THE BEST BROCCOLI SLAW
This Broccoli Slaw is one of my favorite side dishes. It is quick and easy to make and undeniably delicious. This Broccoli Slaw recipe is packed with delicious flavors like crunchy cashews, fresh apples, sweet craisins and savory bacon that are all wrapped in a dressing that is equally creamy and tangy.

EASY CREAMY BROCCOLI SALAD WITH BACON
In this simple broccoli salad recipe, we toss broccoli with bacon, dried cranberries, red onion, and a tangy dressing made with mayonnaise, Dijon mustard, and apple cider vinegar. For the bacon, we recommend baking it instead of cooking it on the stovetop - it is more hands-off that way. See our article sharing how to cook bacon for tips. Vegan Broccoli Salad: Transform this into a vegan-friendly salad by substituting the bacon with 1/2 to 3/4 cup roasted and salted sunflower seeds and using vegan mayonnaise. Here's our recipe for vegan mayo.

Steps:
- Cook the bacon until crisp (see note below). Chop into small pieces.
- Add onion to a small bowl and cover with warm water. Leave for 10 minutes, then drain. This tones the raw onion flavor a little.
- Meanwhile, separate the broccoli crowns from their thick stem. Remove the woodiest part of the stem - usually 1/2-inch from the bottom - and discard (or save for stock). Chop the remaining portion of the stem into bite-size chunks. (If the stem is hardy, use a vegetable peeler to remove the outer layer and then chop-see our video to watch us do this.). Next, snap the florets from the broccoli crown and pull them apart so that they are bite-size. Rinse broccoli, and then pat or spin dry.
- Drain the red onion and toss with the broccoli, bacon, and cranberries in a large bowl.
- In a separate bowl, stir the mayonnaise, cider vinegar, mustard, 1/4 teaspoon of fine sea salt, and a few grinds of pepper together. Taste for seasoning, then adjust.
- Pour two-thirds of the dressing over the broccoli and onion and mix well. If the salad seems dry, add a little more of the dressing. Let stand at least 15 minutes before serving or keep refrigerated (it should last two to three days, but we have never been able to keep our hands off it for that long).

CREAMY & EASY BROCCOLI SLAW
Get this; my kids won't eat regular coleslaw, but when I make it with broccoli they will! This is more similar to regular coleslaw than what is standardly prepared with packaged broccoli slaw. I make mine without onion, and usually without peanuts. (The ingredients will not allow me to enter just broccoli slaw; it appears as broccoli coleslaw mix, but in the produce section it will just say broccoli slaw)

CREAMY BROCCOLI SLAW
When springtime rolls around, we are always on the hunt for a quick and easy recipe that makes a great sidekick to any meal. And when the temperatures rise, it's always nice to have a new way to serve the traditional salad recipe. Let's be honest, the same old greens can get tired and boring. That's why we were thrilled to taste the Test Kitchen's new spin on the broccoli slaw. Whether you're prepping for a potluck or planning a casual backyard luncheon, this recipe, which serves ten, is sure to please. The base of this easy-to-prepare salad is a slaw mix that you can pick up in the produce aisle at the local supermarket. Our Test Kitchen suggests the broccoli slaw mix or a standard cabbage, carrot, and red cabbage slaw combination. We love the addition of the toasted pecans and scallions for adding a nice savory touch, and that satisfying crunch, and the golden raisins add an unexpected hint of sweetness. Our secret ingredient is the lemon zest which keeps the slaw vibrant and extra fresh. If you want to make this salad a main meal, we recommend tossing grilled chicken into the mix. This is a light, refreshing, and incredibly simple summer go-to recipe.
