8 ounces cream cheese (softened)
1/2 cup hot wing sauce or cayenne pepper sauce
1/4 cup blue cheese (crumbled)
1 cup colby-jack cheese (4 ounces, shredded)
1/4 cup green onions (finely chopped)
1 pound chicken breast (cooked and shredded)
5 large flour tortillas (approximately 10 1/2″ diameter)

Steps:

  • In a bowl, beat cream cheese on low and add in sauce, blue cheese, colby-jack cheese, and green onions. Beat until blended.
  • Stir shredded chicken into mixture by hand.
  • Spread approximately 3/4 cup of mixture on top of one of the tortillas. Roll up tortilla tightly, but without shifting the mixture too much. Repeat with remaining tortillas. Place rolled tortillas on a place and cover with plastic wrap. Refrigerate for 2-4 hours.
  • Remove from refrigerator and unwrap. Slice each rolled tortillas in half and then each half into 3 slices, discarding ends. Place pinwheel slices on serving plate or tray.

1 cup finely chopped cooked chicken
1/2 cup chopped lettuce
1/2 cup shredded reduced-fat sharp cheddar cheese
1/3 cup chopped green onion
1/3 cup minced red bell pepper
4 ounces light cream cheese, softened
2 tablespoons low-fat sour cream
1 tablespoon hot red pepper jelly
3 (9 inch) flour tortillas

Steps:

  • In medium bowl, combine chicken, lettuce, cheddar cheese, green onions and red pepper.
  • Set aside.
  • In small bowl, beat together cream cheese, sour cream, and red pepper jelly on low speed of electric mixer.
  • Spread 1/3 cream cheese mixture over one side of tortilla.
  • Sprinkle with 1/3 chicken mixture, leaving 1/2 inch border at top just covered with cream cheese mixture (so you can seal it closed.) Roll up tightly, jelly roll style.
  • Wrap tortilla roll in plastic wrap.
  • Repeat with remaining tortillas and filling.
  • Refrigerate for 2 hours.
  • Trim off the ends and cut each roll into 8 slices, serve cold.

Steps:

  • In a large bowl or stand mixer combine cream cheese, sour cream, rotel, bell pepper, chicken, cheese, taco seasoning, green onions and cilantro. Using the mixer or hand mixer beat together until smooth.
  • Place 1/4- 1/2 cup of the mixture on the tortilla and spread leaving about an inch from the edges. Roll up tightly and refrigerate for an hour.

1 1/2 cups rice
4 tablespoons olive oil
3 cups diced tomatoes (5 to 7 tomatoes, depending on size)
3 cloves garlic, minced
1 large onion, diced
4 teaspoons chili powder
2 teaspoons paprika
2 teaspoons cumin
2 boneless, skinless chicken breasts, cut into bite-sized pieces
Kosher salt and freshly ground black pepper

One 15-ounce can pinto beans, drained and rinsed
One 15-ounce can kidney beans, drained and rinsed
One 16-ounce jar salsa verde
12 to 18 flour tortillas (or corn tortillas), depending on size
One 11-ounce can corn, drained
1 1/2 pounds grated Cheddar jack cheese
1 recipe Enchilada Sauce, recipe follows, or 2 cups store-bought red enchilada sauce
Sour cream, for serving
Chopped fresh cilantro, for serving
2 tablespoons olive oil
1/4 cup finely chopped red bell peppers
1/4 cup finely chopped onions
1 tablespoon finely chopped garlic
2 teaspoons chili powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 beef, chicken or tomato bouillon cube
Kosher salt and freshly ground black pepper
1 tablespoon all-purpose flour
1/2 cup chicken stock
One 15-ounce can tomato sauce

Steps:

  • Cook the rice according to the package directions. Set aside.
  • Preheat the oven to 375 degrees F.
  • In a large skillet over medium-high heat, heat 2 tablespoons of the oil and add the tomatoes, garlic and onions. Stir and cook for a minute or 2. Add 2 teaspoons of the chili powder, 1 teaspoon of the paprika and 1 teaspoon of the cumin. Stir and cook the mixture for another minute or 2 in order to release the flavors. Transfer the mixture to a bowl and set aside.
  • In the same skillet, heat the remaining 2 tablespoons oil. Add the chicken along with the remaining 2 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon cumin and some salt and pepper and cook until the chicken is deep golden brown and done in the middle, 4 to 5 minutes. Add 1 cup water and stir to make a sauce. Allow the sauce to boil until reduced by half, about 2 minutes. Stir in the pinto and kidney beans and set aside.
  • To assemble, pour half of the jar of salsa verde (about a cup) in the bottom of a 9-by-13-inch casserole dish or disposable foil baking pan. Layer half of the tortillas on top of the salsa verde, overlapping the edges. Spoon the rice over the tortillas, spread the tomato mixture over the rice then sprinkle the corn over the tomatoes. Next, add the chicken and bean mixture, then sprinkle on half the cheese and pour over half the Enchilada Sauce. Next, add the remaining tortillas in a layer, pour on the rest of the salsa verde and Enchilada Sauce and sprinkle on the rest of the cheese.
  • Cover the casserole with aluminum foil and bake for 20 minutes. Remove the foil and continue baking until hot and bubbly, 15 to 20 minutes. Allow the casserole to sit for a few minutes before serving up to ensure it holds together. Serve with sour cream and cilantro for topping.
  • Heat the oil in a medium saucepan over medium heat. Add the peppers, onions and garlic and cook until soft, about 2 minutes. Add the chili powder, cumin, cayenne, bouillon cube and some salt and pepper and cook until the spices darken and their flavors are released, about 2 minutes. Sprinkle in the flour, stir to combine and cook it for another minute. Add the stock and stir to combine, then allow the liquid to thicken. Add the tomato sauce and 1 1/2 cups water and bring to a boil. Cook until the sauce is nice and thick and reduced by about a third, 5 to 10 minutes.
  • Allow the sauce to cool slightly, then use an immersion blender to completely puree the sauce until smooth. (Alternatively, you can transfer it to a blender to puree it; just make sure the sauce is cooled, as blending hot liquids is dangerous!)
  • The sauce will keep in the refrigerator for up to a week and can also be frozen! Just reheat the sauce in a saucepan or skillet for whatever recipe calls for it.

8 (6 inch) corn tortillas

3 cups cubed, cooked chicken
1 (8 ounce) package shredded Cheddar cheese
1 (8 ounce) package shredded Monterey Jack cheese

Steps:

  • Melt butter in a large skillet over medium heat; cook and stir onion until tender and translucent, about 5 minutes. Mix in cream of chicken soup, sour cream, and cumin.
  • Grease a 9x12-inch microwave-safe baking dish and place 4 tortillas in a layer into the bottom of the dish. Top with 1 can green chilies, half the chicken, half the soup mix, half the Cheddar cheese, and half the Monterey Jack cheese. Repeat layers, ending with Monterey Jack cheese.
  • Cook in microwave oven on high until the casserole is bubbling and the cheese topping is melted, about 10 minutes.

1 8 oz. pkg cream cheese, room temp.
1 12 oz. can(s) chicken, well-drained
1 4 oz. can(s) diced green chilies, well-drained
1 4 oz. can(s) black olives, well-drained, chopped
1 4 oz. jar(s) pimientos, well-drained (optional)
2 or 3 green onions, chopped, including tops (optional)
garlic salt (or regular) and pepper, to taste
5 or 6 10" flour tortillas, room temp. (thicker tortillas resist sogginess better)
1 c cheddar cheese, shredded (or whatever cheese you prefer)

Steps:

  • 1. Blend first four ingredients and half the pimientos together. Use a food processor to really make it easy, but don't over-process. Just pulse as you add each ingredient. Add the rest of the pimientos and the green onion and pulse a couple of times, but you want them to show-for some color-so don't overdo it. Season with garlic salt and/or salt and pepper. *The pimientos give the mixture a distinctive, slightly spicy flavor, so you might want to use less or substitute something else, like chopped tomatoes or red bell pepper, for color.
  • 2. Lay out a piece of Saran Wrap on a flat surface and put one tortilla in the middle. Put a scoop of the chicken mixture in the middle of the tortilla and spread it out pretty thinly, staying at least ½-inch away from the edge and 1-inch away from the edge farthest from you. Sprinkle lightly with shredded cheese. Roll the tortilla away from you, beginning by tucking the first edge in pretty small but then just roll firmly, not squeezing or getting it too tight. Avoid oozing. (Assume that your first tortilla will be for you and your helper to eat! ;-) By the second try, you'll have the hang of it!) Roll the tortilla into the piece of Saran Wrap and twist the ends of the wrap to keep it from drying out. When you've used all the filling, you and your helper get to lick the bowl! Then put your tortilla rolls in the refrigerator for AT LEAST two hours to get firm. (You can make these a day or two before and slice them right before the party.)
  • 3. When you're ready to serve, slice the tortilla rolls into bite-sized pinwheels, about 1" wide. Use a really sharp knife so you don't flatten the pinwheels. A serrated knife, like a bread knife, works best. The ends of the rolls will be ugly, so discard those. (Yeah, right! ;-), you know where to throw them, right?) arrange the pinwheels on a plate with a little fresh parsley or lettuce leaves before serving. Makes about 50 1" pinwheels. This recipe is really adaptable. Use ingredients you like or that you have on hand. Leave out the chicken and just use the cream cheese-really good! Or use ham instead of the chicken, or lay thin-sliced luncheon meat on top of the cream cheese. It's hard to mess them up.

I decided to create my own based on recipes that I had tried in the past. My husband couldn't get enough of it, so I knew it was a hit. Optional toppings: sour cream, shredded Cheddar, and avocado.

2 tablespoons olive oil
1 medium onion, chopped
1 tablespoon minced garlic
2 (14 ounce) cans chicken broth
1 (10.75 ounce) can condensed Cheddar cheese soup
1 cup picante sauce
2 teaspoons chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon dried cilantro
¼ teaspoon ground white pepper
1 bay leaf
1 pound cooked chicken, shredded
⅔ cup drained and rinsed canned corn
½ cup half-and-half
¼ cup tortilla strips

Steps:

  • Heat oil in a large saucepan over medium heat; stir in onion and garlic. Saute until the onion has softened and turned translucent, about 5 minutes.
  • Add broth, condensed soup, picante sauce, chili powder, oregano, cumin, cilantro, pepper, and bay leaf; bring to a boil. Add chicken, corn, and half-and-half. Cover and simmer for 30 minutes.
  • Ladle into bowls and top with tortilla strips.
