3 cups frozen chopped spinach, thawed,well-drained
1 (8 ounce) can water chestnuts, drained,finely chopped
1/2 red bell pepper, chopped

Steps:

  • Combine sour cream, mayonnaise and seasonings.
  • Stir in onions, spinach, water chestnuts and red pepper.
  • Cover; refrigerate a few hours to blend flavors.
  • Serve with crisp vegetable dippers and assorted crackers or bread.

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

1 tablespoon olive oil, divided
1 small onion, finely chopped
2 cloves garlic, minced
2 (10 ounce) packages frozen spinach - thawed, drained, and chopped
½ cup milk
6 ounces cream cheese
½ cup shredded mozzarella cheese
¼ cup shredded Cheddar cheese
2 dashes Worcestershire sauce
salt and ground black pepper to taste
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. Return spinach mixture to pot with 1/2 cup mozzarella cheese and Cheddar cheese; stir to combine. Season the mixture with Worcestershire sauce, salt, and pepper. Pour the mixture into the prepared baking dish and top with 1/2 cup mozzarella cheese.
  • Bake in preheated oven until bubbly and golden brown on top, 20 to 25 minutes.

2 (6 ounce) marinated artichoke hearts, undrained
1 (8 ounce) jar roasted red peppers, drained
1/4 cup parmesan cheese, grated
10 ounces frozen spinach, thawed and drained

Steps:

  • In food processor, mix cream cheese, sour cream and artichoke hearts by pulsing until even consistency.
  • Add roasted red bell pepper and Parmesan and mix by pulsing until creamy.
  • Put the mixture in a microwave safe dish of 6 cups (1.5 L).
  • Add spinach and mix.
  • Cover with a plastic wrap (leave a little side opened to allow steam to escape).
  • Microwave on HIGH power for 7 minutes or until the dip is hot and boiling in the sides.
  • Mix well.
  • Serve hot or warm.

  • Line a strainer with 4 layers of cheesecloth or 1 coffee filter; place over a bowl. Place yogurt in prepared strainer; cover yogurt with edges of cheesecloth. 1 cup grated Parmesan cheese
¾ (8 ounce) package cream cheese, softened
1 (3 ounce) can French-fried onions, divided
3 tablespoons lemon juice
2 tablespoons minced garlic
sea salt to taste
ground black pepper to taste
¼ cup coconut oil
1 pound skinless, boneless chicken breast halves
1 tablespoon liquid amino acid (such as Bragg®), or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix spinach, Parmesan cheese, cream cheese, 3/4 of the French-fried onions, lemon juice, garlic, sea salt, and black pepper together in a bowl; spread into a glass baking dish.
  • Bake in preheated oven until heated through and thick, about 15 minutes. Sprinkle remaining French-fried onions over the top of the spinach mixture and continue baking until the onions are brown, about 5 minutes.
  • Heat coconut oil in a large skillet over medium-high heat.
