the gumbo on top.
- Serve with oyster crackers and a dash of Tabasco sauce.
EASY RED PASTA SAUCE
Plain, simple, no frills, basic red sauce that tastes great on a variety of pasta and is not watered down. For making a good sauce, use canned tomatoes. Except for the summer months, the 'fresh' tomatoes are usually harvested when green and left a long time to ripen. Add more red pepper flakes if you like your sauce spicy!

- In a medium saucepan over low heat, warm oil and saute garlic; heat through until the garlic turns translucent, not brown. Add onion and cook over low heat until translucent; 5 to 10 minutes.
- Add parsley, basil and ground black pepper; stir. Add tomatoes and cover; raise heat to medium and bring to a strong simmer. Lower heat and add red pepper flakes. Cover saucepan and cook for 25 to 35 minutes.
- The sauce can be run in the food processor for 2 to 3 seconds to achieve a more uniform sauce or let the sauce cook over medium-low heat uncovered for 10 minutes or until it thickens.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 6 to 8 minutes or until al dente; drain and serve with sauce.
