This Cilantro Lime Chicken is a creamy low carb and gluten free dish perfect for any night of the week!

4 6-ounce boneless skinless chicken breasts
1 teaspoon coarse sea salt
1 teaspoon black pepper
1 1/2 tablespoon olive oil
1/2 cup diced yellow onions
1 4-ounce can diced green chiles
1 tablespoon minced garlic
1 cup chicken broth
1 tablespoon lime juice
1/4 teaspoon ground cumin
1/4 teaspoon oregano
1/4 teaspoon ground coriander
1/3 cup heavy cream
2 tablespoons chopped cilantro, (plus more for garnish)

Steps:

  • Preheat oven to 375 degrees F. If the chicken breasts are all an uneven thickness, use a meat tenderizer like this one or a heavy pan and pound out the breasts until they're all the same thickness. Season chicken with salt and pepper.
  • In a large oven-safe skillet over medium-high heat, add olive oil. Place chicken breasts in skillet and cook for 5 minutes on each side, or until both sides are browned.
  • Place skillet in oven and bake for 10 to 12 minutes, until chicken is fully cooked through and the internal temperature has reached 165 degrees F.
  • Remove the skillet from the oven and transfer the cooked chicken to a large plate. Cover with foil to keep warm.
  • Place the same hot skillet over medium heat and add the onions. Cook for 2 minutes, scraping the bottom of the skillet to get the brown bits off the pan. The skillet should still be very hot so be careful.
  • Add the green chiles and garlic. Cook for 2 minutes. Add the chicken broth, lime juice, cumin, oregano and coriander.
  • Mix together and bring to a gentle boil for 10 minutes or until liquid has greatly reduced.
  • Remove the skillet from the heat and mix in the cream and cilantro. Place the cooked chicken in the sauce and serve.

1/4 teaspoon ground red pepper (cayenne)
4 boneless skinless chicken breasts (about 7 oz each)
1 tablespoon vegetable oil
2 1/4 cups Progresso™ chicken broth (from 32-oz carton)
2 tablespoons lime juice
1 tablespoon finely chopped garlic
1 cup uncooked regular long-grain white rice
1 cup black beans (from 15-oz can), drained, rinsed
1 can (4.5 oz) Old El Paso™ chopped green chiles
1/4 cup water
2 tablespoons lime juice
1 medium avocado, pitted, peeled and cut into 1-inch pieces
1/4 cup chopped fresh cilantro leaves
1 teaspoon finely chopped garlic
1/8 teaspoon salt
Chopped fresh cilantro leaves and lime wedges

Steps:

  • In large resealable food-storage plastic bag, mix taco seasoning mix and red pepper. Add chicken to bag; seal, and shake to coat chicken evenly.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 5 to 7 minutes, turning once, until browned on both sides. Remove chicken from skillet; cover to keep warm.
  • To same skillet, add Rice Mixture ingredients; heat to boiling. Cover; reduce heat to medium-low. Simmer about 15 minutes or until liquid has been reduced by about half. Stir mixture thoroughly; place chicken on top of rice.
  • Cover; continue cooking 12 to 15 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F), and rice is tender. Remove chicken to cutting board; cut at angle into 1/2-inch slices; return chicken to skillet.
  • Meanwhile, in mini food processor or blender, place Cilantro-Lime Topping ingredients; blend until smooth, scraping down sides of blender as necessary. Transfer mixture to small resealable food-storage plastic bag, and cut corner off one end; squeeze on top of sliced chicken and rice before serving.
  • Garnish with chopped cilantro and lime wedges. Serve any remaining topping with chicken and rice.

2 serrano peppers, finely chopped

4 boneless, skinless chicken thighs

Steps:

  • In a blender or large food processor, combine the garlic, serrano peppers, ginger, cilantro, lime zest, soy sauce, sugar and coconut milk. Process until smooth.
  • Place the chicken into a large resealable bag, and pour the liquid from the blender in with it. Seal, and refrigerate for about 1 hour, turning once after 30 minutes.

My husband has recently declared my kitchen a cilantro-free zone :( so unfortunately I haven't yet tried this dish, but I am posting it because it sounds good to me and thought it might appeal to others as well. The recipe comes from Ainsley Harriott, a British chef, and he cautions not to marinate the chicken longer than two hours as the lime juice will break down the chicken to the point that it will fall apart. Preparation time does not include marinating time.

  • In a large, nonstick skillet, heat the olive oil over medium heat.
  • Toss in the garlic and sauté until fragrant, about 30 seconds.
  • Add the shredded chicken, salt, sour cream, and lime juice. Mix until the chicken is evenly coated and the mixture has heated through.
  • Stir in the cilantro and immediately remove from heat.

6 thin skinless, boneless chicken breasts
1 tablespoon Cajun seasoning, divided
